I made an Apricot Slice today Here's the recipe Apricot slice: @ packets crushed biscuit crumbs (eg super wine etc, today I used Malt biscuits) 1 tin condenced milk, 175 grams brown sugar, 250 grams butter, 2 cups chopped apricots. Melt together butter, sugar and condenced milk, add to biscuit crumbs and chopped apricots, Press into greased or lined sponge roll tray and leave to set in fridge. Today I sprinkled coconut over them but it is also nice with chocolate icing

cookies and cream fudge sounds yummy are you able to share your recipes? (Pretty please, I love trying new recipes hehe)

bunny51 - 2007-02-04 20:19:00
1830

Sure, Do you make fudge at all? The reason I ask is the recipe I think needs a little experimenting. I think it needs to be boiled more, until it reaches soft ball stage, and the cookies mixed in fully. But here it is anyway...Give it a go, it is devine..lol

I used Oreos, one packet is 14 cookies, enough.lol Ingredients:16 chocolate cream-filled sandwich cookies broken & divided, 1 14 oz can sweetened condensed milk, 2 tbsp butter or margarine, 2 2/3 c vanilla chip, 1 tsp vanilla Method:Line an 8-inch square baking pan with aluminum foil; coat with nonstick cooking spray Place half of the broken cookies in pan. In a heavy saucepan, combine milk, butter and chips; cook and stir over low heat until chips are melted. Remove from the heat; stir in vanilla. Pour over cookies in the pan. Sprinkle with remaining cookies. Cover and refrigerate for at least 1 hour. Cut into squares.
I used 1 tin of condensed milk, and a whole bag of white choc buttons. Good luck, Let me know how you get on

Zucchini bread (ha! a recipe!) Makes 1 23cm loaf, or probably a tray of muffins. Dry: 1-1/2c flour (plain, or mix of wholemeal or oat works well too), 1c sugar (or 1/2c sugar & add 1/2c honey to wet ingredients), 2t baking powder, 1t baking soda, 1/2t ground ginger, 1/4t salt. Wet: 2 beaten eggs, 1-1/2T oil (your normal cooking oil), 1T olive oil, 2-3 grated courgettes (or 1/2 of a monster garden marrow lol!), 2t chopped orange zest. 1/2c chopped walnuts or pecans, or can use up to 1c rolled oats instead. Mix dry ingredients, mix wet ingredients, add the dry to the wet and mix only enough to moisten everything - NB it's plenty moist as listed, the zucchini weeps water as it bakes. Pour into greased & paper-lined tin & bake in preheated 190C oven for 50 minutes. Cool in pan 5-10 minutes before turning out.
