Just an idea bakers for caramel filled muffins Son wanted choc muffins with the caramel filling but I didnt have any of the caremel condensed milk. Made the caramel slice recipe filling (condensed milk, golden syrup, butter, heat and boil for 5 mins). used this in the middle and they thought they were better than the tinned stuff, more like caramello choc filling.

*drools* i finally found it hehehe, i finally got the recipe for jelly crystal biscuits!, i used to make these as a kid, they are terribly addictive

***Jelly crystal bikkies***: 100g Butter, 1 packet jelly, 1/4cup sugar, 1&1/2c flour, 1 egg, 1tsp Baking Powder. Cream butter, jelly crystals and sugar. Add egg and beat well. Add dry ingredients and mix until well combined. Place in teaspoonful sizes on a oven tray. Bake 180 degrees celcius for 10-12 mins. .oO Kree Oo.

Olliebollen My best mate is a Dutch man and I decided to give him a treat and made him some Olliebollen - he approved. 2 eggs, 1/2 teaspoon salt, 3/4 cup white sugar, 3 cups flour, 3 teaspoons baking powder, 1/2 teaspoon nutmeg, 2 cups milk, 1&1/2 cups mixed fruit, oil for cooking in, icing sugar for dusting. Beat together the eggs, salt and sugar. Sift together the flour, baking powder and nutmeg and add alternately with the milk to the egg mixture. Fold in fruit. Heat oil in deep fryer or large pot. Drop spoonful lots into the oil and cook until golden. Drain well and dust with icing sugar for serving.

Volume 2 OK folks ... Volume 2 will be complete within the next couple of days so PLEASE get your recipes posted now if you want them in this book (not sure if there will be enough recipes posted for a volume 3, so this could be your last chance to be TM famous :D). If you've already received a copy of Volume 1 from me, chances are I've still got your email address and I'll just automatically send you Volume 2 (once completed). I'll post on here when it will be sent out so let me know if you don't receive a copy :-)

Never Fail Sponge - Made one as a practice run for christmas - it's 6" high unfilled!!! 185g sugar,2Tbs water,4 eggs,11/2tsp baking powder,185g cornflour,1 heaped tsp flour ... Boil sugar & water.Seperate eggs.Beat egg whites well.Add boiling sugar & water mixture.Beat well then add egg yolks.Beat again.Add sifted dry ingredients.Fold in gently.Bake at 190C for 20 mins.As this sponge rises fairly high you may need to line the sides of your tin.I make the paper twice as high as the tin itself.

Cornflake Biscuits 175g butter-melted,5C cornflakes,1C coconut,1/2C sugar,1/2C dried fruit,1C flour,1tsp baking powder,2 eggs ... Mix all together.Place spoonfuls on a lined tray,flatten slightly & bake 190C 12-15 mins.Leave 10 mins to cool before moving.

Beetroot Cake I regularly make this gorgeous 'pink' cake when I need something easy but with 'wow' factor ... 2C tightly packed fresh beetroot-grated in long strands,1C oil,1C sugar,3 eggs, 11/2C flour,3tsp baking powder,1 pinch salt,1/2tsp nutmeg,1/2C coconut ... mix all together and bake 180C 50-60 min.I serve this by placing a stencil on top of the cake before dusting with icing sugar.Looks pretty when you remove the stencil.

Rugelach (adapted from Martha Stewart) 200g softened butter, 250g softened cream cheese (block, not tub), 2c flour, dash salt. 1/2c plus 2T sugar, 1-1/2t cinnamon, 1/2t nutmeg. 1/2 to 3/4c apricot jam. 1/2c toasted walnuts, finely chopped, 1c currants, 1/2c chopped dried apricots. Milk or cream. Cream together butter & cream cheese, add flour & salt. Turn out dough onto floured surface, roll into ball, wrap in plastic & place in fridge at least 6 hours, up to overnight.

Rugelach pt 2 (assembly) Mix together sugar & spices. Divide dough into 4 parts, work with 1 part at a time. Roll each piece out on a floured surface into a 20 x 30cm rectangle. With long side facing you, spread dough with about 3T jam, leaving about a 1cm border around the edges. Sprinkle dough with 1/4 part of the walnuts & dried fruit & about 2T of the sugar mix. Roll up & place seam-side down on a baking sheet covered in baking paper. Repeat with remaining 3 parts of ingredients. Brush each with milk or cream & sprinkle with last of the sugar mix. Bake in preheated 160C oven for 45min, let cool on racks for 15min. Cut into 3cm-thick slices.

Volume 2 hit cyberspace about half an hour ago If you don't receive a copy, it could possibly be because I only have a Hotmail account for you and the file is too big, or because you have changed your email address since volume 1 was sent out. I've had about 20 bounce back already, so if you don't get a copy let me know and we can work it out somehow.

weekly baking I have, all of my 52 years of married life, baked regularly, sometimes weekly, sometimes a couple of times a week (which is now because I only do a couple of things on the same day).... when the children were young I baked five items every week... probably why the visitors came... always had good home cooked food on the table.. I wouldn't have it any other way.... however I have now opened up a new thread (No 2)I think I called it savoury baking for a change, or something like that... should be interesting !!!

freezing chocolate log I make the chocolate log out of the Edmonds cookbook... have made it a week before I needed it... creamed and iced it with walnuts on the top.... put into a plastic bag with a twist tie... beautiful.... no different from making it on the day...

freezing trifle I have also made and frozen a trifle a few days before I need it.. the day before it is needed take it out of the freezer and put into the fridge and the morning of the day you want to eat it just make sure that it has thawed out.... just makes life that much easier when you have other things to do... I cream it on the day and put walnuts on the top but there is no reason why it can't be frozen with the cream on etc...

I was gonna make Chocolate self saucing slice but couldn't be bothered but instead made Rice bubble cake. Add 100gm butter 3tsp of sugar and 3 large tablespoons of honey to a pot, bring to the boil and let bubble for 3-4 mins. Add 3 cups rice bubbles and 1 cup of sultanas (optional) stir through and put in lined tin and into fridge to set. Hubby-to-be will be over the moon when he gets home since he ate half the last one in a sitting

Christmas pudding I "bought" a recipe off TM a while back for what looked like a wonderful steamed fruit pudding. I haven't tried it, but thought I might make it tomorrow for dessert on Christmas Day :-)

Oh bother ... I just checked the recipe and it doesn't have any fruit in it. Do the experts out there know if adding fruit to it would dry it out or anything like that. Should I add or remove anything if I add fruit?

Hi Jaxma From my experience, if you soak the fruit in any form of liquid for at lest 2-3 hours, you shouldn't need to add or remove anything, sorry i never saw your message yesterday, your've probably already made it.

My dessert failed :-( It didn't cook right through - the centre was still runny, so we didn't have a Christmas pudding :-( Also I was going to cook a chook, but didn't check to see that I had one in the freezer and alas, I didn't! It was a day of disasters as far as food went yesterday! In the end I did a beef roast which was yummy anyway, and for dessert we had strawberries and whipped cream and brandy snaps.
