Gingerbread Men Cream 1/2lb butter with 1lb brown sugar, add 2 eggs, 4Tbs golden syrup, 4C flour, 4tsp ginger, 2tsp baking powder. Roll out thinly, cut out with a 'gingerbread man' cutter. Bake 5-10 min at 350deg F .... Use currants for eyes, mouth, etc or pipe with icing... This is from an old cookbook so hope you can understand quantities alright.

gingerbread men :) 1 1/2C white sugar, 3C flour, 1tsp baking soda, 2tsp ground ginger, 150g butter, 4tbsp golden syrup, 1 egg. ... Put dry ingredients in a bowl. warm butter and golden syrup, let cool, add lightly beaten egg. Add liquid ingredients to the dry ones,mix well, knead until smooth. roll out 1cm thick (approx) cut with cutters, bake at 190*C 10-15 mins or until golden. ... just set fire to my weetbix slice :-( also do you chill the gingerbread before rolling out? I had to add extra egg to our gingerbread mix, but then i'd given it to the kids to knead and roll out!

copied from earlier thread GINGER CRUNCH - Cream together: 125gms butter, 1/2 cup sugar, 1 tbsp golden syrup. Add 1 egg, 1 & 1/2 cups flour, 2 weetbix-crushed, 2 tsp ginger, 1 tsp baking powder. Mix well, press into tin & bake 180*C approx 30 minutes. Icing: 75 gms butter, 1 cup icing sugar, 2 tbsp golden syrup, 1 tbsp ginger. Warm mix in pot, stir until smooth. Pour over hot base when comes out of oven.

Brianmac, For your Coconut Slice, you mentioned the Topping. You didn't give the amount of eggs, sugar and coconut to use for it? Can you please clarify this for me? Many thanks.

brianmac see above. Also, can someone tell me how long these threads stay on the message board for. I noticed that the recipes go back to the 20th November (for the oldest one) so thought it must have been a week, but when I checked out the "General" messages, the oldest one there only went back to about the 23rd.

No! No! No! If they don't get 'bumped' or have anything 'added to them' how long do they stay on for. I don't want to 'bump' if it is not necessary....BUT.....I have noticed that recipes go back a whole week if they haven't been 'bumped' or 'added to'.....BUT.....in the "General" thread they only go back 3 or 4 days. I would hate to miss out on a recipe I wanted because I haven't bumped & the thread disappears before I realise.

The threads don't get removed here - they simply slide down the list until if they are the last thread on page 5 and don't get bumped or added to - they dissapear into cybervoid!

Chocolate Caramel Slice.. I've posted this in the baking thread also.. It's so good and so easy though, so will add it here.. Soften 150gms butter and stir in 3/4 cup brown sugar. Sift 2 (two) cups flour and 1 (one) tsp baking powder and add to the butter mix. Mix well. Press into a microwave slice dish. Elevate and microwave on high for 5 1/2 minutes, or till mix looks dry in the centre from the underside of the dish. Set aside. In a large bowl or jug, combine 50gms butter, 1 tablespoon golden syrup and 1 400gm tin sweetened condensed milk. Zap on high for 3 1/2 minutes, stirring twice during cooking, or till thicker and starting to change colour. Spread evenly over the base. Elevate and microwave on high for 2 1/2 minutes or till caramel bubbles. Ice with chocolate icing once cool and cut into squares or bars. This is just delicious.. and so easy. We've also added some lemon juice to the caramel mix sometimes for a lemon flavour, and topped it with lemon icing.. this is very good too.. Enjoy.. Cheers.. Julie

Hi Jaykat.. here 'tis.. Russian Fudge.. Place 750gms sugar and 1/2 cup milk into a saucepan and bring slowly to the boil, stirring to dissolve the sugar. Add 1/2 tin sweetened condensed milk, 100gms butter, pinch salt and 1 tablespoon golden syrup. Boil 30 minutes, stirring frequently. Remove from the element and beat till thick - about 5 minutes. Pour into greased tin. Mark out into small squares and cut when set. Vanilla and nuts may be added if desired. Enjoy..

Melt & Mix Choc Chippies 2C flour,1/2tsp baking soda,1/2tsp salt,185g butter-melted,1C brown sugar,1tsp vanilla,1 egg,1C choc chips ... Sift flour,baking soda & salt into a bowl.Beat together melted butter,sugar,egg & vanilla. Add to flour,etc along with choc chips & mix well.Place balls on lined tray.Flatten with a fork & bake 170C 12-15 mins.

Thank you all....devine! Im looking for a prune and walnut slice which our local bakery sells~ there is no coconut in the topping..would anyone know of one? May have to experiment with some of the above.

MARSHMALLOW SHORTCAKE 100g butter,100g sugar, ½ teaspn vanilla,
225g flour ,1 teaspn baking powder, 1 egg,
2 dsrtspns gelatine, 1 cup boiling water, 2 cups sugar,
colouring.

Cream butter and first measure of sugar, add vanilla. Add egg, then dry ingredients. Roll out and place in sponge roll tin. Bake 170c for 30 mins.

Dissolve gelatine in boiling water, add sugar and beat till thick. Add colouring and pour on top of shortcake.

ORANGE WEETBIX SQUARES 150 g butter, 1 cup crushed weetbix, 1 ½ cups self raising flour,
¾ cup sugar, ½ cup coconut, 2 tblspns orange juice.

Mix dry ingredients well. Melt butter, add orange juice. Add to dry ingredients . Press into tin. Bake 170c 15 mins. Ice with icing made with orange juice and icing sugar.

WALNUT SQUARES 100g butter, 2 tblspns chopped nuts, 1 cup flour,
2 tblspns condensed milk, 50g sugar, 1 teaspn baking powder,
vanilla.

Melt butter, sugar condensed milk and vanilla and add dry ingredients and mix well. Press into flat tin and bake at 170c. Ice with the following:
50g butter, 100g icing sugar, 1 tblspn condensed milk.

Bring to boil while stirring and pour over cake while hot. Cut into squares when cold.

FANZIE SQUARES 75g butter, 1 cup flour, 50g sugar,
1 teaspn baking powder, 1 egg, pinch salt,
jam.

Cream butter and sugar, add egg, then sifted dry ingredients and press into a shallow tin and spread with jam.

Topping:
50g butter, 50g sugar, 75g flour,
vanilla, 1 teaspn baking powder, 1 tblspn milk,
1 dsrtspn golden syrup, 1 cup mixed fruit and nuts, 1 egg,
2 tblspns coconut.

Mix together and spread on top of shortcake mixture and bake 170c for 30 mins. Ice with lemon icing.

DURKY DANDY 100g butter, ¾ cup sugar, 1 cup dates,
½ cup walnuts, 1 egg, 1 tblspn cocoa,
1 cup flour, vanilla, 1 teaspn baking powder.

Cream butter and sugar and add egg, dates, nuts and lastly dry ingredients and vanilla essence. Press into flat tin and cook at 170c x 20 mins. Ice when cold.
