Cheese scones Using cream & no butter, great result, really light & lovely. Best result I have ever had as they usually end up flat etc

.ookreeoo. Volume 3 is in the process, but it takes a huge amount of re-formatting once I download the recipes, so it's a big job, and it's taking a lot longer than expected. Soon though, I promise! I'll announce on here when it's ready.

Yodi1 - here it is. Some people call it Wanganui Special, other's call it Wellington Slice. Base: 225gr kremelta, 4 cups cornflakes, 1 cup coconut, 1 cup icing sugar, 3 tablespoons cocoa. Mix dry ingredients in a bowl. Slowly melt the kremelta then add to other ingredients. Mix gently (don’t crush the cornflakes) then put half into a sponge roll tin and put in fridge to chill and put the other half of the mix aside for later. Make caramel by mixing ½ tin condensed milk, 1 teaspoon vanilla essence, ¼ cup brown sugar, 50gr butter and 2 tablespoons golden syrup in a saucepan and slowly bring to the boil, stirring all the time (I usually double the caramel recipe - what else would you do with the other half of the condensed milk??). Boil for one minute, stirring constantly. Pour over base, then sprinkle remaining base mix over top and put in fridge to set. Cut before it gets too cold. Always a hit!
