Bumping again.. and for a quick way to find a recipe or thread: Have the messageboard on your screen - or a thread open, etc.. On the lower left of your keyboard, hold down the control (Ctrl) key, and at the same time press the letter "F". A box will pop up. Type a word you're looking for - ie "chocolate" and click next.. and again.. until you find what you're looking for.. or you've found all the threads or posts with that word in. Not on that page? Go to the next one and repeat.. makes it easy to find any thread or posts in a thread that you're looking for.. Cheers..

A little thank you I thank kennymac for the gingerbread men recipe, rkcroft for the velvet chocolate cake, brianmac for the lemon yogurt cake, 245sam for the oaty caramel tan slice, aunty-di for the vegetarian choc cake, whiskey13 for the cream cheese brownies, and that's just the sweet stuff I've tried out this year! Also, my family, friends & workmates thank you, 'cuz that's who got to eat it all!

And to new standards as well Also thanks to campmum, whose mud cake got more than one outing this year for occasions, and also to balisal for the carrot cake recipe, and two posters I neglected to copy onto my printouts, who posted outstanding feijoa muffins & nice Greek baklava. (I actually should thank Weight Watchers as well, since I kept several of those recipes too.)

Happy 2008 everyone Just thought I'd like to share with you all..... I made my first ever batch of scones on a coal range over new year, they tasted fanastic!!! The whole batch disappeared within minutes. I've made scones before but not on a coal range. Bring back the coal ranges I say....

I made "The best Banana cake recipe" from the trademe cooks website, and posted by mackenzie2, and it is divine!!!!! Best banana cake ever!! I iced it with lemon icing - OOOoooo baby!

What a cool thread! Im relatively new to baking everything for my kids - due to now being way too expensive buying busvuits, snacks etc for lunches, I make it all. Don't actually know if Im saving much but at least I know whats going into it!! My oven sucks - I cant bake cakes in it (burns top, leaves base raw) but i can do killer muffins, biscuits, cupcakes, and with the breadmaker homemade buns, rolls and pizzas. Yum! Have got some great recipes on this site too!

Animal Cookies 1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or margarine -- softened
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Heat oven to 180º. Beat sugars, butter, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in
remaining ingredients. (If dough is too soft to shape, cover and
refrigerate about 2 hours or until firm.)Shape dough by 2 tablespoonfuls into slightly flattened balls and
ropes. Arrange on ungreased cookie sheet to form animals as desired.
Use small pieces of dough for facial features if desired. Bake about 10
to 12 minutes or until edges are golden brown. Remove from cookie
sheet to wire rack.

Icing sugar, if desired
Heat oven to 180º. Beat brown sugar, butter, shortening, gingerroot
and eggs in large bowl with electric mixer on medium speed, or mix
with spoon. Stir in bananas and milk. Stir in flour, baking powder and
salt.
Drop dough by rounded tablespoonfuls about 2 inches apart onto
ungreased cookie sheet. Bake 9 to 11 minutes or until almost no
indentation remains when touched in center. Remove from cookie
sheet to wire rack. Sprinkle with icing sugar while warm.

Butter Crunch Clusters 1/2 cup butter or margarine
2/3 cup packed brown sugar
1 tablespoon corn syrup
2 cups Cheerios® cereal
1 cup salted peanuts
Heat butter in a large saucepan over low heat until melted. Stir in
brown sugar and corn syrup. Heat to boiling over medium heat,
stirring constantly. Boil and stir 1 minute; remove from heat.
Stir in cereal and peanuts until well coated. Drop mixture by
tablespoonfuls onto waxed paper; cool.

1/2 cup shortening
1/2 cup packed brown sugar
1/4 cup white sugar
2 1/4 cups all-purpose flour

with electric mixer on medium speed, or mix with spoon. Stir in flour
and salt. (Dough will be dry and crumbly; use hands to mix
completely.)
Roll dough into rectangle, 15 × 7 1/2 inches, on lightly floured surface.
Cut into 1 1/2-inch squares. Place about 1 inch apart on ungreased
cookie sheet. Bake about 25 minutes or until set. (These cookies
brown very little, and the shape does not change.) Remove from
cookie sheet to wire rack.

Lasagne ( still the best all-rounder ) serves 8 2 teaspoons olive oil, 1 large onion chopped, 2 carrots finely chopped, 2 celery sticks finely chopped, 2 zucchini finely chopped, 2 cloves garlic crushed, 500 grams lean beef mince,
2 x 400 grams cans of crushed tomatoes, ½ cup beef stock, 2 tablespoons tomato paste,
2 teaspoons dried oregano, and 375 grams instant or fresh lasagne sheets.

CHEESE SAUCE: 1/3 cup cornflour, 3 cups milk and 100 grams cheese grated.

Heat the olive oil in a large non-stick frypan, add onion and cook for 5 minutes until soft. Add the carrot, celery and zucchini and cook stirring instantly for 5 minutes until the veges are soft (one may need to add a little beef stock liquid if too dry). Add the garlic and cook for another minute.

2nd part...Lasagne Add the mince plus a little salt and pepper for personal taste, cook over very high heat stirring until well browned. Break up any lumps of meat with wooden spoon. Add the crushed tomato, beef stock, tomato paste and oregano to the pan and stir to thoroughly combine. Bring the mixture to the boil, then reduce the heat and simmer gently partially covered for 20 minutes stirring occasionally to prevent the mixture from sticking to the pan. Preheat the oven to moderate 180c, spread a little of meat sauce into a base of a 23cm X 30cm ovenproof dish. Arrange a layer of lasagne sheets, a layer of meat sauce, then a final layer of lasagne sheets.

3rd part ... lasagne......final bit To make the cheese sauce, blend a little of milk with the cornflour to form a smooth paste in a small pan. Gradually blend in the remaining milk and stir constantly over low heat until the mixture boils and thickens. Remove from the heat and stir in the grated cheese until melted. Spread evenly over the top of the lasagne and bake for an hour.

Check the lasagne after 25 minutes. If the top is browning too quickly cover loosely with non stick baking paper or foil. Take care when removing the baking paper or foil that the topping does not come away with the paper or foil. Leave the lasagne to stand for 15 minutes before cutting into portions for serving.

STORAGE TIME: Can be frozen for up to 2 – 3 months. When required, thaw overnight in the refrigerator then reheat covered with foil for about 30 minutes in a moderate oven.

HINT Re using lasagne sheets.... One can cut sheets to suit the size of dish but please have the larger pieces near the edges, best to cut 2 larger sheets down a little for the top and bottom layers and use the smaller pieces for the middle layer. This ensures a very good finished top.

my nearly 14 yrold son baked this afternoon - he made giant choc chip cookies with huge bits of chocolate!! He also cooked a stirfry for tea and last night he made lasagne!! I will soon be able to hand over the reins!! My job is done!!
