PEANUT BUTTER DREAMS 65g butter, ½ cup (2 heaped soup spoons) peanut butter,
½ cup firmly packed brown sugar, 1 cup flour,
2 eggs, 1 teaspn vanilla, + 1 cup f/p brown sugar,
? cup flour, ½ teaspn baking powder, ¾ cup coconut,
1 cup chocolate chips.

Cream butter with peanut butter thoroughly, add ½ cup brown sugar gradually, beat till fluffy. Add 1 cup flour, ½ at a time, blending well after each addition. Press evenly into greased 23 x 23 cm x 5 cm tin. Bake at 175 for 10-15 mins or until lightly browned. Meanwhile, beat eggs, vanilla and 1 cup brown sugar until thick. Add a mixture of ? cup flour and the baking powder, beat until blended. Stir in coconut and chocolate. Spread evenly over partially baked layer in pan. Return to oven and bake another 30 mins. Cool completely and cut into squares

WHITE-DARK CHOCOLATE BROWNIES 250g butter, 1 cup suga, 4 eggs,
1 cup white chocolate bits, 1 teaspn vanilla essence, 1 ½ cups flour,
1 teaspn baking powder, ½ cup dark chocolate bits.

Melt butter in large saucepan. Add sugar and white chocolate. Stir until chocolate melts. Beat in eggs one at a time with vanilla. Sift over flour and baking powder. Stir in dark chocolate. Pour into a 20cm x 30cm sponge roll tin lined with baking paper. Bake at 180 for 30 mins or until brownie springs back when touched. Cool in tin. Turn out and cut into squares. Sprinkle with icing sugar.

GRANNY’S SCRUMPTIOUS COFFEE & DATE FINGERS 2 eggs, 175 g butter, melted; 1 cup brown sugar,
½ cup milk, 1 teaspn each inst coffee + sugar in 2 teaspns hot water,
1 cup chopped dates, 1 ½ cups flour, 2 teaspns baking powder.

Beat eggs, add to remaining ingredients and thoroughly combine. Spread into well greased or paper lined slice tin, 30 mins @ 150°. Cool in the tray. Ice with icing made of 2 cups icing sugar, 25g butter melted, boiling water,
1 teaspn each inst coffee + sugar in 2 teaspns hot water.

FOAM BISCUITS ½ cup milk, 1 cup sugar, ½ teaspoon soda,
3 cups flour, 225g butter.

Bring milk and sugar to boil, add soda, put aside to cool. Rub butter into flour, add foam mixture. Roll and cut thin, and bake 180c. Can be iced.

Ginger Crunch 125g butter, softened, 1/2 cup White Sugar, 1 1/2 cups flour, 1 teaspoon baking power
1 teaspoon ground ginger, Ginger Icing 75g butter, 1 cup Icing Sugar, 2 tablespoons Golden Syrup, 3 teaspoons ground ginger. Method, Preheat oven to 190*C. Cream butter and sugar until light and fluffy. Sift flour, baking powder and ginger together. Mix into creamed mixture. Turn dough onto a lightly floured board. Knead well. Press dough into a greased 20 x 30 cm sponge roll tin. Bake for 20 – 25 minutes or until light brown. Pour ginger icing over base while hot and cut into squares before it gets cold. Ginger Icing
In a small saucepan combine butter, icing sugar, golden syrup and ginger. Heat until butter is melted, stirring constantly.Makes: 24 pieces

libby51 In that peanut dream recipe at the top of the page, you have ? flour. Any idea how much flour that is actually supposed to be? Just curious, thanks for that.

Cookies & Cream Slice... 350gm Oreo Biscuits, 150gm butter, 2 tsp powdered gelatine, 400gm cream cheese, 300gm thickened cream, 1 tsp vanilla, 1/2 c caster sugar, 200gm white chocolate melted and dark choc melted to drizzle over top. Pop 250gm of the biscuits into food processor & process till fine crumbs, add butter and process to combine. Press into slice tin & pop in fridge 30mins. Meanwhile, sprinkle gelatine over 1/4c cold water in a cup. Pop cup in pot of simmering water to dissolve gelatine. Beat together cream cheese, cream, vanilla & sugar till smooth, stir in gelatine mix and white choc. Roughly chop rest of biscuits & stir through this mix. Pour over chilled base, cover with glad wrap & pop back in fridge to set. Drizzle with dark choc for decorative effect.

'Hello Rosie' Slice is just so decadent but so scrumptious.
100g butter, melted, 250g malt biscuits, crushed 2 cups good walnut pieces chopped roughly and lightly toasted, 1-1/2 cups dark choc. buttons chopped, 1 cup sultanas, 3 cups long thread coconut, 500g sweetned condensed milk.
Mix together the butter and biscuit crumbs and press into a 20x30cm slice tin, greased and lined with baking paper.
Mix together the remaining ingredientgs and foughly press over base.
Bake at 160 degrees celsius for 30 mins or until browned. Don't overcook. The finished product should be slightly moist and sticky. If the slice starts to brown too quickly during the cooking time, cover with baking paper until the time is up. Cut when cold. Enjoy

Ginger Fudge Cake Melt 200g butter..add 1/2C brown sugar & 2t ground ginger..heat until sugar dissoves..Remove from heat..Add 1C mixed dried fruit..2 eggs..Mix in 1/4C crystallised ginger..1/2C rolled oats..1/2C coconut..1&3/4C crushed plain biscuits..Spread in lined swiss roll tin. Chill. Ice with Ginger Caramel Icing...Heat together 1T butter..2T boiling water..1/2C brown sugar..2t gr.ginger..till sugar dissolved..Stir in 2C icing sugar.

Giant Choc Chip Biscuits adapted from the Hersheys semi-sweet choc chip pkt...Mix 2 1/2C flour.. 1t b/soda.. 1/2 t salt.. .. In separate bowl beat 250g soft butter.. 3/4C raw sugar.. 3/4C packed brown sugar.. 1t vanilla.. until creamy. Add 2 eggs; beat well. Gradually add flour mix..beat well. Stir in 1&1/2C choc chips (Hersheys are nice big ones) & 1t BP and 1C ch. pecans(optional) At this point I halve the mix and add 2T cocoa to one lot. Drop rounded Tbspoons onto cookie sheet. Flatten and allow lots of room for mix to spread. I cook 1 tray @ a time @ 175 for 15 mins .. then use a spatula to carefully turn cookies leaving to crisp for a few mins more. Leave to cool slighty on trays.. then move to wire rack.

White Choc & Orange Biscuits... 115g butter, 200gm caster sugar, 1 egg, grated zest of 1 orange, 1 tsp vanilla, 200gm plain flour, 1/2tsp baking soda, 1/4tsp bkg powder, 1/4tsp salt, 225gm white choc chips. Beat butter & sugar. Add egg, orange zest & vanilla. Sift together dry ingredients & add to butter mix along with choc chips. Roll into balls & flatten slightly. Bake @ 190°C for 8-10 mins.

Some savoury biscuits to serve with drinks: Blue cheese crumbles: 190g wholemeal flour, 75gm rolled oats, 1T brown sugar, 1 1/2tsp baking powder, 1/2tsp cayenne pepper, 1/4tsp salt, 115gm butter, 50gm blue cheese, 2-3T milk. Mix all the dry ingredients reserving 2T of rolled oats into a bowl. Rub in butter. Crumble in half the blue cheese. Add milk slowly to form a soft dough. Roll out pastry onto floured surface 3mm high. Cut using cookie cutter and place on greased baking trays. Crumble the remaining cheese into a bowl & add the reserved oats. Mix together and brush the tops of the biscuits with water and press this mix on top. Bake @ 175°C for 15-20mins.

Chilli cheese thins: 300gm flour, 1/2tsp baking powder, 225gm butter, pinch of hot chilli, 115gm parmesan cheese finely grated. Sift flour & baking powder together. Rub in butter till mix resembles fine breadcrumbs. Add chilli powder & parmesan cheese and knead till mix comes together. Can all be done in food processor as well. Roll mix out between baking paper to less than 2mm thick. Cut into 1cm x 10cm lengths, prick lightly. Reroll and left over dough and repeat. Bake @ 175°C for 8-10mins until golden.

YUMMY TEXAN SLICE 100g butter, melted
250g malt biscuits, crushed
2 cups walnut pieces, chopped roughly & lightly toasted
1.5 cups milk choc buttons, chopped (I left mine whole)
1 cup sultanas
3 cups desiccated coconut
500g sweetened condensed milk (about 1.5 cans)
Mix together butter and biscuit crumbs, press into 20 x 30cm slice tin, greased and lined with baking paper.
Mix together all other ingredients and roughly press into tin. Bake at 160c for 30 mins or until lightly browned. Don’t overcook. Should be moist and sticky.
(Cover with baking paper if starting to brown too quickly)
Cut when cold. Makes 18 pieces. (I cut mine smaller).

PUMPKIN COOKIES WITH CREAM... ....CHEESE ICING
For the cookies:
1 cup sugar
2 sticks unsalted butter, softened
2 tablespoons Maple syrup
2 eggs
1 cup canned pumpkin
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground all spice
1/4 teaspoon freshly grated nutmeg (can use dried)
Pinch ground cloves
2 1/2 cups flour
2 teaspoons baking powder
Pinch of salt
(May add 1/2 chopped pecans, if desired)
For the frosting:
2 (8-ounce) packages cream cheese
1 cup confectioners sugar
1/4 cup milk
1 tablespoon vanilla extract
Zest of one lemon or one orange
For Garnish:
Whole pecans

Preheat the oven to 350 degrees F.
In a mixer, cream the sugar and the butter until light and fluffy.
Add the maple syrup and eggs. Mix to incorporate.
Add the pumpkin and mix to incorporate.
Sift together the flour, baking powder, salt, cinnamon, allspice, nutmeg and cloves.
Add the dry ingredients to the batter and mix well.
Drop rounded tablespoonfuls onto ungreased cookie sheets.
Bake for 10 minutes, or until lightly golden brown around the edges.
Cool on racks. When cool, ice with the cream cheese frosting.

For the Frosting: In a mixer, add the cream cheese. Beat until light and fluffy. Beat in the powdered sugar until smooth. Add milk and vanilla. Beat until smooth. If frosting is too thick, thin with a little more milk. Fold in the lemon/orange zest. When cookies are cool spread with some of the frosting. Garnish with a whole pecan.
These are also yummy, came from my sister in America so you'll have to convert where necessary. Confectioner's sugar is our icing sugar.

havn't read all of these but gonna put this on anyway in case you don't have it...cut up 3 mars bars or moro bars and 90gms butter. melt these then add 3 cups of rice bubbles. spread into a slice tin then...melt a king size block chocolate with 30gms butter and spread over other. put in frdge to set...hint:cadbury dream is dreamy over the top
