Hi Jaxma, some more for the book Cherry Mallow Fudge
1 Tbspn water 250gm marshmallow
¼ cup cherries
90 gm butter 8 rows chocolate

Place water, butter and marshmallow in saucepan. Cook over very low heat, stirring regularly until melted. Break chocolate into squares and add to pan. Remove from heat and stir until completely melted. Stir through cherries and pour into mix. Put in dish and allow to cool, refrigerate and cut into small squares when set.

And another Pumpkin cake with cream cheese
2 eggs
1 cup flour
¼ tsp ginger
½ cup oil
½ tsp baking soda
¼ tsp cloves
250gm cooked, mashed pumpkin
1 tsp cinnamon
1 tsp baking powder
¼ tsp salt

Blend eggs, oil, sugar and pumpkin in large bowl. Sift dry ingredients and blend into pumpkin mix with a fork. Pour into small ring mould. Elevate and cover with paper towel. Microwave on high for 5 mins and 30 secs. Remove paper towel after 4 mins. Let stand until almost cool then turn out and ice.
Frosting: 90gm cream cheese
1 ½ tsp cream or milk
60gmbutter 2 cups icing sugar
½ tsp vanilla
Combine cream cheese and butter in medium bowl. Microwave on 20% power for 1 minute or until soft but not melted. Stir in cream/milk and vanilla. Add sifted icing sugar gradually until frosting reaches spreading consistency.

this is a delicious moist cake Carrot Cake
1 ½ cups flour
1 cup brown sugar
1 ½ tsp baking soda
1 ½ tsp baking powder
¾ tsp salt tin crushed pineapple
2 tsp cinnamon
1 cup oil 3 eggs
½ cup white sugar
2 cups grated carrots

Mix flour, baking soda, baking powder, salt and cinnamon. Drain pineapple well. Stir eggs, oil, white and brown sugar into flour mix, followed by pineapple and grated carrot. Pour mix into large ring mould. Cook elevated on high power for 13-15 mins. Stand on wooden surface for 10 mins before turning out. Cool thoroughly before icing.

Ginger Cake 45g butter, 1/2C castor sugar,2 eggs, 1TBsp golden syrup, 1C SR flour, 11/2 tsp ginger,1/2C milk, 1/2tsp bicarb soda.
Oven 180, Cream butter and sugar, add eggs one at a time beat, add syrup.
Sift in flour and ginger, fold in, add combined milk and soda.
Pour into 20cm round tin and bake 40mins.
Split, spread cream and then replace top and dust with icing sugar.

weeks baking & not over yet Yesterday, I made some sultana scones(I always double the amount of flour& baking powder) in my scone recipes,as I like scones to be a decent size.I use half milk and half water to fruit scones and milk only for savoury scones.I made rice bubble squares,I used 6 cups of flour(instead of the normal 5 cups and I added another 25g butter,also another tblspoon of honey.I made pikelets and added golden syrup and halved the sugar.I am about to make(when I drag myself away from the computer and from this awesome site) choco muffins(cheating though)I have brought a pkt receipe mixture.I will add passionfruit and coffee syrup to the pkt mixture.

In a blender 6 cups grated cheese, med onion chopped...process on high until chopped fine, continue processing and add boiling water slowly until the mixture turns to a paste...spread on soft white bread, roll and toast...done.

I have an experiment baking right now. I used the orange cake recipe with the whole orange as a base, then added a little more milk and flour and sultanas to add up to a sultana cake with more flavour.

Fridge biscuits??? Hi everyone, I thought I had read a recipe on this thread that you can store the biscuits in the fridge or maybe the freezer and when you are ready to bake them you bring them out, cut them up and bake! Sounds good to me but now I can't find recipe! Can anyone help me? And how long do these last in the fridge b4 having to be baked? THANKYOU!

I have this one... Block of butter(room temp)
tin of condensed milk
3-4 cups of SR flour

Mix in mixmaster until 'biscuit' dough consistency...you may need more or less flour.
refrigerate and then form into logs. Wrap in clingwrap and put extras in freezer.
Take out a log (thaw if necessary) heat oven to 200c. Slice thin slices (5-7mm) off the log and place on tray on baking paper
Cook until lightly brown and crisp.
Add interesting things like, choc chips, cocoa, cinnamon and spices, dust with coffee crystals, make jam drops. sandwich with icing etc etc

just made some cream cheese brownies 125g dark choco, 125g butter, 2 eggs, 200g caster sugar, 1t vanilla, 75g flour, 200g cold cream cheese.
Preheat oven to 180 C.
Melt chocolate and butter, while you're waiting for it to melt beat eggs and sugar together and add vanilla. Cool chocolate mix slightly and beat in eggs and sugar. Finally add flour and beat until smooth. Pour 1/2 mix into a 23cm cake tin, and slice the cream cheese thinly and lay over the top of the mix. Pour the rest of the mix in making sure the cream cheese is covered. Bake for approx 20 mins, the top should be slightly pale but dry and the centre sticky.
I usually double the mix as I find it's not enough, and bake for about 40 mins.

Dream bars Base, 200g very soft butter, 4T muscovado sugar, 4T caster sugar, 1.5t vanilla, 250g flour. Topping: 3 eggs, 1.5t vanilla, 125g muscovado sugar, 3T s.r flour, 1/2t baking powder, 100g shredded coconut, 75g brazil nuts-roughly chopped, 75g raw, unsalted cashews. Preheat oven to 180 C. Cream butter and sugars together until light and soft. Add flour, and vanilla mixing well to combine. Tip into brownie tin and press in with fingers, bake for approx 10 mins. While cooling beat eggs with vanilla and sugar. Add flour and baking powder, folding into the mix. Fold in coconut and nuts and spread onto base. Return to oven to another 30 mins.

Passionfruit and Raspberry Muffins 2 Cups S-R Flour, 2 egg whites, 1/2 cup sugar, 1/2 cup apple sauce, 3/4 tsp baking soda, 1/4 cup passionfruit pulp, 3/4 cup frozen raspberries, 2 tbl skim milk.
Preheat oven 200*C, Coat 12 cup muffin tin with spray. Beat egg whites & sugar for 1 minute in a medium bowl, stir baking soda into apple sauce (it will froth) then add to bowl, stir in the milk. Gently fold flour into mixture all in one go. DON’T OVER MIX. Carefully fold in passionfruit pulp & raspberries. Spoon mixture into prepared muffin tin. Bake 15-20 minutes

Moist Fruit Cake 2 cups S-R flour, 3 cups mixed dried fruit, 3 egg whites, 1 cup mashed pumpkin (250g raw), ½ cup sugar, 1 cup water, 1 tsp baking soda, 1 tsp mixed spice.
Preheat oven to 180*C. Place fruit, sugar, spice & water in a saucepan, boil for 3 minutes, stir in baking soda, leave to cool. Boil or microwave pumpkin, drain and mash, leave to cool. Mix pumpkin & fruit mix together, stir in egg whites well. Fold in flour. Pour mixture into 19cm (8”) round tin coated with cooking spray & bake approx 1 hour. (Pumpkin can be replaced with kumara, same amount)

Well today I have made Snickers and Peanut butter muffins, Crunchy Muffins, Ginger Nuts, Triple chocolate chip biscuts, Mini Bacon and egg pies, and coconut ice, That should last 2 days if I am lucky...lol

My ovens been on all day... I've made, Raspberry Slice from Barloo - thanks! Afghans, 2 fruit cakes, vegemite scrolls and tonight we had a yummy apple pie which I've posted the recipe in the MB. Thank god my oven is fixed!

sure sammygirl1 I got it off here, but can't remember the name of the person
250g flour,6 T caster sugar,1.5T baking powder,6T(160g) crunchy peanut butter,60g butter-melted, 1 egg-beaten, 175ml milk, 3x65g snickers-chopped. Preheat oven to 200 C, stir together flour, sugar and baking powder. Add peanut butter and mix until it resembles coarse crumbs. Add melted butter and egg to the milk and stir this gently into the bowl. Mix in snickers and dollop into muffin cases. Cook for 20-25 mins, the tops should be risen, golden and firm to a slight touch. Watch out they are YUMMY, One jut dosent do it..lol

Pumpkin Scones 250gms butternut pumpkin, mushed, cooled
2 cups S-R flour
1 tsp b.powder
Pinch nutmeg
30gms cold butter cut in cubes
2 Tbp soft brown sugar
½ cup milk
Preheat oven to220*C. Lightly grease oven tray. Sift flour, b.powder and nutmeg into a bowl, rub in butter, and then stir in the sugar. Make a well in the centre; add pumpkin and milk with a knife, using a cutting motion, until dough comes together in clumps. Lift onto floured surface. Pat the dough out to a 2cm thickness but don’t knead dough or the scones will be tough. Using a 6cm cutter, cut into rounds. Place the scones close together on the oven tray. Bake for 12-15mins, or until lightly golden on top

Just have to share (rocky road) This is the most divine recipe. My sis makes it. It dosen't go hard when it sets. Just melts in the mouth. 1 packet of dark chocolate melts (nestle) 75 gm butter half a tin of sweetened condensed milk 1 packet of marshmallows (pascals) 70 gm of cashew nuts (you can buy them in a packet in the cooking section at the supermarket, non salted) Melt together in a heavy based saucepan over a gentle heat. Cool slightly then add 1 packet of marshmallows chopped in half and the 70 gm of cashews chopped in half. The mix may separate when you are heating it but just keep beating it and it will reconstitute. May take a while though. Good luck and happy eating.

Macadamia Nut Slice 1c self raising flour, 2c coconut, 1 c brown sugar, 125g melted butter, 1 tin cond milk, 6 Tblsp golden syrup, 30g butter, 100g macadamia nuts chopped, dark chocolate for decoration. Heat oven to 180C, mix flour, coconut, b sugar with melted butter in food processor. Press into slice tin, bake for 10 min. In a pot combine cond milk, g syrup, & 30g butter, stir on low heat until boiling, reduce heat and stir for 5 min, spread over base. Press in chopped macad nuts. Bake a further 5-8 min. When cold drizzle with melted choc.

Snickerdoodles 250g butter, 1 1/2c sugar, 2 eggs, 2 3/4c flour, 2 tsp cream of tartar, 1 tsp b soda, ¼ tsp salt. Topping; mix tog 2 Tblsp sugar & 1 tsp cinnamon – you may need to make more of this. Heat oven to 200C, mix tog butter, sugar and eggs, blend in flour, cream of tartar B soda and salt. Shape into balls and roll in topping. Leave to spread on the tray, bake for 8 to 10 minutes.

Aunty Nannettes Caramello Slice 150g butter, ½ tin cond milk, 250g bar of caramello chocolate, 1 pkt arrowroot or similar biscuit. Melt butter, cond milk and chocolate together over low heat, blend in crushed biscuits. Press in slice tin and sprinkle with coconut. Never lasts long and you can substitute caramello for any other chocolate flavour.

Aussie Spiders 1 pkt dried cooked noodles, 1 Tblsp peanut butter, 180g chocolate. Melt chocolate and peanut butter together over a low heat. Stir in the dried noodles, spoon onto baking baking paper and let set. Great for kids parties.

Jelly Slice 170g butter, 1pkt wine biscuits – melt butter and stir in crushed biscuits, press into slice tin and let cool. 1 Tblsp gelatine ( remove 1 tsp of this & set aside), ½ c hot water to dissolve gelatine. Add 1 tin cond milk and juice of 1 lemon. Pour gently over biscuit base. Let it set before pouring over the following. 1 pkt of your fav jelly (we use raspberry) made with not quite all the water suggested on back of pack and add the 1 tsp of gelatine (this thickens the jelly). VERY carefully pour over the cond milk layer. Let set then cut. Keep in fridge.

Mums Fruit Cake Heat oven to 350F. Boil 1 pound of fruit (I only use sultanas), sieve fruit and rinse under warm water, put fruit back in the pot with ½ pound of butter, stir until melted, remove from heat. Beat 3 eggs, 250grams sugar and 1 tsp vanilla ess, stir into the fruit. Sieve together 10oz flour and 1 tsp BP stir into the mixture. Pour into a cake tin, turn oven down to 300F and cook for ½ to 1 hour – keep an eye on it. Sorry about the measurements I keep meaning to alter all to grams.

Chocolate Fudge 125g butter, 2 Tbslp golden syrup, 1 tin cond milk, 1 c brown sugar. Melt in a pot on low heat. Bring to boil and simmer gently for 20 minutes – stirring. Remove from heat and add about 120g chocolate melts, beat til smooth. I use my cake mixer for this. Yummy…

Melting Moments 180g butter, 1/3c icing sugar, 1 tsp vanilla, 1/3c cornflour, 1c flour. Soften the butter and cream together with the icing sugar and vanilla. When thick and creamy add the sifted cornflour and flour, mix together. Roll into balls and press with a wet fork, bake 180C for 15 minutes. When cool ice together with 50g butter, ½ cup icing sugar and 2 tsp milk. Put rasp jam on one biscuit and icing on the other then join together.

Now for some savoury - Hummus 2cups cooked chick peas (1 cup raw peas soaked over night, then cooked for 45 minutes), 4-5 Tblsp of cooking liquid from peas, 4-6 gloves of garlic, juice from ½ a lemon, 1 tsp salt and grind of pepper, 3 ¼ c chopped parsley, ½ cup tahini, a handful of sun dried tomatoes, a splash of olive oil. Mix all together in a food processor, keeps well in fridge – if it gets a chance!!

And Tomato Pesto 1 can tomatoes, 3 Tblsp olive oil, 4 gloves of garlic, salt and pepper, cook slowly in pot for an hour. Add 1 tsp oregano and 1 cup of sun dried tomatoes. Whiz together in a food processor. Store in the fridge. Yummy with bread stick and cheeses.

Vals Chocolate Fudge Cake 225g butter, 1c sugar, 1c coconut, 2 dsp cocoa, 2 dsp golden syrup, melt gently in a pot, when all just melted and NOT boiling add 1 tsp vanilla ess, 2c flour and 2 tsp BP, blend until just mixed and cook in sponge roll tin 150C for 12 to 15 minutes. Ice with chocolate icing.

Jenny’s Shortbread 225g butter, 1c icing sugar, 2c flour, pinch salt, 1/2c cornflour. Cream butter, icing sugar and salt. Add flour, cornflour and salt. Beat in cake mixer until mixture balls together, Roll into a cylinder and cut. Prick biscuits with a fork and cook 30 mins at 150C.

Wow 3000....Cinnamon Oysters 4 eggs, 1 dsp warmed golden syrup, 6 Tblsp sugar – beat together until very thick and creamy in a cake mixer, fold in the following ingredients. 4 large Tblsp flour, 1 tsp BP, pinch salt, 2tsp cinnamon and 2tsp ginger. Put in well greased deep patty or cinnamon oyster tins and cook 8-10 min at 180C. Halve and fill with whipped cream when cold, sprinkle with icing sugar.
