has anyone tried this.take 1 tablespoon of mashed potato and add icing sugar while mixing.it is surprising how much icing sugar gets added.then when it is to the required consistency add cocoa or chocolate to make chocolate candy.coconut for coconut ice.peanut butter for that flavoured candy.
an american idea.very different very sweet.

If anyone would like to save the pages of a thread have a page of the thread on your screen.. at the top left, click on the word 'File' - then 'Save as' - a box will pop up.. type the name of the thread - use the page number too if you want.. ie: "Confectionary thread 1" or any other name, in the 'File name' part, and at the top of the box, click on the little down arrow at the right end of the 'Save in" box. A range of options will come up.. choose where you want to save the thread to - ie.. to your desktop, so you have it readily accessible. Now click on 'save' at the bottom right of the box, and your computer will take a few moments to save that page of the thread (or any internet page you want to save like this) so you have it readily accessible to read through as and when you want.. Just go to where you've saved it, and click/double click on the name you've used, and it will open for you.. Hope this helps...

thankyou to everyone on here! I have a 9 yr old nephew who loves to cook... his bday is coming up soon so I thought I would make him up a gift basket with all the ingredients etc to make some sweets... great ideas on here, it'll keep him busy for a month!

Nigella's Chocolate Pistachio Fudge
350g/12oz dark chocolate, at least 70 per cent cocoa solids, chopped
1 x 397g/14oz can condensed milk
30g/1oz butter
pinch salt
150g/5¼oz unsalted pistachios, shells removed

Method
1. Place the chopped chocolate, condensed milk, butter and salt into a heavy-based pan over a low heat and stir until melted and well combined.
2. Place the nuts into a freezer bag and bash them with a rolling pin, until broken up into some large and some small pieces.
3. Add the nuts to the melted chocolate mixture and stir well.
4. Pour the mixture into a 23cm/9in square tray, smoothing the top with a wet palette knife.
5. Let the fudge cool, then refrigerate until set.
6. Cut into small pieces approximately 3cm x 2cm/1¼in x ¾in. Cutting 7 x 7 lines in the tin to give 64 pieces best achieves this.
7. Once cut, the fudge can be kept in the freezer - there's no need to thaw, just eat straight away

Golden toffee? My mum used to make golden toffee. It contained about half a pound of butter a tiney bit of salt and vinegar and some sugar. All the ingredients were placed in afrying pan til they reached the hard setting stage. Wish I knew the sugar measurement. It was the most delicious hard toffee I ever tasted. It had no water or other ingredients in it as far as I recall. I have a huge collection of recipe books and I cannot find anything that fits this description. She would never give me the recipe because later she decided it had too many calories in it but I sure would like to make this just once so I could relive that wonderful taste.

A thought for this year Christmas ....... Last year, a lady friend gave out to her clients ( she is a home cleaner ) chunks of juliewn christmas cake, great results. The other day asked me what for thoughts this time around. Now a thought and possibly do something like these: The idea came when I tried what is known as "Pods" marketed by Mars Company. I will use a very nice shortbread or yo-yo basic biscuit mix with some coconut in it. Into those small paper cups put some in, form it like a cup within the paper cup and cook for a short time. Then take them out an recheck that they are baking as a cup... Continued..

Then into each cup a little of my butterscotch sauce ( recipe is in the thread "cooking class 101" ) topped with one of those bigger choc buttons and back into the oven to complete the baking time.... One could after rechecking the forms of cups to finish baking the biscuit cups then place the filling then put some melted choc on top and let cool. Variation on fillings could be Fruit puree, fruit jam, nuts, choc fillings as noted earlier in this thread or whatever. I think these will be quite novel and done right will give something different yet nice. Hmmmm sounds good now to experiment... Cheers and thank you for any further thoughts... Further thoughts to post #240 .... Pods ! Noted a wafer base, one can use either a coconut wafer or a honey wafer base recipe that one has but feels a combination of these with a shortbread to give that soft yet crunchy slight effect for the best result. Will look into this as one experiments with these. Watch this space.... Sort of... Cheers.

Idiot proof Rocky Road "no nuts". Buy: 2x250gm blocks plain, milk or dark chocolate. 4x55gm Turkish delight bars. 1x500gm bag marshmallow's. 1x200gm pkt glacé cherries. Also you need 200gm butter. 2 large cups rice bubbles. In a large pot put butter and chocolate broken up and stir over very, very low heat until melted. Remove from heat and quickly stir in all other ingredients. Spread and pack down into 2 sponge roll tins lined with foil and refrigerate for 3 hours. Cut when cold and store in fridge. This huge recipe can be halved if you like. I chop the marshmallow's in half pieces too.
