Ive just done the weeks baking, what did you bake

any one else concerned about rising butter prices hi have been reading about all you fab home bakers i bake for my children too and they love it yes it has sugar and white flour but at least i know what i put in it!!
i am worried about butter cheese and milk prices they are making a big impact and im sure it will only get worse. how is it in nz we make so much of it and it just keeps getting dearer. if i could i would stop buying to protest but they are my essentails. any bright ideas??

mmmm so yummy Great recipes guys going to try a couple tomorrow, can't wait! I'll just add this one, not sure if its been done yet, but its yum too! ... :Mars bar muffins:
2 cups plain flour,
2 1/2 tsp baking powder,
4 Mars Bars,
1/3 cup sugar,
2/3 cup milk,
125g butter/margarine,
1 egg - lightly beaten,
Method:
Preheat the oven to moderate (180C)
Sift the flour and baking powder together. Chop the Mars Bars into small pieces. Stir the Mars Bars and the sugar into the flour mix.
Melt the butter/marg in the microwave and mix with the milk and lightly beaten egg. Stir into the dry mixture, mixing only slightly - don't worry about a few lumps. Spoon into patty cases - about 2/3 full and bake for 15- 20 minutes or til golden.

Chocolate picklets I made these today got sick of plain picklets 1 Cup of flour 1-1/2teaspoon backing powder 2 heap teaspoons cocoa powder 1heap tab spoon icingsugar mix all together Than 1 egg mix in one cup of milk one dessertspoon melted butter just add milk till you think it is thick enought not to thin grease fry pan place in the mix stovetop on low heat till you see bubbles on top then turn over till cooked.did not last long was told to make again .Lyn

A Beautiful Whole Plum Cake 125g butter softened, ¾ cup castor sugar, 2 eggs lightly beaten, 1 cup self-raising flour, ½ cup plain flour, ½ cup milk, 680g can of whole black doris plums well drained and icing sugar to dust.

Preheat the oven to 180c. Grease and flour a 23cm fluted baba tin shaking out any excess flour. Beat butter & sugar with electric beaters until pale then add the beaten egg gradually beating well as one adds. Fold in the sifted flours alternating with the milk. Gently fold in the plums. Carefully spoon the mixture into the prepared tin and smooth the surface ( do not push the mixture down ). Bake for 50 minutes or until the skewer comes out clean but be wary that plum will be moist. Leave to cool in the tin for 10 minutes before turning out onto a wire rack. Dust with icing sugar before serving. This cake is best eaten within 24-36 hours. Note:- instead of fluted baba tin, a circular tin with the hollow centre is okay.

Also to the above recipe... If the plums are large then cut in half.... Sometimes the size can vary depending on the brand and amount in the can.

valentino We've got a looooooong way to go unfortunately. Only up to 39 pages at this stage. I've pulled in the recipes from the cakes thread and also the biscuits and slices thread. Also any other's that I thought people might like included. Like Volumes 1 & 2, I'd like to see Vol 3 at around 70 pages before it gets distributed. C'mon everyone, get baking and get posting those tried and true recipes!

Orange yoghurt surprise muffins 3 cups of flour,4 tsp baking powder
1 large egg,3/4 cup orange- mango- apple juice(or use orange juice)75g butter,2tblsp honey(or 1/4 cup sugar)1 pottle of yoghurt(i used pineapple and passionfruit,chocolate buttons,1/4 cup coconut,1/4 cup milk(if mixture is dry).
sift flour and add baking powder together in a bowlthen add coconut.On a low heat melt butter and honey(set aside to cool)then add the egg and mix together then add the orange juice.Add wet liquids to the flour.Mix in the yoghurt.Place ingredients into muffin tray and then place chocolate buttons into mixture.Bake in moderate oven until cooked approx 180oC for 20-30mins(checked muffins after 20mins).

Baking Baking Baking. I have only just come on to the Trade Me site (and the Message Board) and am having fun reading the bits and pieces. After a page or two I went to the end(will have to go back and devour the recipes). In the last 10 days I have baked 6 banana cakes, 2 caramel cakes, 2 date loaves, 2 sultana loaves, 4 gingerbread loaves and 6 dozen biscuits. No, I don't have a large family, I am baking for a cake stall, and boy, am I finding the cost of ingredients escalating. I haven't done the slices yet either.

#2201 Yeah I get narked about the price of baking ingreds too. And I am the same at least we know whats going into our baked goodies! The kids would rather my baking than that packaged stuff anyday! I'm about to shove something in the oven not sure what but it'll smell nice here soon.

Carrot Cake This is a yummy recipe that has no oil in it!!! 75g Butter, 1 1/2 cups raw sugar, 250g sour cream, 3 eggs, 1 cup plain flour, 2 cups grated carrot, 1 1/2 tsp baking soda, 1 tsp mixed spice, 1 1/2 tsp cinnamon, 1/4 tsp salt, 3/4 cup wholemeal flour. Bake at 180C for 1 hour. Icing: 1/2 cup cream cheese, 1 tsp vanilla, 1 tsp butter, 2 1/2 cups icing sugar.
Beat cream cheese until smooth, add rest of ingredients. Enjoy!!

Subway Similar Cookies ( Chocolate Chip ) Had this posted in another thread but should be here as well for obvious reasons.
125g softened butter, ¼ cup sugar, 3 tablespoons condensed milk, few drops of vanilla essence, 1 ½ cups flour, 1 teaspoon baking powder and ½ cup chocolate chips. Cream the first four ingredients and add the last 3. ( It is quite a dry mixture ). Bake on 180c for 10-12 minutes. Variations: 2 tablespoons cocoa or ½ cup munched m & m’s instead of chocolate chips. ¼ Cup brown sugar and 3 tablespoons golden syrup instead of Condensed milk & white sugar to make caramel cookies.

And another that was posted elsewhere.. Coffee Liqueur Gateau.
125g Brazil nuts, 100g blanched almonds, 80g hazelnuts, 2 tablespoons plain flour, ¾ cup castor sugar, 7 egg whites, ¼ cup Tia Maria or Kahlua, small choc buttons to decorate and sifted icing sugar to dust. Coffee Filling: 200g butter, 1 cup dark chocolate melted, 2-3 teaspoons icing sugar, 2 teaspoons warm water and 3-4 teaspoons instant coffee powder. Preheat oven to 180c. Lightly grease a deep 20cm round tin and line base and side with baking paper. Place the nuts on a baking tray and roast for 5-10 minutes or until golden. Rub nuts vigorously in a clean towel to remove hazelnut husks. Place in a food processor and process until finely ground.

Transfer the ground nuts to a large bowl. Add flour and 125g of the sugar and mix well. Using electric beaters, beat the egg whites in a large mixing bowl until soft peaks form. Gradually add the remaining sugar beating until the mixture is thick and glossy and the sugar is dissolved. Using a metal spoon, fold the nut mixture into the egg mixture a third at a time. Spoon into the prepared tin and smooth the surface. Bake for 35-40 minutes or until springy to the touch. Leave in the tin to cool. To make the Coffee Cream; beat the butter in a small mixing bowl with electric beaters until light and creamy. Gradually pour in the melted chocolate beating until well combined. Add the icing sugar and combined water & coffee. Beat until smooth.

Storage: This cake can be prepared to 3 days in advance. Keep refrigerated in an airtight container. Note: Make your own chocolate buttons with 150g melted chocolate melts. Line two baking trays with baking paper. Place half the chocolate in a small paper icing bag. Seal the end of the bag, then snip off tip. Pipe small chocolate buttons onto trays. Tap trays lightly on bench to flatten buttons and leave to set. Peel off paper and use to decorate.

Xmas cakes in terracotta please
Hi can anyone tell me how to make Xmas cakes in small terracotta pots and is there any thing i have to do to pots first to make them safe.I have read that you wash them well and only have to place cooking paper in them do you think that is right love to know thanks.Lyn

Yummy Date Loaf 1 cup chopped dates or ½ cup chopped apricots and ½ cup sultanas, 2 T butter, 1 t vanilla essence, 1 cup white sugar, 1 t baking soda, 4 crushed Weet-bix
Put in a bowl, add 1 cup of boiling water and leave for 5 minutes. Add 1 beaten egg and 1 cup self-raising flour and mix well. Pour into a greased and lined loaf tin. Bake at 180°C for 1 hour.

Brownies - YUMMY 1½ cups plain flour, 2 cups sugar, 1 tsp salt, 2 tsp vanilla, ½ cup cocoa, 1 cup corn oil (or canola, never olive oil), 4 eggs-beaten, ¼ cup water, ½ cup walnuts-chopped. Mix all ingredients together. Place in oiled and floured baking tray. Bake in oven at 350°F for 20-30 minutes, no more. Mixture should be moist, done when top springs back to touch, edges come away from tin. Ice or sprinkle with icing sugar.

My Grandma's Jumble Recipe 1/4 lb butter, 1 egg, 1 cup flour, 1 dsp cocoa, 1 tsp baking powder, 1/4 lb sugar, 1/2 cup coconut.
Cream butter and sugar, add eg and dry ingredients. Bake in slice tin for 15-20 minutes at 180C. When cool top with chocolate icing with a sprinkling of coconut on top.

I am reasonably new to the messageboard and was so thrilled to find so many recipes that you have all shared. My family are all grown up now but I still have a grown Son who I bake for and I am always looking for different recipes. I thought this recipe may be of interest to some of you who are not into the heavy Christmas Cake thing.
So easy... 2 cups SR flour, 1Kg mixed fruit and 1 and 3/4 cups of Orange juice. Soak the fruit in OJ overnight and then add the flour. Mix well and bake for 1 hour at 160 degrees. Yes it's Easy as that. And delicious.

Phew - It's Too Hot To Be Baking! But that didn't stop me making hokey pokey chocolate chippies and cheese scones. Neither turned out that great, I must be having an 'off' baking day, but they taste OK. Oh! and I (Finally) cut up all the fruit to soak for the christmas cake.

Salmon, Silver Beet and Cheese Pancakes This is absolutely the best that I have done.... Bunch of silver Beet cooked – drained - chopped, 1 x 210g can Salmon, ½ cup Cream cheese, ½ cup grated cheddar, 1 teaspoon ground nutmeg, ¼ cup grated Parmesan (I used shavings chopped up), ½ teaspoon paprika and ½ cup fresh breadcrumbs.
BATTER: 1 cup flour, 1 ¼ cups milk, 1 egg and butter for cooking.
CHEESE SAUCE: 2 tablespoons butter, ¼ cup flour, 1 ¾ cups milk and 1 cup grated cheddar.
Put the silver beet, salmon (including juices), cheeses and nutmeg in a bowl and mix well.

Part 2..... final bit Batter, sift the flour and a pinch of salt into another bowl, add half of milk and the egg. Whisk until smooth, add remaining milk and mix thoroughly. Heat a teaspoon of butter in a frying pan and pour a thin layer of batter. Cook the base until golden then flip and repeat.
Cheese sauce, melt the butter over low heat, stir in flour until smooth and cook for I minute. Remove from heat and slowly stir in the milk. Bring to boil, stirring. Remove from heat and add salt & pepper and the grated cheese. Preheat oven to 180c. Divide the filling among the pancakes, roll up and put in a greased ovenproof dish. Pour cheese sauce over pancakes. Mix the Parmesan, paprika and breadcrumbs together and sprinkle over the sauce. Bake for 30 minutes or until golden brown.

To the above recipe...... I did a double batch using the larger can of salmon as it was on special, ate half of it, froze the rest, then yesterday took that frozen out and had it last night, cold without any heating and it was also delicious (completely thawed though).
