2210 | A Beautiful Whole Plum Cake 125g butter softened, ¾ cup castor sugar, 2 eggs lightly beaten, 1 cup self-raising flour, ½ cup plain flour, ½ cup milk, 680g can of whole black doris plums well drained and icing sugar to dust. Preheat the oven to 180c. Grease and flour a 23cm fluted baba tin shaking out any excess flour. Beat butter & sugar with electric beaters until pale then add the beaten egg gradually beating well as one adds. Fold in the sifted flours alternating with the milk. Gently fold in the plums. Carefully spoon the mixture into the prepared tin and smooth the surface ( do not push the mixture down ). Bake for 50 minutes or until the skewer comes out clean but be wary that plum will be moist. Leave to cool in the tin for 10 minutes before turning out onto a wire rack. Dust with icing sugar before serving. This cake is best eaten within 24-36 hours. In the last 10 days I have baked 6 banana cakes, 2 caramel cakes, 2 date loaves, 2 sultana loaves, 4 gingerbread loaves and 6 dozen biscuits.
