made shortbread i added 1/2 tsp ginger powder and 3/4 cup chocolate and white broken chocolate button's to jazz up the shortbread.

Great to see all these lovely recipes. I have just started my first round on xmas baking. I am in the process of making 4 xmas cake. 1 for hubby, brother-in-law, brother and dad. I am the only one who bakes in my family so it is a hit when everyone is here. Just baked 4doz xmas mince pies and put them int the freezer. If I hadn't hubby would have them finsihed in a couple of days. I will probably do another few doz before xmas before the family arrive.

Here are some more recipes for the book jaxma. Oaty Apricot Slice: Filling: 2 cups of finely sliced dried apricots, 1 cup water, 1/4 cup sugar
Base: 125gm butter, 1/2 cup brown sugar, 1 cup flour, 1 cup rolled oats.
Preheat oven to 190 C. Line 20cm baking tin with baking paper. Put all filling ingredients into saucepan and simmer for 15 mins until liquid has almost evaporated. Cream butter and sugar until light and fluffy. Mix in rolled oats and sifted flour. Press 2/3 into tin. Spread with filling and sprinkle remainder of base mix over the top. Bake 30-35 mins.

Delicious hot or cold - Caramel Apple pull apart 2 cups self raising flour, 30 grams butter, 1 cup milk, 1/3 cup firmly packed brown sugar, 410 grams lightly stewed apple, 1/2 tsp cinnamon, pinch nutmeg
Caramel: 1/4 cup cream, 20gm butter, 100gm brown sugar
Grease round cake pan. Sift flour into medium bowl and rub butter in. Stir in enough milk to make a sticky dough. Turn onto floured surface and knead until smooth. Roll onto baking paper - 21x40 cm. Sprinkle dough with water, spread with combined apple and spices to within 3 cm from long edge. Roll up like swiss roll. Use floured, serrated knife to cut into 12 slices. Place 11 slices upright around edge of pan. Place remaining slice in centre. Bake 180 C for about 25 mins. Stand for a few minutes before turning onto wire rack. Brush hot pull apart evenly with caramel.

Easy Rocky Road Fudge Rocky Road Fudge:125gm butter, 1/2 tin condensed milk, 1 pkt crushed plain biscuits, 1/2 pkt mini marshmallows , 1/4 cup choc buttons, 1 ½ Tbsp cocoa,
1/2 tsp vanilla

Melt butter, condensed milk, vanilla and cocoa. Take pot off heat and cool slightly. Add marshmallow, choc and biscuit. Put in fudge tin and ice with choc icing.

A definite favourite for the kids Milo Caramel Melts:
225 gm butter, ¼ cup caramel condensed milk, ½ cup sugar, 2 cups flour, 2 Tbsp milo, 1 tsp baking powder, choc melts

Heat oven to 190 c. Cream butter, beat in sugar, milo and caramel condensed milk. Mix until light and fluffy then sift in baking powder and flour. Stir until combined. Roll into balls and flatten. Press choc melt on top. Bake 15 mins.

Simple and delicious museli slice Muesli Slice: 250gm butter, 1 cup caster sugar, 2 Tbspn honey,2 ½ cups rolled oats, ¾ cup coconut, 1 cup cornflakes lightly crushed,
1 tsp mixed spice, ½ cup finely chopped apricots, 1 cup mixed dried fruit, melted butter

Preheat oven to 160C. Brush baking tin with melted butter then line with baking paper. Put butter, sugar and honey into pan and melt until sugar dissolved. Remove from heat. Put dry ingredients into mixing bowl and mix well. Pour wet mix in and mix thoroughly. Put into tin and bake 30-45 mins.

Great in kids lunch box Cheese and Bacon Puffs:
1 large cup flour, 2 tsp baking powder, pinch of salt, 1 cup grated cheese,1 cup bacon (chopped),6 Tbspn milk

Mix all together and spoon into small muffin tins. Bake at 150 C for approx 10 mins

An oldie but a goodie Mrs Caird’s fudge:
4oz butter,4oz sugar, 1 Tbspn cocoa, 1 egg, 1 pkt malt biscuit, 1 pkt marshmallow

Melt together in a pot and mix in crushed biscuits, marshmallow and a handful of sultanas. Put in small sponge roll tin and place in fridge to set. Ice with choc icing.

Cornish Fairings Cornish Fairings:
1 cup flour, 1 tsp baking soda, 2oz butter, salt, 1 tsp ginger, ¼ cup sugar,1 tsp baking powder, ½ tsp mixed spice,2 Tbspns golden syrup

Sift dry ingredients and rub in butter and sugar. Warm syrup, add to other ingredients. Mix to stiff consistency and roll into balls. Dip into sugar and bake 180 C for 10 mins.

Best Carrot Cake ever Carrot Cake:
1 ½ cups flour,1 cup brown sugar, 1 ½ tsp baking soda, 1 ½ tsp baking powder, ¾ tsp salt, tin crushed pineapple, 2 tsp cinnamon, 1 cup oil, 3 eggs
½ cup white sugar, 2 cups grated carrots

Mix flour, baking soda, baking powder, salt and cinnamon. Drain pineapple well. Stir eggs, oil, white and brown sugar into flour mix, followed by pineapple and grated carrot. Pour mix into large ring mould. Cook elevated on high power for 13-15 mins. Stand on wooden surface for 10 mins before turning out. Cool thoroughly before icing.

Old favourites Ginger Crunch:125 gm butter, 200gm flour, 1 tsp baking powder,
125gm sugar, 1 tsp ginger

Cream butter and sugar. Add sifted dry ingredients. Mix well and press into greased tin. Bake 15-20 mins at 190 C. Put into a saucepan 8 Tbspn butter, 16 Tbspn icing sugar, 8 tsp golden syrup, 2 tsp ginger. Heat until melted then pour over cake while hot. Cut into squares.


Louise Cake:50gm butter, 2 eggs, 1 tsp baking powder,25gm sugar, 150gm flour

Combine butter and sugar, add egg yolks and then sifted dry ingredients. Press into greased tin and spread with raspberry jam. Beat egg whites until stiff and add 125gm sugar and 50gm coconut. Mix and spread on top of jam. Bake 30 mins at 180 C.

More easy baking Afghans:
200gm butter, 175gm flour, 50gm cornflakes,75 gms sugar, 25gm cocoa

Soften butter, add sugar and beat to a cream. Add flour, cocoa and cornflakes. Put tsp of mix on tray and bake at 180 C for about 15 mins. When cold ice with chocolate icing and put walnut on top.


Continental Fudge Slice:
4oz butter, ¾ cup coconut, 3 dsp cocoa, ½ cup sugar, 1 egg, 1 tsp vanilla, 2 cups crushed wheatmeal biscuits

Combine butter, sugar and cocoa in a saucepan. Stir in beaten egg and vanilla. Cook, stirring for 1 minute. Remove, stir in biscuit and coconut. Mix well and press into greased tin. Refrigerate until set.
Topping: Cream 2oz butter. Sift in 2 cups icing sugar and 2 dsp custard powder. Add 4 dsp hot water and beat until fluffy and light. Spread over biscuit base and refrigerate. Melt 4oz chocolate and spread over topping.

Easy uncooked slice Apricot Fudge:
6oz butter,1 cup chopped apricots, 4 ½ oz brown sugar
3oz chopped ginger, ½ can condensed milk, 1 packet crushed biscuits, coconut to sprinkle

Melt sugar, butter and condensed milk. Mix in apricots, ginger and biscuit crumbs. Press into greased tin. Sprinkle with coconut. Refrigerate until firm

Caramel Cake/Pudding I invented this one yesterday because I wanted to do a caramel steamed pudding, but didn't have the hours to spare nor the steamer (we're all packed and ready to move on Saturday). Cake: 150gr butter, 1 teaspoon vanilla essence, 3/4 cup sugar, 1 1/2 cups flour, 3 teaspoons baking powder, 1/3 cup milk. Cream butter, sugar and vanilla together. Add eggs one at a time, beating well after each addition. Add flour and baking powder and milk and fold in well. Pour into a lined round cake pan and cook at 180*C for 40 minutes or until cake is cooked. While the cake is cooking make the caramel: 1 tin sweetened condensed milk, 100gr butter, 2 tablespoons golden syrup. Melt together in a saucepan over a low heat. Stir over low heat until thick and golden. Once cake is cooked turn out onto a plate and pour the caramel over the top. It's just like a steamed pudding but very simple and a whole heap quicker!

Nana's caramel square Caramel Square:Filling:1 tin condensed milk, 1 Tbspn golden syrup, 25gm butter,¼ cup sugar

Put all ingredients in pot and heat until melted.
Cream 6oz sugar and 6oz butter then add 12oz flour, 1 Tbspn cocoa, 1 tsp baking powder. Add to creamed mix. Roll out and cut into four. Place ½ the mix in base of tin and then spread caramel over top. Place rest of mix over top and cook for 20 mins at 160 C.

Easy no bake slice Lemon Almond Slice:1 pkt plain biscuits, 1 lemon, juice and rind,100gms butter, ¾ cup chopped almonds, 1 cup coconut, 2 drops almond essence,½ cup condensed milk

Mix all dry ingredients together. Melt condensed milk and butter together and add. Spread into greased tin and refrigerate. When set ice with lemon icing

Yummy treats Truffles;½ tin condensed milk, 1 pkt wine biscuits, 2 dsp cocoa,
1 cup brown sugar, 2 tsp vanilla, coconut, 200gm butter, 1 pkt marshmallow

Melt butter, milk, sugar, essence and cocoa, then add crushed biscuits. Leave to set until able to be handled. Roll around marshmallow, roll in coconut. Store in fridge.

Rich Strawberry Balls Strawberry Balls:1 tin condensed milk, 3 pkts strawberry jelly crystals, 8oz coconut

Mix together milk, coconut and 2 pkts of jelly crystals. Form into balls and toss in 3rd pkt of crystals.

Mouthwatering dessert - Yum!! Banoffee Pie;1 tin caramalised condensed milk, 2 tsp sugar, 2 tsp coffee, 1 pkt malt biscuits, 3-4 bananas, ½ pint whipped cream,
¼ lb butter

Crush biscuits and mix with melted butter. Press into dish and set in refrigerator. Spread condensed milk over base, cut up bananas and put over toffee. Mix whipped cream, coffee and sugar. Spread over pie. Decorate with grated chocolate.

WOW!!! What a great thread! The best place to find a variety of recipes and to know each other. RICE THING - 1/4c butter, 1/4c sugar, dates, 11/2tbsp milk, 11/2 pkt diary milk (80g pk), 1/4c dessicated coconut, 1/4c crushed almonds and cashewnuts, 21/2 rice bubbles, vanilla essence. Method - melt butter and sugar in a pan, add the dates. stir until the dates melt then add milk and mix. Add the chocolate and mix. Finally add coconut, nuts, rice bubbles and essence and mix well. Make small balls and roll on extra dessicated coconut.

Here's a microwave Chocolate Caramel Slice: Soften 150gms butter and stir in 3/4 cup brown sugar. Sift 2 (two) cups flour and 1 (one) tsp baking powder and add to the butter mix. Mix well. Press into a microwave slice dish. Elevate and microwave on high for 5 1/2 minutes, or till mix looks dry in the centre from the underside of the dish. Set aside. In a large bowl or jug, combine 50gms butter, 1 tablespoon golden syrup and 1 400gm tin sweetened condensed milk. Zap on high for 3 1/2 minutes, stirring twice during cooking, or till thicker and starting to change colour. Spread evenly over the base. Elevate and microwave on high for 2 1/2 minutes or till caramel bubbles. Ice with chocolate icing once cool and cut into squares or bars. This is just delicious.. and so easy. We've also added some lemon juice to the caramel mix sometimes for a lemon flavour, and topped it with lemon icing.. this is very good too.. Enjoy.. Cheers.. Julie

Some more goodies: Scotch Shortbread Use just-soft butter to get the right consistency. I make it in a food processor.. place everything in, whizz for a few seconds and you're done. For the bowl method, mix till all blended well: 175gms just-soft butter, 1 tsp vanilla essence, 75gms icing sugar, 225gms flour and 50gms cornflour. You may need to use your hands to mix it well. Shape into a smooth ball, cover with plastic wrap and place in the fridge for 10-15 minutes to firm a little. Shape as you want, and bake at 145°C for 12-15 minutes. Cheers.. Julie

Has this ever happened to you..? Made the melt and mix shortbread yesterday..turned out perfect ...beautiful short texture .. BUT.. absolutely no taste.Couldn't work out what was wrong until I got butter out of fridge this morning and realised I had bought unsalted butter. Wouldn't have thought it would make such a huge difference but there you go. Going to use thebutter up making some of Fishers yummy BBQ butters from BBq thread. Just wondering if anyone has had this baking experience?

I made this today - yummy Blueberry Crumble - Ingredients
1 t cinnamon,1 ½ c wholemeal flour,½ c rolled oats,,½ t baking powder,¼ t salt, ½ c brown sugar
100 g butter,1 TBsp golden syrup,1 t vanilla essence, 1 c blueberries,2 T brown sugar .....
Method: Mix together cinnamon, flour, rolled oats, baking powder, salt and brown sugar. Combine butter, golden syrup and vanilla in a separate bowl. Microwave on high power for 1 - 1 ½ minutes, or until melted. Stir butter mixture into dry ingredients. Mix well. Press half the mixture into a 34 by 18 cm microwave dish. Pour blueberries on top, then second measure of brown sugar. Sprinkle with remaining flour mix. Microwave, uncovered, on medium power for 8 – 11 minutes, or until top is fairly dry. I ended up baking mine. Enjoy.
