Mitzi, just a question about 5 cup cake Does it need butter or eggs? and what about baking pwd? seems strange making a cake without those ingrediants??? Have whipped one up and have it in the oven. Will see how it goes.

5 cup cake is just what it is. I also started making it because I was intrigued - it was a reader's recipe from Family Circle. I always get asked for the recipe if I take it as a plate.(maybe the original recipe was s/r flour?!!)

Armenian Yoghurt Spice Cake this is a really nice moist cake with crunchy topping instead of icing.

Sift 225gm flour, 1 1/2 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg, 2tsp bp, 1/2 tsp salt, 1 tsp baking soda into large bowl. In another bowl break 3 large eggs, add 250gm brown sugar and whisk well. Add 1tsp vanilla ess, 6T melted butter, and 250ml plain yoghurt - mix till well blended. Pour liquid mix into flour mixture and mix well. Bake 160 C for about 40mins or until cooked. Cool.
Topping: Meanwhile mix 50gm coconut, 50gm chopped walnuts, 110gm brown sugar, 60ml cream, 3tblespn melted butter, melted.
When cake is cool, spread topping mix thickly over it. Place cake under hot grill 2-3 mins or until topping is golden - don't let it burn!
Leave to cool. Note: recipe calls for clarified butter but I usually make it with normal butter.

storing baking This depends on what it is you ant to keep kiwifruit29. Most biscuits would keep several days in an airtight container. I freeze biscuits in ziplock bags. They don't take long to thaw. Cakes are quite different. moist cakes will last a few days but need to be keep cool and dry in an airtight container as well. Cakes like a sponge cake will be stale in a day. then of course you can use it for trifle!!! If the baking is creamed, it needs to be kept refrigerated. Icing freezes fine too. Biscuit based slices store for quite a while.

Oaty Apple Loaf 125g butter,1t mixed spice,1/2 t cinnamon,1 c brown sugar,2 apples grated,1 c sultanas,1 c water,1 t b.soda,2 eggs beaten,1 c rolled oats,1 1/2 c flour,2 t b.powder.Put butter,spice cinnamon,sugar,apples,sultanas-
and water into saucepan and bring to the boil stirring occasionally. Remove from heat and allow to cool then add soda, beat in the eggs and rolled oats. Sift flour and b.powder into the mixture and stir to combine. Put mixture into greased loaf tin and bake at 180oc for 45 minutes. Leave in tin for 10 mins before turning out onto a wire rack

Pineapple Fruit Cake This recipe makes a lovely moist fruit cake.
Place 125g butter, 1 c sugar, 500g crushed pineapple, 500g mixed fruit, 1 tsp baking soda, and 1 tsp mixed spice in a large saucepan. Bring to boil, stirring constantly. Lower heat and simmer 3 minutes.
Remove from heat, leave to cool. Beat 2 eggs and sift 1 c selfraising flour, 1 c plain flour into fruit mixture. Ring tin 165 C 1 1/2 - 2 hours.

Chocolate Mud Slice 1/3-cup cocoa
1/3-cup hot water
150g dark chocolate, melted
150g reduced fat butter, melted
1¼-cup brown sugar
100g ground almonds
4 eggs, separated
2 tablespoons icing sugar, sifted
Preheat oven to 160°C. Spray a 20cm square cake tin with cooking spray.
In a large bowl combine the cocoa and water. Stir until smooth. Add the chocolate, butter, sugar and almonds. Stir in the egg yolks one at a time.
Beat the egg whites with an electric mixer until soft peaks form. Gently fold into the chocolate mixture.
Pour into the prepared tin and bake in the oven for about 1¼ hours or until firm. Remove cake from pan and dust with the icing sugar.

Earthquake Biscuits 200grams milk chocolate
9teaspoon WW spread
½ cup caster sugar
3 eggs, lightly beaten
1teaspoon vanilla extract
1 ¾ cups plain flour
4tablespoons cocoa powder
½ teaspoon baking powder
Place the chocolate and butter in a bowl over a pan of simmering water, until melted.Remove from heat and stir in sugar.Add eggs and beat well, then stir in vanilla.In another bowl sift flour, cocoa and baking powder.
Add chocolate mix and stir well.
Cover with plastic wrap and refrigerate for 1hour.Preheat oven to 160* and line a baking tray with baking paper.Form heaped teaspoon into balls and place on tray 2.5cm apart.Bake for 10-15 minutes or until tops have cracked.
They will be soft when they first come out of the oven but will harden slightly on cooling.

Mini Mud Cakes 175g weight watchers spread
3/4 cup brown sugar
¼ cup cocoa powder
3 eggs, lightly beaten
1&½ cups self-raising flour
½ cup weight watchers milk
Spray a 12-hole muffin tin with cooking spray.
Pre heat oven to 180*.
Cream butter, sugar and eggs.
When combined add cocoa, combining well.
Add flour and milk.
Combine well, and then divide evenly between muffin holes.
Cook for 20 minutes or until firm to the touch

Kit Kat Slice 2 x 65g Caramel Kit Kat Chunky, chopped roughly
60g Weightwatcher canola spread
1 tablespoon golden syrup
3 cups Rice Bubbles
120g cooking chocolate, melted
Coat a 19 x 30 cm slice tray with cooking spray.
In a large saucepan over medium heat melt the Kit Kats, spread and golden syrup.
Stir in rice bubbles until well coated. Press into the base of the tray. Place in refrigerator until set.
When slice is cold spread the melted chocolate over the top and refrigerate until set. Cut into 15 pieces.

Individual Choc-mint cheesecake 250g low fat smooth ricotta cheese
2 tablespoons Splenda artificial sweetener
½ cup extra-light sour cream
¼ cup diet chocolate topping
1 ½ teaspoon gelatine combined with 2 tablespoons hot water
6 Arnott's Mint Slice biscuits
Line a deep 6-hole muffin pan with plastic wrap. In a medium mixing bowl beat the ricotta cheese, Splenda, sour cream and topping.
Stir in the combined gelatine and water.

Choc-mint cheesecake cont. Pour 6 equal amounts of the mixture into the prepared muffin tin and top with a Mint Slice biscuit. Cover with foil and refrigerate for 2-3 hours or until set. Invert onto serving plates and top with fresh raspberries if desired

M&M Cookies 1 ¼ Cups sugar
1 ¼ cups M&Ms
2 cups flour
½ tsp b. powder
½ tsp b. soda
½ cup butter, melted
1 egg, lightly beaten
1 tsp vanilla
Mix dry ingredients in a bowl. Combine wet ingredients and then add to dry ingredients. Shape into balls the size of a walnut and place 2 inches apart on a sprayed baking sheet. Bake at 180 for12 to 14 minutes, until edges are lightly browned.

Allsorts Cake 1 family packet of licorice allsorts
1 packet malt biscuits crushed
½ can condensed milk(double quanities to use whole tin)
coconut
100gms butter.

Melt together condensed milk and butter. Mix in crushed biscuits and finally add licorice allsorts. Shape mixture into 2 logs, roll in coconut and cool in fridge. Once cooled cut into slices

Lemon Muffins with cream cheese 2 cups self raising flour, 3/4 cup White Sugar, grated rind of 1 lemon, 1 egg 1 cup milk, 60g butter – melted. Mix flour and sugar together. Beat egg, milk and lemon rind together then add to dry ingredients. Add melted butter and stir until just mixed. Fill the tins 2/3 fill top with a tsp of cream cheese and top with more mix bake for 15-20 minutes 200 degrees c. Optional, while they are cooking mix 1/3 cup lemon juice, 1/3 cup White Sugar together. As soon as the muffins are cooked take out of the oven and spoon over the lemon/sugar mix until it is all gone. Leave the muffins to sit in the muffin tin for approx. 3 minutes before taking out

passionfruit muffins Whiskey, I used your recipe for the lemon cream cheese muffins but put passionfruit in instead. Made into 12 muffins and sprinkled a little white sugar over the top before baking. They were lovely just out of the oven but oddly enough, better the next day!! Thanks

Cheese Biscuits, Jelly Biscuits (from this thread - ta! and they're lime ones, hehe) and a chocolate brownie. Now lets see how long it lasts!

from the Caramello bar thread, a good one 125 grams butter 2 eggs 1 C flour 3/4 C dates or sultanas 3/4 C brown sugar 1 tsp vanilla 1 tsp Baking Powder 1 big size (150grm) Caramello chocolate Melt the butter and sugar, Add beaten eggs and stir well, add rest of ingredients except for the chocolate. Mix then spread half of the mixture into a swiss roll tin. Break up the chocolate into 24 squares and place evenly 4 rows of 6 on base. Spread remaining mixture over the top, carefully covering all the chocolate. Make moderate oven for 20 - 30 minutes. Cut into squares when cold

Munchies 1 teaspoon baking soda, 3 tablespoons boiling water,250g butter, 2 tablespoons golden syrup,1 cup flour, 1 cup sugar, 2 cups rolled oats, 1 cup coconut, 1tsp salt, 2 tablespoons milk powder.

Dissolve baking soda in boiling water. Melt butter and golden syrup. Mix all together and pour into dry ingredients. Mix well and place in teaspoon lots on a greased tray. Flatten slightly. Bake slowly at 150C for 15-20 minutes.
(Makes heaps)

These are just a few I have for you Cheese Puffs:1 cup grated cheese
1 cup Eclipse Plain Flour
1 egg,1 teaspoon baking powder,3/4 cup milk
Beat egg & milk together & add cheese flour & baking powder. Put spoonfuls into greased patty tins. Bake at 200'C for 10-15 minutes or until golden brown.
Cheese Scones:
3 cups Eclipse Plain Flour
1/2 teaspoon salt
6-8 tablespoon cheese
3 teaspoon baking powder
pinch cayenne pepper
1 1/4 cup milk
sift dry ingredients then add cheese & blend to a light soft dough with the milk. Place on a floured board & roll out & cut. Place on a cold tray & bake at 215'C for 10-12 minutes.

Still going... Lemonade Scones
4 cups self-raising flour
300mls cream ( 1 carton or small bottle)
1 can lemonade (355mls)
1/2 teaspoon salt
Mix all ingredients in a smooth dough. Tip out onto well-floured surface & cut into squares or press out with a scone cutter. Bake at 220c Fan Bake, if you have it) For about 15-20 mins until starting to colour golden. Check they are cooked through & cool on a wire rack. Serve warm with jam or fruit preserves & whipped cream.

Cheese Plait:

Sift 1 cup flour
2 tsp baking powder
¼ salt
pinch cayenne pepper
Cut in 1 tbl butter
Add 1 cup grated cheese and mix to a soft dough with
1/3 cup milk.
Divide mixture in three and roll into strips.
Plait strips
Bake at 200oC for 20 minutes.

gosh i'm glad i'm not the only one! This is scarey but i have been workn as a bakers assistant for a year now and everyone at work used to say to me that i would stop home baknig. Ha Ha i go to work and do a 9 hour shift and then come home and bake for the kids lunches for the week! I'm either really sick or love baking! Trouble is i have to print all these awesome recipes and i'm nearly outa ink! Thanks great thread.

CHOCOLATE CRUNCH i am pretty sure i havn't seen it on here but with so many recipies i'm not 100%.2C Flour,2C Brown Sugar,2C Coconut,2C Sultanas, 2C Cornflakes, 2tsp Baking Powder, 4Tbsp Cocoa, 300 grms Butter. Mix all dry ingrediants in a bowl. Melt butter and add to ingrediants. Turn into tin & bake 20 mins 180*. Ice when hot cut when cold.
This is an old favorite of our family although we havn't had it for a while been to busy with recipies off here.

Rich Chocolate Cake I make this a lot, it's from a Family Circle cookbook.
Cream 125g butter & 1 c càstor sugar, add 2 eggs & 1tsp vanilla essence. Fold in sifted dry ingredients alternately with 3/4 c buttermilk.(1 c plain flour, 3/4 selfrising flour,1 tsp bicarb soda, 1/2 c cocoa powder).
Stir till smooth & combined.
