Gluten free shortbread 8 ozs gluten free flour
4 ozs maize cornflour
4 ozs Chelsea Icing Sugar
8 ozs butter

Cream butter and sugar. Add cornflour then flour.Turn out onto a board which has cornflour sprinkle on it and pat out to a square shape. Prick all over with a fork and cut into squares. Bake 150C for 20 minutes until slightly golden

Gluten free Falafels -serve with a salad 1 tin drained Craigs GF chickpeas (I buy mine loose and cook in a pressure cooker)
1 seeded red chilli
1 tsp coriander
1 tsp cumin
1 tsp chopped mint
1 tsp parsley
2 spring onions
1 egg
Salt & Pepper
Put all in food processor then chill in the fridge. Roll in sesame seeds. Fry in oil a few minutes either side.

Vege fritters Cook and drain 1 pkt peas/corn/capsicum
Add 1 chopped onion, 1 beaten egg, 1½ cups GF Flour
1tbsp Watties Bit on the Side
chilli sauce
chopped parsley
¼ cup So Good Lite Milk
Salt & Pepper
Mix all together and mould into ¼ cup portions. Fry until golden Drain on paper. Can be individually frozen in gladwrap and cooked from frozen

herika - well that really surprises me and it is questionable because of the volume of sugar in it(6 cups). My Dad is diabetic and no way could he have it, most diabetics use a minimal amount of a sugar substitute

Has anyone got a favourite Christmas recipe they would like to share? Mine:Fruit mince tarts.Boil 100grams of dried mixed fruit with quarter a
cup of water for 5 minutes. Leave to cool. Cream 40 grams of Olivani and 1/4cup of sugar. Add one egg and beat.Add 1 cup of gluten free flour (I used Healtheries) and
1/2 teaspoon of baking powder and a tablespoon of milk.If mixture is too moist, add more flour.

fruit mince tarts cont. Place over half the dough mixture into 6 greased muffins tins. Using a spoon dipped in water, form a hollow in each. Divide the fruit mixture and place into each. Add the remaining dough mixture on top, and use a wet spoon to spread it across the top of the fruit. Cook for about 20 to 30 minutes at 180 C.

Gluten Free Christmas Cake 850g dried mixed fruit
1 cup brandy
150g butter, softened
1 cup brown sugar
3 eggs, at room temperature
1 cup gluten-free plain flour
1/4 cup gluten-free self-raising flour
2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1/2 teaspoon ground cloves
3/4 cup blanched almonds
1/4 cup apricot jam
Method
Place dried fruit and 2/3 cup brandy in a large airtight container. Mix well. Cover and stand overnight or preferably for 1 week, stirring occasionally.
Preheat oven to 150°C. Lightly grease a 7cm deep, 20cm (base) round cake pan. Line base and side with double layers brown paper and baking paper Using electric beaters, cream butter and sugar in a large bowl until pale and creamy. Add eggs, 1 at a time, beating well after each addition.
Sift flours and spices over butter mixture. Add fruit mixture and stir until well combined. Press mixture into pan. Smooth surface. Decorate top with almonds.

Gluten Free Christmas Cake (cont) Bake cake for 2 to 2 1/4 hours or until a skewer inserted into the centre comes out clean. Pour remaining 1/3 cup brandy over hot cake. Allow to cool completely in pan.
Place jam in a heatproof, microwave-safe bowl. Microwave on HIGH (100%) for 30 seconds or until warm. Remove cake from pan and brush top with warm jam. Allow to set. Serve.

#222 - I always keep mine in the freezer until I need to use it as experience has taught me that anything with gluten free flour in it tends to go hard the next day. If you just want one or two slices just cut that amount from the cake in the freezer

Breadmaker and Gluten free bread Is anyone making their gluten free bread with a breadmaker, if so whats it like, and which maker is the best, any good recipe.

best one we have found is the one from bin inn using 3 eggs. mix in a bowl then put into your breadmaker. a bit messy to make but beautiful bread. Wouldn't know it was gf if you were just given a piece.

g/f bread The best gluten free breadmaker bread I have tried is on Drgluten's website (Dr Rodney Ford from Christchurch) It is called Natalie's bread. Is also available in his glutenfree books which will be available from your library. The bread is crusty but soft inside.

Peanut butter cookies I got given this recipe by my sons girlfriend, beat 4 eggs, add 500g of peanut butter, I used smooth, add 400g sugar and 345g of chocolate chips. Mix all together, put in spoonful lots on baking paper (they stick otherwise) and cook at 175 for about 5 to 10 minutes, or until golden brown. They were yummy.

Gluten free Breadmaker Bread Make up the bread mix first: 4 cups white rice flour, 1½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but it makes a very small loaf so I one and a half times the recipe that follows and cook for the same time). One loaf: 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar. Sift dry ingredients, add yeast Blend milk oil eggs or egg replacer and vinegar. Add to dry ingredients, mix to combine. Press into bread pan. Close lid, bake following breadmaker instructions for a white loaf(about 3 hours) Cut when cold and freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf. :)

Berry Cakes 150g ground almonds
1 1/4 cups pure icing sugar, sifted
3/4 cup GF plain flour
1 lemon, rind finely grated
5 eggwhites, at room temperature
150g butter, melted, cooled
150g punnet blueberries or raspberries
Method
Preheat oven to 200°C. Grease a 12 cup capacity muffin pan .
Place almonds, sugar, flour and lemon rind into a bowl. Mix well to combine.
In a separate bowl, whisk eggwhites with a fork until frothy. Add to flour mixture. Mix until just combined. Stir in melted butter. Gently fold through berries.
Spoon mixture into holes so they are three-quarters full. Bake for 20 minutes Stand in pan for 10 minutes. Transfer to a wire rack to cool.

Flourless Chocolate Chippie Biscuits 1 cup (260g) crunchy peanut butter
1 cup (200g) brown sugar
1 tsp bicarbonate of soda
1 egg, lightly beaten
1 cup (185g) dark choc bits
Method
Preheat oven to 200°C. Lightly grease two baking trays and line with non-stick baking paper. Combine peanut butter, sugar, bicarbonate of soda and egg in a bowl. Stir in choc bits.
Roll teaspoonfuls of the mixture into balls and place on the prepared tray. Press lightly with a fork. Bake for 8-10 minutes or until light golden. Leave to cool on the trays then place into an airtight container.

Spiced Orange Roast Chicken Pieces 1.2kg chicken thigh fillets
80ml (1/3 cup) fresh orange juice
80ml (1/3 cup) honey
2 tsp olive oil
2 garlic cloves, crushed
2 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1 orange, thinly sliced
Finely chopped fresh chives, to serve
Method
Place the chicken in an ovenproof dish. Add the orange juice, honey, oil, garlic, coriander, cumin and turmeric and gently toss until combined. Season with salt and pepper. Cover with plastic wrap and place in the fridge for 1 hour to marinate.
Preheat oven to 180°C. Place the orange over the top of the chicken. Roast in the oven, basting with pan juices, for 45 minutes or until golden and cooked through. Place on a serving platter and top with chives to serve.

regarding the post on the first page There is a post on the first page that states if people are constipated a gluten free diet will make them worse.
Well i was constipated for 5 days at a time and was told after allergy testing i am wheat and gluten intolerant i now go every day and have since i stopped eating wheat and gluten so sorry i disagree with that comment cause it does fully block some people up i know three people it does the same to
everyone reacts different to things..
This thread great guys loving seeing some recipes to try :)

I was led to believe that coeliac was an immune response. I found this quote from the coeilac society of NSW "In people with coeliac disease, the body has an
immune (allergic) reaction to gluten." But then I am no doctor, and didn't think coeliac was an allergy, but it must be if the body re-acts to gluten like it does in coeliac.

Coeliac Disease It is a medical condition in which there is permanent intolernace to gluten, a protein found in wheat, rye, barley, triticale and dinkle. Oats contain a similar kind of protein. When gluten is consumed by people with coeliacs disease it damages the lining of the small intestine. The lining of the small intestine normally has finger like propjections called villi which assist in the absorption of nutrients. In people with coeliacs disease there is partila or complete loss of these villi. This decreases their ability to absorp foods properly. If the affected person removes gluten from their diet then the villi will regrow and normal health will resume. If gluten is reintroduced to the diet again then the villi will become damaged that is why coeliacs MUST stay on a gluten free diet for the rest of their lives

Management of Coeliacs Disease Can be successfully treated and managed by a gluten free diet.
On this diet health returns to normal but a strict gluten free diet must be adhered to for life. Coeliacs have different levels of intolerance and there may be some people who are super sensitive to gluten whilest others may be able to tolerate small amounts eg oats.
