Spiced Apple Muffins

• 1 cup self-raising flour
• 1 cup (fine) rolled oats
• 3/4 cup brown sugar
• 2 tsp mixed spice
• 2 tsp cinnamon

• 75 grams butter

Melt the butter until liquid then add the egg and 3/4 cup of the milk, and beat with a fork until mixed. Next, grate or chop the apple in a food processor. Press it into the cup, removing air bubbles, then stir it into the liquids. (Work quickly to prevent the apple browning.)
Add the apple and liquid mixture to the dry ingredients and mix lightly to dampen the ingredients, adding as much of the extra 1/4 cup of milk as you need.
Coat 12 medium-sized muffin pans with non-stick spray and divide
the mixture between them.
Bake at 200°C for 12-15 minutes or until the muffins spring back when pressed.


To make this more special, I put a slice of apple thats been rolled in cinnamon sugar on top of each muffin before baking, a gentle sprinkle of the leftover cinnamon sugar is good as well, just not to much or it melts down the side of the muffins and they are very hard to get out without wrecking.

I make caramel mud cake by substituting white chocolate for dark and replacing sugar with dark brown cane sugar and brown sugar (1/2 and 1/2). (You may like to reduce the amount slightly). I use the recipe from Australian Womens Weekly google: AWW Top 10 Cakes: 4. Mississippi mud cake. It is the best cake that I've made but relatively small - the recipe as it makes a 20cm square cake of decent thickness and takes around 1hr 45 mins. Don't worry that is rises in the middle - it settles upon cooling. Cool in tin.

I made the caramel crumble from this thread and I have to say its to die for. I did double the crumble part of the recipe as I was using a larger tray but I didnt double the caramel and it was just perfect. My son said he didnt like it but offered to take it to school and give to his friends so we didnt have to throw it out lol he was actually wanting to eat it himself so thats all the praise needed

Well Im just about to start my weeks baking and I have decided that now I have gone through this thread and taken so many recipes that I am going to make at least 1 recipe each week that I havent made before. As there is only one in my house that can eat it I will take it to work and experiment on them. So this week I am going to make red velvet cupcakes, caramel crumble slice (this is a great hit), chewy white chocolate biscuits and some little jaffa cakes ( I havent made the last 2 yet so they will be my experiments)
I will let you know the feedback

oks, heres a keeper and very healthy! great for all and very very morish!! Hope you all enjoy them as much as we do:)

BREAKFAST MUFFINS

Ingredients
1 1/4 cups (275g) caster sugar
2 cups (300g) plain flour
2 tsp ground cinnamon
2 tsp baking powder
1 cup sultanas
1 cup desiccated coconut

2 cups grated carrot
1 cup grated apple

1 cup chopped walnuts

3 eggs

1 cup (250ml) vegetable oil
1 tsp vanilla extract

Icing sugar, to dust

Method
1. Preheat oven to 180degC.

.
2. Sift sugar, flour, cinnamon and powder into a large bowl.

Add sultanas, carrot, apple, coconut and walnuts.

In a separate bowl, beat together the eggs, oil and vanilla.

3. Add to the dry ingredients and fold until just combined - do not over mix.

4. Spoon into muffin pans and bake for

25 minutes or until golden brown.

Serve dusted with icing sugar.

YAY!!! to those ladies who still bake for their kiddies and family, good for yous, Ive been through all that and would do it all again. I loved it. I don't bake as often as I use to,but I encourage my family to bake. Don't let negative comments get in your way I find those types eat the most when put on a plate in front of them.

Today I made a chocolate cake but instead of adding the milk I replaced it with a berry sauce and made choco-berry cake instead. Is yummy!

I also made the apricot honey loaf in last weeks that's life or lucky break magazine.

Chunky chocolate biscuits.......copied off t.me recipes.

These ones are good - the rolled oats makes you feel they are "healthy" (yeah right!) but at least they are nice and chunky and you don't eat half a dozen at one go!
1 cup butter,
2 eggs,
1 tsp. vanilla
2 cups flour,
1 tsp. soda,
1 cup white sugar,
1 cup brown sugar
2 1/2 cups rolled oats, blended in food processor til fine
1 block dark chocolate chopped into chunks (size is up to you!) or you could just use 1 cup choc chips
1 tsp. baking powder,
1 tsp salt
3 cups chopped nuts (your choice - optional), i used 1 cup of coconut in place of nuts.
Cream the butter and both sugars. Add eggs one at a time beating well in between each one. Then add vanilla; Mix together with flour, oatmeal, salt, baking powder and soda. Add chocolate chips and nuts. Roll into balls and place two inches apart on a cookie sheet, flatten slightly with a fork.. Bake for 10 minutes at 375 degrees. (180C)

I make mine in the food processor .. cream sugars and eggs together then add butter .. then pulse in dry ingredients ,,, so easy
and trust me, they spread , so do place them 2 inches apart on the trays.
I make 30 BIG biscuits .. or you can make 60 smaller ones. Lovely recipe!

Just copied and pasted recipies i would use out of this thread 3 days work lol! I havent seen this one so thought i would pop it on being school holis.
Coffee cup chocolate cake
4 tablespoons flour and sugar. 1 Tablespoon coccoa 1 egg 3 tablespoons milk and oil. half a teaspoon baking powder. Mix dry ingredients then mix wet ingredients combine and microwave for 2 and a half mins quite a runny mix. should fit in a coffee cup but i made it first in a small bowl just in case LOL. My 12 year old (boy) loves making this as a after school snack
I have increased this to make a pudding when tea is just not enough!

this was posted yesterday and I made it a work or the clients man it was yum ciy....
Sticky banana and date pudding with butterscotch sauce. Serves 6-8

1 cup chopped pitted dates; 1 tsp baking soda; 100gms butter; 3/4 cup caster sugar; 2 eggs; 1 tsp vanilla; 1 1/4 cups self raising flour; 2-3 bananas sliced.
1. Preheat oven to 180*. Spray a 22-23cm square cake tin and then line with baking paper
2.Place the dates in a small saucepan or microwave bowl with 1 cup hot water. Bring to the boil, then add the baking soda. Stir well and allow to cool for 5 minutes.
3. In the meantime, using an electric mixer, beat the butter and sugar until fluffy and pale. Add the eggs, vanilla and flour then beat in the dates and their liquid. Mix in the banana slices then pour the batter into prepared tin. Bake for 40-45 minutes.
Serve with butterscotch sauce poured over, and ice cream or whipped cream.

For the sauce
1 cup brown sugar; 100gms butter; 1 cup cream.
Place all in a small saucepan and stir over medium heat until it comes to a good boil. Boil for 1 minute, then pour over the pudding.( I did my sauce in the microwave for 1 minute on high and it was lovely)
A while ago when I made sticky date puddings, I did them in muffin pans. I froze what we didn't use, and then reheated them in the microwave, and made a new batch of sauce.

I am new to this baking thing and I was wondering jaxma if your books are the recipes from this thread (way too much for me to read) and how do I go about getting a copy from you please. Today I baked a really simple chocolate cake and some chocolate anzac cookies to fill up the containers, also made chocolate icing to go on top. I have a zero food budget pretty much at the moment so have brought the things to bake myself instead of buying. I saw a recipe for some yummy sounding cheese muffins which I am going to give a go as well.

I have a productive weekend and had to find this thread so I could show off a wee bit.

This weekend I have made picked onions, cauliflower pickle, beetroot relish, pumpernickel bread and chocolate chippies biscuits - oh and hokey pokey on Saturday night.

I am feeling quite pleased with myself :-)

Parsley Loaf

1 onion, chopped
1 bacon rasher, chopped
2 1/2 c flour
5 tsp baking powder
1/2 t salt
25g butter
1 c grated cheese
3 T parsley, chopped
1 egg, lightly beaten
1 c milk, approx

Lightly saute the bacon and onion, set aside. Sift the flour, baking powder and salt, then rub in the butter. Add the cheese, parsley, egg, bacon and onion and 3/4 c milk. Mix to a soft dough and add more milk if needed. Turn into a greased loaf tin and bake at 190c for about 45 minutes.

Lol, it turns out it has bacon in it anyway!

Quick and Easy-
Peanut Butter Cookies
Ingredients
½ cup brown sugar
½ cup caster sugar
½ cup melted butter
½ cup peanut butter
1 egg
1½ cups self-raising flour
1 teaspoon vanilla
Method
1. Combine sugars.
2. Add melted butter and lightly beaten egg. Mix well.
3. Gradually add sifted flour and remaining ingredients, mixing thoroughly.
4. Place teaspoonfuls of mixture onto a greased tray, flattening with a fork.
5. Bake for about 12-15 minutes at 160°C.

Hi jaxma, not sure if you realise or not but the index in volume three is missing 7 recipes from pages 72 throu to half of page 74. I was printing in out to put into my folder and reading throu i noticed pages 72 and 73 were missing, when i went throu the recipes themselves a couple on page 74 were also missing. No harm done and I'm not complaining at a beautiful, wondering painstaking job you have done.

That oaty ginger crunch recipe from Wholemeal Cafe in Takaka that has been posted many times on these threads is AWESOME. I made it the other day and not only was it one of those lovely, forgiving recipies where you just chuck everything together without the bother of creaming etc, it was promptly devoured by friends and family - they loved it. I quite happily took all the compliments on my baking, when really, haha its all down to the legendary recipe, nothing to do with my skills!
