Everyones Favourites BANANA MUFFINS
ALL METRIC MEASUREMENTS
3 very ripe Bananas
3/4 Cup Caster Sugar 1 Egg(or 1 tablespoon golden syrup - for those with Allergies)
1 tsp Baking Soda
1 Tsp Baking Powder
1/4 Tsp Salt
1/2 Cup melted Butter OR cooking oil if preferred - or combination of both)
1 1/2 cups plain flour
Method
Mash Bananas, add sugar and leave for a short while to let sugar dissolve, add slightly
beaten egg. Add melted butter & then sifted ingredients ( sifted twice to distribute
soda and baking powder more evenly).
Put into muffin tins - 1 normal size or 2 mini size. Cook at 180 C for approx 20
minutes.

This mixture also makes a lovely cake. Cook at 150 C until cake springs back in
middle. Ice Cake with lemon icing.

Bumping Great to see this thread is still going. A cook bok should be produced using all of these recipes. I use to bake constantly once upon a time but with working full time these days I never seem to get the time to bake, plus we don't seem to eat cakes, biscuits etc like we use to.

Quick Mix Coconut Cake Sift 1 cup each of s-r flour and desiccated coconut into a bowl. Stir through 2 tsp finely grated lemon rind, and 1/2 cup caster sugar. Add 3/4 cup milk, mix to combine and pour into a greased and lined 19x8x6cm loaf tin. Bake at 180 for 35-40 mins, or until firm. When cool drizzle with pink glace icing and dust with coconut.

calling all nana bakers//////lol We all know better is so expensive these days, but I love to bake. Has anyone got a recipe for shortbread, the kind ya mother used to bake. You know the kind I mean.....The one that melts in ya mouth.mmmmmmmmmmmm

nzbrat - try this one, it's wonderful! Shortbread: 225 gr (8 oz) butter, 125gr (4oz) icing sugar, 125 gr (4oz) cornflour, 225 gr (8 oz) flour. Cream butter and sugar well, add sifted flour and cornflour. Knead well. Roll out to 12-18mm (1/2-3/4 inch) thick. Cut into pieces. Place on greased tray. Prick and bake about 30 minutes at 150*C (300*F).

another endorsement I've made the Bloody Good chocolate cake (all the way back on the very first page, no. 3) as a layer cake for my husband's birthday. I put strawberry jam between the layers (his fave) & mocha ganache on the outside. I also have made a wholemeal & walnut yeast bread, the old-fashioned kind where you knead it & let it rise twice before baking.

Coca cola cake - reallly yummy & different this Recipe is from an italian cafe in Rotorua famour for its cakes
3cups Flour 3cups Sugar 5Tbsp Cocoa 1 1/2 cup Cola 375g Butter 2cups Marshmallows 100g Chocolate
3 Eggs - beaten 3/4 cup Milk
1 1/2 tsp Baking Soda 2tsp Vanilla essence 1 Tbsp Oil vegetable.
Grease and flour cake pan and set aside. In a large bowl combine the flour and sugar. In a large saucepan combine Cola, Cocoa, marshmallows, chocolate and the butter bring to the boil, add the boiled mixture to the flour & sugar mixture & combine well. In another bowl mix the eggs, milk, baking soda, oil & vanilla, then add this to the first mixture, mix well. Pour mixture into pan and bake @ 180C for ~ 35 minutes until cake test done....will be quite moist. Allow cake to cool 10 minutes then turn cake out onto serving plate and dust with icing sugar.

Tiger Bars Makes 24

2x375g White Chocolate
1cup Peanut buttersmooth
3cup Rice Cereal
375g Dark Chocolate

Melt the dark chocolate set aside, melt the white chocolate add the peanut butter and mix until well combined add the rice bubbles and mix well spoon into a tray lined with greaseproof paper alternating with ¾ of the dark chocolate, swirl the two chocolate and drizzle the remaining dark chocolate over the mix in a stripe design. Allow to cool, cut into bars.

Raspberry Chocolate Sable Biscuits
500g Flour –plain
200g Icing sugar
400g Butter – soft
2 Egg yolks
2Tbsp Cream

Raspberry Jam
Chocolate

Cream butter & sugar, add the yolks & cream and mix well, fold in the flour. Using a plain nozzle in a piping bag, pipe out round shapes, indent the centre using a floured tsp, fill this indent with a small amount of raspberry, Bake@180C until golden, cool, then dip half of the biscuit in melted chocolate, scrape excess of the bottom and allow to set.

Apricot & Maple oatmeal cookies makes alot 1cup Apricots dried– diced
4cup Flour – plain
7cup Oats
500g Butter
1cup Maple syrup
4tsp Water
2tsp Baking soda
2 2/3cup Sugar – caster


Melt the butter with the maple syrup, dissolve the baking soda in the water add it to the hot butter mix (it will foam up), add this to the dry ingredients and mix well. Place portions on a baking sheet, press down to flatten slightly, allow for spreading. Bake@180C ~20mins or until lightly browned. Cool on racks.

Mascarpone Substitute
225g Cream Cheese
1/4 cup Cream heavy
2 Tbsp Butter

Mix all ingredients until well blended use in place of mascarpone

Bloody Good Fudge 1 can evaporated milk
3.75 cup sugar
50g butter
0.5tsp salt
200g mini marshmallows
560g dark choc melts
1Tbps Vanilla essence

Boil evaporated milk, sugar, butter & salt for 5 minutes stir constantly add vanilla essence, choc & marshmallow stir 1 minute pour into lined greased tin refrigerate to set

Pan release I found this recipe on another website can't remember which but it's great to keep handy to brush on cake pans and trays when baking make cakes and bickies come out & off easily, staves time reasing & flouring

1/2 cup vegetable oil
1/2 cup vegetable hortening
1/2 cup flour

Whisk together until resembles marshmallow cream store at room temp

GR8 to see this gets additions all the time for more yummy recipes you know after starting this thread it has ben great to hear from people who have gone back to baking again it really is a relaxing process, and quite calming in our lifestyles we are rush rush rush so baking makes us stop and smell the roses so to speak, and get your kids involved and it becomes a family afair.....keep up the recipes guys this is great

ooh how exciting! recently i've started doing the baking thing, flatmate and i got out of our last flat, and just her and i now, and i've gone all domestic! eek! (she's teasing me and telling me i'm nesting)...BUT...my mum always baked, and even as a kid i loved her for it, and now it seems it's coming out in me! and as much grief as the flattie gives me, she blardy loves it...yay gana go try recipes!! this is awesome :)

and my first contribution.. "nessa's 10 minute from start to finish brownie" (mwave)

100gm butter/marge, 3/4c flour, 1tsp vanilla ess., 1c sugar, 1tsp BP, 2 eggs, 1/4c cocoa (can add handful of nuts etc)

melt butter, add eggs, sugar, vanilla essence, beat well with a fork. sift in dry ingred's, stir but don't overmix. grease a microwave ring "tin" and pour mixture in. elevate tin in microwave (upside down saucer or butter plate works best) and microwave for 4-5mins, just watch it towards the end, top should be springy and just past the gooey stage. turn onto a plate and dust with icing sugar. delicious hot with icecream or fudge sauce, or cold iced..mmmmmmm

Date pie Got this recipe from a Middle Eastern cooking class years ago. Great because it needs very little butter.

1 ½ c flour
1/3 c salad oil
1/3 c water
½ tsp yeast
½ tsp salt
1 Tbsp sesame seeds

Filling: 250gm dates, 1 tsp butter

Heat oil until boiling. Combine flour, sesame seeds and salt in bowl. Pour the hot oil into the bowl and stir the mixture. Add the water and yeast, mix and cover for 15 minutes.
