I like fresh vege soups, with not too many flavours ...to mix up the taste of the fresh veges & that met the brief, but you could add whatever takes your fancy.
I also do a spinach/bacon garlic etc it's a 'wing it' type recipe, so I can't give exact amounts ...heaps of spinach & various compatible herbs/spices & a roux type sauce ...pretty good as well.

This is another absolute favourite for me, but it's not to everyone's taste.
It's earthy & mildly nutty ...hard o actually describe the flavour, but I love it, even if it is called 'fartichoke' soup.

That looks very nice as you noted, wondered about artichokes as I saw them in a local shop and thought - Hmmmmm.

Also this soup other than the stock also (the artichokes) could be eaten raw. Cheers.

Jerusalem artichokes are so easy to grow ...just make sure you plant them where it doesn't matter if they spread ...cos they sure do.
I planted 5 only (bought from the supermarket & now have a very productive patch.

Thai coconut and veg broth .....easy and tasty!

I don't use chinese cabbage, but add a few sliced mushrooms, broccoli, sliced pepper. I add a very finely chopped kaffier lime leaf, and also a bit of grated fresh ginger and whilst simmering add a lemon grass stalk, which I remove before serving . I suppose you could add any veggies in the fridge, as long as they are finely chopped cut

2 Tbsp Thai red curry paste
1 tsp vegetable oil
1l vegetable stock
400ml can coconut milk
2 tsp brown sugar
175g medium egg noodles
2 carrots, cut into matchsticks
½ head Chinese leaf, sliced
½ x 300g bag beansprouts
6 cherry tomatoes, halved
juice 1 lime
3 spring onion, halved, then finely sliced lengthways
handful coriander, roughly chopped

Place the curry paste in a large saucepan or wok with the oil. Fry for 1 min until fragrant. Tip in the vegetable stock, coconut milk and brown sugar. Simmer for 3 mins.
Add the noodles, carrots and Chinese leaf and simmer for 4-6 mins, until all are tender. Mix in beansprouts and tomatoes. Add lime juice to taste and some extra seasoning, if you like. Spoon into bowls and sprinkle with spring onions and coriander.

I make a lot of soup but don't use recipes. Love the earthy taste of beetroot combined with the sweet taste of parsnips so this is one of my favs;

Parsnip & Beetroot soup

Saute a chopped onion together with as much garlic as liked.
add 3 large chopped parsnip
2 medium chopped beetroot
Almost cover with water and simmer til cooked.

Strain water off into a microwave jug & add 3 heaped tsp chicken & or vege stock. Then microwave & thicken with 3 tsp cornflour.

Add 2oz butter to veges & mash adding extra milk as needed
Puree the lot together. Serve with blob of sour cream or plain cream.
Simple, quick, easy & delicious.

leeran, love the use of Beetroot, it is one of the "Super - Vege - Food" item.

I quite often just eat grated raw beetroot with grated raw carrot with at times a raw Kale with a mustard dressing with an avocado thrown in for good measure but that is slightly off topic, lol.

I do love beetroot in soups, and yours is a must try.

This is actually a Soup and is one of my all time favourites especially with International Students...

Chicken Laska This recipe won a competition!

1T oil, 500gm chopped chicken, 1T minced ginger, 1 clove garlic, chopped, 1 red chilli, finely chopped ( for a milder soup, remove seeds. I use chilli in a jar as don't like things too hot) 1 1/2t coriander, 400mls coconut cream, 3cups chicken stock, 2T fish sauce, 300g thin egg noodles, precooked, 2-3 spring onions, salt & black pepper.

(Note; I use an onion chopped instead of Spring onions and added when adding ginger, garlic etc etc…)

Heat oil, add chicken & fry till cooked. Add ginger, garlic & chilli, cook 1 minute. Add coriander, cook 1 minute then add coco cream, stock, sauce, noodles & onions.
Simmer for few minutes, season.

One or two Jerusalem artichokes grated into most soups is brilliant.

Heh, I once sent one of mine out to the garden to get one and he came back with a dahlia root. Still a family joke.
