Mexican Rice Pudding 2 1/2 cups water; 1/4 tspn salt; 3/4cup (medium grain) rice; 1/2 cup sugar; 2 cups milk ("full" not low fat); 2 eggs, separated; extra Tbsp sugar; 1/2 tspn nutmeg; 1/2 tspn cinnamon; 1 cup sultanas
Add rice to boiling salted water. Cook until all water is absorbed, without stirring. Add milk, sugar and sultanas & heat for 15 minutes. Beat egg whites until stiff with 1 Tbsp sugar. Add egg yolks, nutmeg and cinnamon. Fold egg mixture into rice. Bake 15 minutes at 180C. Serve hot or chilled.

Microwave Bread and Butter Pudding for one 1 cup bread cubes; 1 Tbsp butter, melted; 1 egg; 2 Tbsp sugar;
1/2 cup milk, (or cream)

CHOICE OF FLAVORINGS:
1/4 tsp cinnamon OR 1/8 tsp ground nutmeg and 1/4 tsp vanilla OR 1 Tbsp lemon juice.
Put the bread in a 16-ounce glass cup/container. Toss the melted butter with the bread. Beat the egg and then mix in the sugar and milk, then stir in your choice of the seasonings. Pour the egg mixture over the bread and mix.

Sprinkle choice of optional Microwave on high for about 3 minutes or until the custard is set, stirring once after 1 1/2 minutes.

Up-Side-Down Caramelised Pear Cake (Part one) (Nice with lashings of ice cream and whipped cream.) 4 firm ripe pears; 1-2 Tbsp lemon juice; 75 grams butter; 1 cup caster sugar;1 tsp ground cardamom, mixed spice or ginger (For Cake) 100 grams butter; 1 cup caster sugar; 2 tsp ground cardamom or ginger; 3 eggs; 1 1/4 cups self rising flour, sifted.

Line the base & sides of a 23 cm spring-form cake tin with non-stick baking paper. Peel, core & slice the pears, sprinkle with lemon juice.
Heat the butter in a fry pan, toss pear slices in melted butter & cook for 3-4 minutes. Add sugar and spice & cook for a further 3-4 minutes, or until the pears are tender. Remove pears from the pan & continue to cook the sugar and butter mixture without stirring until it turns a golden caramel.
Arrange the cooked pears in the base of the prepared cake tin & pour over the caramel mixture. Set aside.

Up-Side-Down Caramelised Pear Cake (Part two) (For Cake) Beat the butter, sugar & cardamom together until light & fluffy. Beat in the eggs one at a time. Carefully fold in the flour & salt. Spoon the cake mixture over the pears and caramel. Place the cake tin on a baking tray (in case the caramel leaks from the seal). Bake the cake at 180C for 40 minutes or until well-risen, & a skewer inserted into the centre of the cake comes out clean. Rest for 5 minutes in the tin, remove the sides & then carefully turn the cake upside down onto a serving plate.
