Hobson's Choice(nutty mixture slice very yummy) This receipe is from a reader who sent it into a NZ magazine years ago.125g butter,150g sugar,1 egg,150g flour,1 teaspoon baking powder,1 cup coconut,1 cup roasted peanuts,1 cup raisins,2 cups crushed cornflakes.Lemon Icing to ice.Preheat oven to 180c.Beat butter and sugar together until light and creamy. Add egg and beat well.Add all other ingredients and mix thoroughhly.Press mixture into a shallow baking tin-either a 30cmx24cm sponge roll tin for a thin slice or 26cmx18cm baking tin for a thicker slice.Bake for 25 mins or until golden,check.Once cooled ice with thick lemon icing.I add 1/4 cup rices,1/4 cup chocolate bits,1/4 cup other nuts like almonds.I like my slice thick.

Just made Peanut butter chocolate chunk cookies. Crunchy on the outside and chewy on the inside. Yum!!

110g butter, 2 big T crunchy peanut butter, 1/2c sugar, 1/2c packed brown sugar, 1 egg, 1t vanilla, 1c flour, 3/4t baking soda and a handful of choc chips or roughly cut choco buttons. Mix butter and peanut butter until incorporated, add sugars and cream together. Add egg and vanilla, mix together and then add flour and baking soda mix until just incorporated and then add choc chips. Drop teaspoons onto a tray. Bake @ 180 fr 12 mins. Longer if you prefer them a bit crisper.

VELVET CAKE... Have to say this is one of the nicest choccy cakes i have made for a while but what a weird combination with the white vinegar and oil but no eggs or butter.I doubled the mixture and it fitted nicely in my roasting dish

Lumberjack Cake Cake : 2 large "Granny Smith" apples (or good cooking apples), 1 cup chopped dates, 1 teaspoon bicarbonate of soda, 1 cup boiling water, 125g butter, 1 teaspoon vanilla essence, 1 cup sugar, 1 egg, 1½ cups plain flour. Topping : 60g butter, 1/2 cup brown sugar, 1/4 cup cream, 3/4 cup shredded coconut.

Lumberjack Cake ... cont ... Method : Finely chop and combine apples and dates, mix in bicarb soda and boiling water cover and let stand. Grease deep 19cm cake pan, line with paper. (If you are using a shallower tin ensure that the paper on the side rises above the top of the pan.) Beat butter, sugar and vanilla essence in a large bowl with an electric mixer until light and creamy. Add egg and beat until combined. With a wooden spoon, alternatively blend in parts of the apple date mixture and flour. Pour into prepared pan and bake in a moderate oven for 50 minutes. Pour topping over the top of cake and sprinkle top with additional coconut. Return to oven and cook for a further 30 minutes. Topping should be golden brown and caramelised. Allow to cool in pan. Topping : Combine butter, sugar, cream and most of the coconut in a pot. stir over a low heat until butter is melted and ingredients combined.

Yummy! I made a Lumberjack Cake last weekend, its a fave for my family so dosent last too long-hehehehe! Yesterday I made a carrot cake with cream cheese icing-DELISH :)

Jaxma... I just checked and the recipe I use is pretty much the same as your one. Its one from the Australian Womens Weekly Cake book which has some of the most delish cake recipes in it :)

Hummingbird cake Made it for dad for fathers day and then forgot to take it over for lunch, but hubby said it was yummy,never made it before so i'm very proud of myself even though the wrong recipient got to eat it!

Dog Biscuits Not really human food but it's still baking in the every sense of the word! Rub 250gms mincemeat into 500gms(3 1/2 cups) wholemeal flour and 2 teaspoon salt. Mix to a stiff dough with water(about 250mls). Roll out, prick with a fork and mark out squares. Bake at 110*C for 1 hour.

Whiskey Fruit Cake This is similar to other recipes but nonetheless is delicious as cake or as a dessert.
1 lge pkt fruit mix (1KG)
1pkt peel; 1/2 pkt dried apricots (chopped); 1pkt crustalised ginger - chopped; add 1 1/2 cups brown sugar; 1 1/2 cups warm tea, sherry, brandy or whiskey. Mix and leave over nite. Add 3 beaten eggs; 2-3cups s/r flour and spices., Mix well and opur into lined tin. Bake 170 approx 1 hour. Makes a double lot and will bake quite well in a roasting dish. Very moist and delicious cake

kageyz, you can vary my cheesecake recipe It's number 983 in this here thread, & you can make it a Kahlua cheesecake by substituting 2T Kahlua for the vanilla & almond essences & also mixing 1 or 2t powdered or crushed instant coffee to the filling. You can add some cocoa to the crumb crust or for a more decadent crust try crushed Oreos instead of malt biscuits (no nuts, no cinnamon if you use Oreos).

Nutella centered chocolates melt 375 g Choco milk melts with 1 tablespoon of kemelta, pour some into ice cube container, add 1 teaspoon of nutella to each cube then top with remaining choc, sprinkle with chopped nuts then put in the fridge until set.

Large biscuit mix..freezes well
1 lb butter, 2 cups sugar - creamed
4 tblsp golden syrup, 4 tblsp milk - heat together.
Add g.syrup mixture to creamed mixture and beat.
Add: 6 cups flour, 4 tsps baking powder - mix well.
Roll into balls and flatten - 15 mins ..180 approx.
Can divide mixture into half or quarters add any of the following: sultanas, peanuts, cocoa, choc chips.
I use the whole mixture and add 1 pkt of pams choc chips, then add the flour etc.Makes approx 60 biscuits.

Lemon Honey - microwave

2 large eggs
1 cup sugar
Juice and rind of 2 lemons
75gm butter
Beat the eggs well in a large pyrex jug or bowl, add sugar and beat till creamy. Mix in grated lemon rind and juice. Chop butter finely and add to jug. Microwave on FULL POWER for 6-8 minutes, stirring every two min with whisk. Put into jars.

Hi guys....as for brianmacs lemon cake i made it the night before i had to take a shout for work i placeed a fancy doilly over the top and sprinkled with icing sugar and placed washed yellow pansies around the plate boy was every one impressed and i also took the remaining container of greek youghurt for them to have with the cake, it is definately a cake to go in my personal recip book thanks PAM

jalapeno brownies I finally got a chance to try making jalapeno brownies - I've posted the actual recipe for these in the "Biscuits & Slices" thread. For the same event, I also made the cream cheese brownies whiskey13 posted on the previous page (2183 or thereabouts), which were very well received. I also made rugelach (I think I posted this recipe already?) & WW-style spinach & feta scrolls (ditto?). Boy, what fun. I like having an event to bake for, that way I get to try new recipes without having too much tempting stuff in the house afterward!

Fanx Lennyb I made a kahlua cheesecake with the pre-mix cheesecake filling and just mixed in the kahlua - was very yummy! But I will try your one next time.

i made... city cake shop chocolate muffins, bacon and egg pie (which turned out like this fabulous quiche type thing!) and mrs. higgins type cookies. got all recepies from you lovely people on the board and EVERYONE looooooooves coming to my house now (baked goods everywhere) and its so easy to make! wooohoo =) all i need now is a nice thick sweet chocolate frosting!

joanne01...if you want a nice creamy frosting as opposed to a rich chocolate ganache, then this is one of my favourites: Choc Frosting:
100gm dark choc, 125gm butter. 1 1/2c icing sugar, 1 tsp vanilla, 1 egg yolk. Melt choc & leave to cool slightly. Cream butter, vanilla & icing sugar together, add egg yolk and melted choc and beat till thick. This icing stays moist and fluffy. Yum.
