yes i know really proud of all the bakers on here when i started this my nephew had just turned 7 well he has just had his 10 birthday....and this thread is not only still going threee years later but is still talked about amongst our friends and families, nad my own friends are saying wow i just asked Jaxma to send me a copy of the books and what a great job she has done....so you rock JAXMA you go girl

Pacific Islands Pineapple Pie Have got RSI from scrolling through two years worth before giving up - what a great thread! Wonder if anyone has a recipe for pinapple pie - has crushed pineapple mixed through custard, with a meringue topping - TIA

Is it this one ...SHVS1984 Frangipani pie:

Pineapple Layer:

1 x 450g can crushed pineapple
1/4 cup cornflour mixed with 1/4 cup water
2 eggs (separated)

Coconut Cream Layer:

1-1/2 cups milk
3/4 cup sugar
1/4 cup cornflour mixed with 1/4 cup water
1 cup coconut
1 tablespoon butter
1 teaspoon vanilla
1 baked 20cm (8") pastry shell or crumb crust

Method:

1. Bring crushed pineapple to boil. Add egg yolks to blended cornflour and stir into pineapple, stirring until thick. Set aside.
2. For coconut cream layer, heat milk, sugar and pinch salt in saucepan over low heat until sugar dissolves. Add blended cornflour and stir until thick.
3. Remove from heat and add coconut, butter and vanilla.
4. Spoon half coconut cream mixture into pastry shell. Add pineapple, then remaining cream.
5. Top with meringue (using the 2 egg whites and 4 tablespoons sugar) and bake in a moderate oven, 180°C for 15 minutes.

Well done everyone!! I have had some fantastic recipes from here, it actually re-kindled my interest in baking as well as some of my friends. I always read the whole recipe board and have really enjoyed the different ideas. Can we make it to 4??

You guys gonna make me fat!!! Me and 3 yr old daughter off to make peanut butter swirl brownies now, sounds yum, as do all the other recipies. What a great thread to get new recipes to try!
won't last long in our house with 5 kids and one hubby who eats enough for 2!

i made melt n mix coffee cake last night thanks to brianmac. So yummy and so easy!
125g butter,chopped;130g brown sugar;75g caster sugar;125ml milk;2 tsp instant coffee;2 eggs;225g s.r flour. Grease a 14x21cm loaf pan,cover base with baking paper. Combine butter,sugar,milk & coffee in med saucepan,stir over low heat,without boiling,until butter is melted. Stand 10 mins.Stir in eggs & flour.Pour into pan. Bake in mod oven about 40 mins.Turn onto rack to cool.Top cold cake with coffee glac'e icing and walnuts if desired.

Coffee Glac'e Icing 240g sifted icing sugar;1 tsp soft butter;3 tsp instant coffee;2 tbsp milk approx. Sift icing sugar and coffee together.Stir in butter and enough milk to give a firm paste. Stir over hot water until icing is spreadable;do not overheat. Spread icing over cold cake immediately.

Birthday Cup Cakes for the thread Cup Cakes 125g butter, softened, 1 tps vanilla, 3/4 cup Caster Sugar, 2 eggs, 1 1/2 cups flour
1 1/2 tps baking powder, 1/2 cup milk.. Preheat oven to 180 degrees celcius. Place large paper patty cases in deep muffin tins Beat together butter,essence and sugar until light and creamy. Add eggs one at a time, beating well after each addition. Sift flour and baking powder into a bowl. Fold flour into butter mixture. Stir in milk. Spoon mixture into patty cases. Bake for about 16 minutes or until golden. Transfer to a wire rack to cool. When cold spread with butter cream , place a lifesaver lolly in centre of cupcake and place a candle in the hole, sprinkle with sprinkles or chocolate hail. butter cream:125g unsalted butter, softened, 1½ cups icing sugar, 2 tablespoons milk, food colouring. Beat butter until white. Gradually beat in half the icing sugar, then milk and the remaining icing sugar. Add food colouring a drop at a time until you reach the desired consistency.

Food in a minute this week is... Raspberry and Apricot Tart
1 1/4 cups flour,1/2 tsp baking powder,2 tbsp sugar,100 g butter, grated or diced,1/2 cup Craig's Reduced Sugar Raspberry Fruit Spread,250 g lite sour cream,3 eggs,2 tbsp sugar,1 tsp vanilla essence,410g can Wattie’s Apricot Halves in fruit juice, drained.
Sift the flour, baking powder, and sugar into a bowl. Rub in the butter, until the mixture resembles breadcrumbs. Stir in 1/4 cup cold water to form a stiff dough.Turn out on a floured board and knead lightly until smooth. Roll out and use to line the base and sides of 23cm flan tin. Spoon 3/4’s of the Craig’s Reduced Sugar Raspberry Fruit Spread over pastry base.Beat sour cream with eggs, sugar and vanilla until smooth, carefully pour over the Raspberry Fruit Spread. Arrange the apricot halves, cut side up in the egg mixture.Bake at 180 degrees C for 40 minutes or until the filling is set. Carefully fill the centres of the warm apricot halves with remaining Raspberry Fruit Spread, cool and chill before serve.

Carrot and Orange Cake 1 C oil,1 cup brown sugar,2 eggs,1 tbsp vanilla essence,grated rind 2 oranges,2 C grated carrot,1/2 C sultanas,3 C flour,1 tbsp mixed spice,2 tsp baking powder,1 tsp baking soda,1 C Buttermilk,250g Cream Cheese,1 C icing sugar,dash vanilla essence . In a large bowl beat together the oil,brown sugar, eggs, vanilla essence and orange rind. Once well beaten scatter over the grated carrot and sultanas. Sift the flour, spice, baking powder and soda together and gently stir into the carrot mixture with the Buttermilk. Transfer to a well-greased and lined 23cm cake tin. Bake at 160oC for 60-70 minutes until a skewer inserted comes out clean. Cool in the tin for 10 minutes before turning out onto a cake rack to cool.Split the cake in half horizontally and spread with half the cream cheese icing. Top with remaining cake and spread with the remaining cream cheese. If wished decorate with grated orange rind.

COME ON LEMSIP..... Really there is more to life than not enjoying it and only eating bird food....There is a thing called balance and having butter, sugar and white flour in moderation never killed anyone, and if someone chooses to bake a lot, well so what...they probably have a large family, give some away etc.... I love my bird seed too, but I also enjoy white flour, sugar and butter.

I agree - everything in moderation!! School/Uni hols - I've just made Weetbix Slice, Cornflake & Raisin Biscuits, Unbaked Lemon Slice and Blueberry Muffins. Phew....probably won't bake anything else in months now after that marathon effort!!!!

5 cup cake simple & easy & delicious
1 cup milk, 1 cup flour, 1 cup sugar, 1 cup coconut, 1 cup chopped dried apricots. Mix together, cook mod overn. Sprinkle with icing sugar. from Family Circle mag a few years back. I make it a lot especially if I have to take a plate.
