151 | German Pumpernickel Bread 3 cups wholemeal flour, 1 cup rye flour, 1/2 cup mashed potato, 2 cups hot water, 2 tsp caraway seeds, 1 tbsp salt, 3 tbsp polenta, 3 tbsp bran, 3 tbsp molasses, 2 tbsp kibbled rye, 1 tbsp Surebake yeast, 1 egg beaten for glazing. Place all the dry ingredients in a bowl, stir together then add the hot water. Mix to a sticky dough and knead well, using only as much flour as necessary to handle the dough. Since the dough is naturally sticky, avoid adding too much flour while kneading. When the dough is smooth, shape it into a round ball and place in a greased bowl. Cover and allow to rise about 2 hours in a warm place. Push the dough down with your hand, then remove the dough from the bowl and knead briefly. Shape the dough into a round ball and place on a baking paper lined tray, or place in a greased loaf tin. Cover and rise in a warm place till doubled in size. Brush with the beaten egg. 162 | bumping for carlnsue Cliff Have you taken into account that the recipes in the breville manual use the australian tablespoon which is 20 ml not 15 ml like the NZ tablespoon. Also if you use surebake yeast and high grade flour you can eget better results. (It is 1 teaspoon of surebake yeast per cup of high grade flour. The surebake yeast has the bread improvers in that a lot of the Australian recipes have listed in their ingredients. 166 | I tried putting the breadmaker on French the other day and it seemed to work ok. I have been using the Aussie book and was using the 20ml tablespoon. I haven't attempeted making another loaf on the basic setting yet - Korbo gave me a recipe to try. Hi Erin.. a friend uses Spelt flour for all her bread.. she tried many recipes in her bread maker and couldn't find one that didn't give a heavy, solid type of loaf. She ended up mixing spelt flour with - I think - rice flour, and also added things like grated carrot.. and found she got a better result.. She's overseas so I can't check with her.. 186 | A quick "bread" that's good with soups. Make a scone dough, adding 1 tsp mustard and lots of grated cheese to the dry ingredients before adding the milk. Once mixed, press the dough out till about 2cm thick, on baking paper lined tray, and sprinkle with grated cheese and some sunflower, sesame or pumpkin seeds (or a mix of the three) and/or rolled oats etc. Bake at scone temp until golden and cooked through. 189 | Hi Rose.. check out my recipes on the first page of this thread.. they can easily be adapted to a multi grain dough and baked as per the recipe's.. Use 1 cup multi-grain mix and about 5 cups of white flour (or you could replace one cup of the white flour with wholemeal flour) in any of those recipes.. this will give a similar result to a Molenberg loaf.. 194 | cliff609 Probably too late but I have the same bread maker and havent used for a long time, decided to get into it again - the first two even the birds wouldnt eat them, then rememebered I replaced one cup of flour with wholemeal flour and I add extra small amount of water, check to see it's not too dry and sticking to the sides. 198 | Freya's classic seed I'm getting the texture right, but still can't get teh poppy seeds to stick and can't get the distinctive poopy seed flavour. I've found the best texture for me so far is 1C wholemeal to 2 1/2 cups white and 1/2C oat bran. I make the dough in the breadmaker, then rise the dough in a bread pan and bake at 200C for 35 minutes. I also replace kibbled wheat with bulgher wheat for a lighter texture.
