Banana & Orange Cake... 125gm butter chopped, 2T grated orange rind, 3/4c caster sugar, 2 eggs, 11/2c sr flour, 1/4c plain flour, 1/2tsp baking soda, 1/4c orange juice, 1/2c sultanas, 1/2c chopped walnuts, 1c mashed banana. Beat butter, rind & sugar with electric beater till light & fluffy. Beat in eggs one at a time till combined. Sift in flours and soda. Stir in remaining ingredients. Mix well. Pour into prepared 22cm round pan. Bake @ 180°C for 45mins. Dust generously with icing sugar or for a bit of luxury, ice with lemon or orange cream cheese icing.

sticky gingerbread cake/loaf recipe? I've tried a few but they turn out quite bland and not sticky and dark like one I remember from childhood... it was quite dense and spicy, may have had golden syrup in it. Anyone have a recipe that sounds like this? Thanks.

An oldie but a goodie - "Perfect Cake" 1/2 cup (125g) butter, 1 cup sugar, 3 eggs (beaten), 1&3/4 cups flour, 2 tsp baking powder, 1/2 cup milk. Cream the butter & sugar. Add the beaten eggs, then the sifted flour & baking powder. Lastly add the milk. Bake at 180ºC for about 30 minutes. Variation: This is a basic mix that can be varied to make a chocolate cake, lemon cake, orange, marble cake, or….. e.g. for a Coffee Cake - add 2 tbsp coffee essence & adjust the milk quantity to be 1/2 cup minus 2 tbsp.

quick & easy to mix, moist, keeps & freezes well.. YOGHURT CAKE. You need 1 washed empty 125ml yoghurt container. Place all the following in a mixing bowl in the order given: 3 x 125ml containers self-raising flour, 2 x 125ml containers caster sugar, 1 x 125ml yoghurt – plain or fruity (apricot is really nice), 1 x 125ml container cooking oil, 1 tsp vanilla essence, 3 eggs (beaten). Beat all together until smooth, then bake in a 20cm diameter cake tin at 160ºC for approx. 1&1/2 hours or in a 20cm diameter ring tin at 160ºC for 1 hour, or until golden. Ice if you wish but is nice as is.

Fruit Malt Loaf 340g self-raising flour, 170g sultanas, 55g margarine, 150ml milk, 4 tbsp malt, 2 tbsp each of treacle & golden syrup, 2 eggs (well beaten). In a bowl place the flour & sultanas. Heat the margarine, milk, malt, treacle & golden syrup together but do not allow them to boil. Stir the warmed mixture into the flour and sultanas, along with the eggs, mixing until the mixture is smooth. Turn into a greased loaf tin, ease the mixture to the sides & hollow out the centre slightly. Bake at 180°C for 20 minutes, then at 160°C for 40 minutes, or until a warmed skewer comes out clean when inserted in the centre of the loaf. Cool in the tin for 10 minutes then turn out. Leave overnight, then serve sliced & buttered.

Ginger Loaf This is out of very old (70's) recipie book so not sure how good it is as I have never made it. 2c flour, 1c milk, 1c sugar, 1 egg, 2tbs golden syrup, 2tsp ginger, 1tsp cinnamon, 1tsp mixed spice, butter sixe of an egg, pinch of salt. Beat all ingredients together for 8 minutes then add 1tsp baking soda dissolved in 1tbs boiling water. As old books go it doesn't tell me how long to bake it for and what temp so I would say 160c for half hour and check if it is done.

Simply Moist Chocolate Slice Cake Plenty of almonds and butter give this moist cake a rich flavour ~ 250g Cadburys bournville chocolate (broken into pieces).. 250g unsalted butter melted.. 5 eggs.. 50g muscovado sugar.. 125g SR flour.. 75g ground almonds..Melt choc and stir in butter.. Beat together eggs and sugar until slightly thickened.. sift the flour over the mix.. add almonds and choc mix.. fold in until evenly combined.. Bake in prepared square 23cm tin.. 160* for 35mins cool..Meanwhile make the chocolate cream~ Heat 150ml cream till almost boiling..remove from heat and add 150g Cadburys bournville chocolate, chopped..leave till choc has melted, then stir until smooth. Leave to cool until thickened. Halve cake horizontally and sandwhich the halves with the chocolate cream + top and sides

Jelly Loaf (makes 2) 50g butter, 200g sultanas, 1 pkt Orange Jelly crystals, 1/2 c Sugar, 2TBSP Golden Syrup, 2 tsp Baking Soda, 2 C Boiling Water into a bowl, leave to cool, then add 3 C Flour, 3tsp Baking Powder bake 1 hour 180Deg C. I used to mix this cart the boys of to whatever, cook it when dinner was cooking and freeze 1 for later in the week.....

easy fruit cake hi Katalin, try this one.
Boilet Fruit Cake.

1/2 pound butter
1 cup sugar (either white brown or raw )
1 cup water
1 pound fruit (any mix you prefer)
Boil all the above for 5 minutes

COOL then add 2 beaten eggs, 2 lge cups flour (i use SR) or 1/2 tsp baking powder.
1/2 tsp each of lemon, almond and vanilla essence
1/2 tsp each of mixed spice, cinnamon and ground nutmeg
add walnuts or almonds as preferred.
The above quantities will fill a 7 or 8 inch tin
This is a very old recipe and i have used it over and over (without fail )for birthday and wedding cakes for nearly 50 years but usually double or quadruple it and substitute some water for sherry. In this quantity say 3/4 water and 1/4 sherry
If you boil the mix in a large saucepan and add the other ingredients to it saves the need to use another bowl.

APPLE SCONES Someone posted a recipe for date and orange scones and this is another good one.
3 cups flour, 1 cup sugar, 1/2 cup milk, 1 egg,2 tsp cream of tartar, 1 tsp baking soda, 1/4 pound butter

rub butter into dry ingredients,
mix lightly beaten egg with milk and add to dry ingredients.
roll out on baking paper on oven tray and spread 1/2 with finely sliced apple. fold over other half.
mark and cut into squares while still hot and sprinkle with icing sugar when cold.
this recipe is well over 100 yrs old and baked in an old coal range
without a temp gauge so cook as you would with any scone mix

Lime & Buttermilk Cake 250gm butter softened, 2 limes rind finely grated & juiced, 1c caster sugar, 3 eggs separated, 2c sr flour, 210ml buttermilk. Lime Icing: 1c icing sugar, 1tsp milk, 1 - 1 1/2 T lime juice. Grease & line a 20cm round pan. Cream butter, 1T lime rind & sugar together till fluffy. Add egg yolks one at a time mixing well after each. Stir in half the flour, add half the buttermilk and 1T lime juice. Stir to combine. Fold in remaining flour, buttermilk and 1T lime juice. Beat egg whites in separate bowl until soft peaks. Fold into batter. Pour into pan & bake @ 170° for 50mins until cooked. Icing when cold with lime icing made by combining ingredients together to form a thick icing.

Almond & Carrot Cake Separate 5 eggs...Beat yolks with 1t grated lemon zest.. 1&1/4C caster sugar until thick and creamy..Stir in 2C grated carrot;; 2C almond meal.. 1/2C self-raising flour. Beat egg whites in small bowl until soft peaks form fold into carrot mix in 2 batches.
Bake @ 180* 1hr 15mins Stand cake 5 mins before turning out. When cool ice with cream cheese icing.
