been busy today I made nut pies x 36 small and 1 large, 60 pizza scrolls for lunches and 8 loaves of bread. Just like little house on the prairie!!!! Also a big pot of soup and for dinner we had hollowed out bread rolls filled with spaghetti, ham, bacon, pineapple and cheese and then baked till hot. Hmmmm

Yum Re message 23 bigeyze. Made this slice on Monday it is so nice. Also my husband & I are retired and I make cakes/biscuits each week, just love having them for grandchildren, our own children loved home made anything. It is even nice to pass some on to friends to have with a cuppa. Anyway it makes me feel good.

Last week I did a carrot sice... Very yummy and simple,,,, Also a few weeks ago did a passion Mallow slice using my homemade passionfruit pulp. One can get passionfruit pulp at most stores. So to add to this great threwad are the following two recipes...

Chocolate carrot Slice 1 cup self-raising flour,1 tsp ground cinnamon,3/4 cup caster sugar, ½ cup grated carrot, 1 cup mixed dried fruit, ½ cup choc bits, 1/3 cup desiccated coconut, 2 eggs lightly beaten, 90g unsalted butter melted, 1/3 cup chopped walnuts. CREAM CHEESE FROSTING; 125g cream cheese, 30g unsalted butter, 1 ½ cups icing sugar, 1 tsp holt water. Preheat oven 180c, lightly greased a 23cm square shallow cake tin and lined with baking paper overhanging two opposite sides. Sift the flour and cinnamon into a large mixing bowl, add the sugar, grated carrot, mixed fruit, choc bits and coconut and stir until just combined, add the beaten eggs and butter, stir until the mixture is just combined. Spread the mixture evenly into the prepared tin and smooth the surface.

Cont...Final bit Bake for 30 minutes or until golden. Leave to cool and then turn out. To make the cream cheese frosting, beat the cream cheese and butter with electric beaters in a small bowl until smooth add the icing sugar and beat for 2 minutes or until it is light and fluffy. Add the water and beat until combined. Using a flat-bladed knife spread the frosting on top of the slice and sprinkle with walnuts. Cut into 16 squares then cut each square into triangles. HINT; instead of using walnuts, sprinkle frosting with grated chocolate if desired. This is exceptional.

Passion Mallow Slice 150g Butter, ¼ cup caster sugar, ½ tsp vanilla essence, 1 cup plain flour, ½ cup self-raising flour. MARSHMALLOW TOPPING; ½ cup passionfruit pulp ( or 5-6 passionfruit ), 250g white marshmallows, ½ cup milk, 2 tblsp caster sugar, 2 tsp lemon juice, 1 ¼ cups cream lightly whipped. Preheat oven to 180c, lightly greased an 18cm x 28cm shallow tin and line with baking paper overhanging two opposite sides. Using electric beaters beat the butter and sugar in a mixing bowl until light and creamy and the sugar has dissolved, stir in the vanilla essence. Sift the flours into a bowl then fold into the butter mixture and mix to a soft dough. Knead gently to bring together.

Cont....Final bit Press the dough into the prepared tin and smooth with the back of a spoon. Lightly prick the dough and bake for 25 minutes or until golden. Remove from oven and cool completely. To make the topping, put the passionfruit, marshmallows, milk and sugar in a pan and stir over low heat until the marshmallows have melted. Stir in the lemon juice and transfer to a bowl to cool, Refrigerate, stirring occasionally for 30 minutes or until slightly thickened. Quickly fold in the cream so the marshmallow dosen’t set then pour over the slice and refrigerate overnight or until set. Cut into squares to serve.

tonite i've just finished making... Apricot & Ginger Bran Biscuits:
125gms butter,1/2 c brown sugar,1 egg, 1 c plain flour, pinch salt, 1 tbls ground ginger, 1 tsp b. powder, 1 c bran flakes, 1 c wholemeal flour, 1/2 c chopped dried apricots.Preheat oven to 190, Cream butter and sugar. Beat in egg. Mix in remaining ingredients. Roll into balls, place on greased oven tray. Press down with a fork. Bake in preheated oven for 12-15 minutes. Makes about 30

Belgium Biscuits with a difference.. a friend told me of this.. digestive biscuits(i use fruit digestive ones) jam together with strawberry jam (or your preference)then ice the top and sprinkle with strawberry jelly chrystals. One packet of digestive biscuits makes 10 belgium bikkies

diabetic mud cake A variation on the WW mud cake. Dry ingredients: 2c flour, 2t baking powder, 1/2c cocoa powder, 1-3/4c Splenda. Beat together until smooth: 200g skim plain yogurt, 3 eggs, 1t vanilla essence, 300ml lukewarm water. Add wet to dry ingredients & beat well. Line the bottom a 20cm cake tin with baking paper, then spray lightly with oil. Pour in batter & bake in preheated 160C oven for 35-40min. Invert the cake onto a platter (with paper on it), leave the bottom paper stuck on, cover with a tea towel, & cool. I made a ganache of 3 35g sugar-free choc bars (2 orange-flavoured & 1 plain dark) melted with a few tablespoons of cream, which was enough to ice the top but not the sides.

persimmon bread Dry: 1-3/4c flour, 1/2t salt, 1/2c brown sugar, 3/4c white sugar (or use all white), 2t baking soda. Wet: 1-1/4c pureed overripe persimmon pulp, 2T oil, 2 beaten eggs, 1t cinnamon, 1/4t nutmeg, pinch each cloves & mace. 1/2c chopped nuts (optional). Mix dry ingredients, mix wet ingredients, stir dry into wet, fold in nuts if desired. Bake in papered loaf tin for 55-60 minutes. Cool on rack.

Walnut and apricot loaf Walnut and apricot loaf: 2Tbsp melted butter, 3/4 cup sugar, 1 egg,3/4 cup milk, 2tsp baking powder, 1/2 tsp baking soda, 1/2 cup walnuts,1cup chopped dried apricots which have been soaked 1/2 hr in boiling water and drained. Shortcake Apple shortcake(or stewed apricots are nice too)I cook peeled chopped apple in microwave on high stirring every few minutes. when its nearly cooked I add sugar to taste-depends on apple sourness.Finish cooking and allow to cool.

Shortcake 250gm butter, 1 cup sugar, 1 egg, 4 cups flour, 3 tsp baking powder, 3/4 cup milk. Cream butter and sugar, add egg, then other ingreds. Turn out onto bench and knead in extra flour until it can be rolled out. Can be folded and unfolded to get it into the tin. Makes an oven tray full. 180deg 20-30minFreezes well

Choc square Raspberry chocolate square. 250gm butter,3/4 cup sugar, 1egg, 1Tbsp golden syrup,1 1/4 cup flour, 1/2 tsp baking powder, 1Tbsp cocoa.
Cream butter & sug, add egg & syrup, then dry ingreds.Press into swiss roll tin and spread with raspberry jam. Bake 170deg for 15 mins. Ice with chocolate icing

Egg yolk sponge Egg yolk sponge- this is a good way to use yolks if you have made a pav. Beat4 egg yolks with 2Tbsp hot water.Grad add 1/2 cup caster sugar, beat until dissolved.Fold in 1/2 cup flour & 1/2 tsp cream of tartar mixed together. Dissolve 1/2 tsp baking soda in 2 Tbsp hot milk and fold into mixture.
line a swiss roll tin with baking paper- spread mixture into it. Bake 180deg for 20min or when springs back when touched. This freezes well. I usually cover it with fruit-strawberries or tinned peaches are good then pour over an almost set jelly. looks classy if decorated with whipped cream squirted on with a forcer bag or plastic bag with a corner cut off

can't visualise - it's frustrating! I find it really hard to visualise what the results of the recipes will be like! If you guys have some photos to share, that would really help. I've just found somewhere you can put good size photos and the recipe for what you've made together, and run a discussion with your mates at the same time. There's a new Food Community Board on www.kiwifamilies.co.nz and it's much easier to follow!

Lining up for book 3 - a few more recipes Rocky Road
375gm choc. melts
1 Tbspn kremalta
½ cup mixed roasted nuts
2 Tbspn coconut glace cherries 2 180gm pkts marshmallows

Line sponge roll tin with foil and spray with oil. Melt choc and kremelta together and stir until smooth. Spread ½ the mix over the base and spread with coconut, nuts, cherries and marshmallow. Drizzle remaining melted choc over and refrigerate
