207 | Another yummy goody to make.. And something Kids can help with and have fun.. Make your own sweet short pastry, or use a packet from the supermarket. Cut in three sections. Roll each out till about 3mm to 5 mm thick, and into long narrow rectangles - they need to be about 15cm across and as long as you can. Spread the surface with Nutella, up to about 1cm from the far edge away from you. Optional - Cut thin strips of almond icing and place in rows - sushi like - down the length of the pastry. Brush the far edge with water. Roll the pastry up from the near side, like Sushi, until firm rolls are obtained. Press the dampened edge onto the pastry. Cut into rolls about 1cm thick, and place them on their sides on a baking paper lined oven tray. Bake at 180°C till just being to colour and the pastry feels firmish. Yummy!!! 208 | Christmas Spiced Juice I loved drinking mulled wine and spiced tea in Europe at Christmas, but not really something for our climate so I have been experimenting and came up with this: 2l juice (I used apple&orange), 1 lemon-squeezed, 1 cinnamon stick, 4 whloe cloves, slices of lemon & orange for decoration... I heated 1C juice in the microwave with the cinnamon and cloves in it, left it to cool & poured this into the remaining juice.Leave to infuse in fridge overnight.Remove spices & to serve place icecubes & fruit slices in a jug/bowl & pour over juice. 225 | Quick Chocolate Fruitcake I found this in a woman's magazine. I will make it closer to Xmas. It can last for 3 weeks (as it has sherry in it). 1.5 c dried mixed fruit, 1/3 c sherry, 200g butter - room temperature, 1 c brown sugar, 3 egss, 200g chopped chocolate, 1 1/3 c self raising flour, 1/4 c cocoa, 1/2 mixed nuts, 1/4 c honey. Method: Soak fruit in sherry. Beat butter and sugar. Add in eggs one at a time. Stir in chocolate and sifted flour and cocoa. Mix well. Press the nuts on top of the cake. I'd have: Sliced smoked chicken (or some of the new smoked chicken nibbles available now in supermarkets); outdoor tomato wedges or cherry tomatoes; some fresh peas from my garden (or buy some) - that are still in their pods, some of my favourite cheeses - maybe Havarti (a nice nutty flavour) or Gouda, which is creamier), a little of some nice pickles, chutney's, relishes, gherkins, pickled onions etc, some focaccia bread (or French stick)that I'd slice crosswise, toast one side, spread with a little herb butter (garlic, rosemary, chives, etc.. - or all three!) and then toast the spread side. I'd include a small dish of hummous, and another of my homemade parsley pesto. I'd like some grapes, or strawberry's, raspberries, or orange, rockmelon or watermelon wedges.
