168 | sultana cake This recipe requires you to boil 500gm sultanas for about 10 minutes, strain then add 250gm butter (cut into cubes) Put lid back on saucepan and leave to the side to melt. In the meantime beat three eggs and 1 1/2 cups sugar together until light and creamy. Add melted butter and sultana mix, about 1/2 tsp lemon or orange essence plus 1/2 tsp vanilla essence, then stir in 2 1/2 cups flour that has been sifted with a heaped tsp of baking powder. Line your cake tin with foil taking care to square the corners, add the mixture and bake at 170 for about an hour. Check with skewer and adjust your time accordingly. Cool in the tin once cooked. 184 | cardamom cake for earlier request Cream 185g butter & 3/4C firm packed brown sugar until light and fluffy.. beat in 2 eggs one @ a time & until well combined. Stir in 1C SR flour.. 2t ground cardamom..1/4C ground almonds..& 1/2C milk combined with 1/2C golden syrup..then stir in another 1C Sraising flour. 192 | Layered Passionfruit torte 6 Eggs separated, ¾ cup icing sugar, ½ cup sugar, ½ teaspoon Vanilla essence, ½ cup cornflour, 1 ½ teaspoons baking powder and ¼ cup of plain flour. FILLING:- 1 tablespoon lemon juice, 1 tablespoon gelatine, pulp of 10 passionfruit, 500g cream cheese, 1 ½ cups sifted icing sugar, ¾ cup cream lightly whipped, ½ cup of cream extra whipped to stiff peaks, pulp of 2 passionfruit extra, ¼ cup roasted almonds or pistachios chopped. Preheat the oven to 180c. Lightly greased two shallow 23cm round cake tins and line the bases with baking paper. Place the egg whites in a large dry mixing bowl beat with electric beaters until stiff peaks form. Add the sugar gradually beating until all the sugar has dissolved and mixture is thick and glossy. 195 | Chocolate Mud Cake..A very nice version 250g unsalted butter, 250g dark chocolate chopped, 2 tablespoons instant coffee powder, 150g self-raising flour, 150g plain flour, ½ teaspoon bicarbonate of soda, ½ cup cocoa powder, 2 ¼ cups castor sugar, 4 eggs lightly beaten, 2 tablespoons oil, ½ cup of buttermilk. ICING:- 150g unsalted butter and 150g dark chocolate chopped. Preheat the oven to 160c. lightly grease a deep 22cm round cake tin and line with baking paper making sure the paper around the side extends at least 5cm above the top edge. Put the butter, chocolate and coffee in a saucepan with ¾ cup hot water and stir over low heat until smooth, remove from the heat. Sift the flours, soda, and cocoa into a large mixing bowl. Pour over the cake and allow it to run down the side. Remove from the heat and sit the chocolate in a heatproof bowl over the pan making sure it is not touching the water, stir occasionally until melted. Put the eggs in a large heatproof bowl and add the Frangelico or brandy.
