Ive just done the weeks baking, what did you bake

Another never fail recipe. Miracles
1 tablespoon golden syrup, 1/2 cup milk, 1 teaspoon baking soda, 1 cup flour, 1/2 cup sugar,
1 teaspoon baking powder,
1 tablespoon cocoa, 1 beaten egg,
60 grams melted butter.

Warm syrup, milk and soda. In another bowl, put the flour (sifted), Baking powder, cocoa, and sugar. Add gently,the warmed soda, syrup and milk mixture, then the beaten egg and melted butter
do not over mix.
Place in patty cases or small greased muffin trays and bake aprox 12 miutes at 200 degrees celsius.

To serve, cut the tops off and fill with raspberry jam and cream or mock cream, replace the top and ice with chocolate icing.

Bullseyes 1 cup skinned roasted peanuts,50 grams softened butter,3/4 cup icing sugar, 1 teaspoon almond essence or sherry. mix all together, roll into balls and put into fridge till set.
Dip the tops in melted chocolate

Pineapple Tarts Buy some sweet short pastry , roll out and line small tart tins,
Make the filling as follows:
1 425gram tin of crushed pineapple,
660 grams sugar, 3 teaspoons gelatine softened in the juice of 1 lemon.
Dissolve the sugar in the pineapple
Boil the pineapple and sugar for 11 minutes, do not stir during boiling. Remove form heat and stir in the gelatine mixture, Put in a sterile jar, seal and keep in refrigerator.
Spoon the pineapple filling into the tart shells and pipe whipped cream on top.
These are delicious.

Brandy snaps or baskets 150 grams each of butter,sugar and flour. 6 tablespoons golden syrup,
1 teaspoon lemon juice,
1+1/2 teaspoons dry ginger.
Melt the butter, sugar and golden syrup,add flour, ginger and lemon juice.
Thoroughly grease the tray and place in tablespoon amounts with no more than 6 tablespoon of the mixture on the tray. Spread it out a little. Bake in a moderate oven until golden brown and bubbly.
Watch carefully as the mixture burns easily.
Remove tray, and when pliable wrap around the handle of a wooden spoon, or a wooden clothes peg to make a brandy snap.
For a basket place on the back of a cup or glass and push into desired shape.
to serve,fill the baskets with strawberries and whipped cream.
For the brandy snaps, pipe whipped cream into them, preferably half an hour before serving, as they are very hard and need to soften a little.

caramello slice 130 grams brown sugar,220 grams butter,1/2 tin sweetened condensed milk, 1 packet malt biscuits,
2 tablespoons golden syrup, 1 teaspoon ginger.
simmer the butter, golden syrup and brown sugar together for 10 minutes,remove from heat and add the ginger, and crushed malt biscuits. Place in grased slice tin and refrigerate. then ice with the following:
Icing.
4 tbspoons icing sugar, 2 tbspoons butter, 2 teaspoons golden syrup and 1/2 teaspoon of ginger melted together.

Lisas Coco Cola Mud cake Coca cola Mud Cake:

1 Cup plus 3/4 Cup Flour 2 Cups Brown Sugar 3/4 C Cocoa 2 tsp baking Soda 1 tsp baking powder dash salt 2 eggs 1/2 Cup oil 1 Cup Coca Cola or other brand, but not Diet Coke 1 Cup of trim milk or Buttermilk. 1 tsp vanilla Sift all dry ingredients into mixing bowl. And stir till combined. Add wet ingredients and beat on medium to high speed till combined. Make sure you line your tin with baking paper. Do not use a loose bottom tin, as the mixture is very wet. Bake in a 21 cm round cake tin at approx 160°C for approx I hour, or until a prong comes out clean. Do not use fan bake as this will dry the cake out. Leave to cool for an hour before removing from tin. To serve, pile fresh berries in the centre and sprinkle with icing sugar. For a special desert, serve with raspberry coulis, or chocolate sauce, and some whipped cream.
This is a fab recipe, I use it instead of the traditional mud cake recipe. It's a healthier version

Five cup slice
1 C flour
1 C sugar
1 C coconut
1 C corn flakes (or 5 crushed weetbix
1 C dried fruit (sultanas or mixed fruit)
1 tsp baking powder
Mix dry ingredients add;
1 beaten egg
Melt together:
125gms butter
1 Tblsp golden syrup
Add to the mixture and mix well and press in sandwich tin. Bake 180 C for 25 mins.

Banana & Choc Chip Muffins
Sift: 1 ¾ C Flour
½ C Sugar
3 tsp Baking Powder
Add: ½ C Chocolate Chips
Beat: 1 Egg
¾ C Milk
½ C Oil
1 large Banana
Sprinkle some chocolate chips on the top and bake at 150C for about 20 minutes.

Gingerbread Men

75 g soft brown sugar, sieved
2 tablespoons golden syrup
1 tablespoon black treacle or molasses
1 level teaspoon cinnamon
1 level teaspoon ginger
1 pinch ground cloves
Finely grated rind 1/2 orange
100 g butter
½ level teaspoon bicarbonate of soda
225 g plain flour
50 g currants (optional)
Pre-heat the oven to 180C. Put the sugar, syrup, treacle, 1 tablespoon of water, spices and rind together in a large saucepan. Then bring them to boiling point, stirring all the time. Remove the pan from the heat and stir in butter, cut into lumps, and soda. Stir in the flour gradually until you have smooth manageable dough - add a little more flour, if you think it needs it. Now leave the dough - covered - in a cool place approximately 30 minutes. Roll the dough out on a lightly floured surface to 3 mm thick and cut out the gingerbread men. Currants can be pressed into the dough to simulate eyes, noses, mouths and buttons down their fronts. Place on trays, bake for 10-15 minutes.

Walnut Pride make this morning.Recipe is from the Edmonds cookbook.Iced with the lemon icing(recipe says to ice the cake with) i also sprinkled coconut and sprinkled a little bit of coffee over top of icing.

Bananas As I had quite a few bananas to use up we now have a banana cake, blueberry and banana muffins and I can't get away with not making Weetbix crunchie as school is back tomorrow. Yeah!

Baked Honey and Cinnamon Cheesecake 2 cups weight watchers Fruit & Fibre cereal,3 tbls light caramel topping,250g ricotta cheese, 250g low-fat cream cheese, 1/2 cup honey, 1/2 cup castor sugar, 2 tsp ground cinnamon, 4 eggs... preheat oven 160. Coat a 22cm springform tin with cooking spray.Place the cereal in a processor and process til it looks like breadcrumbs. Add caramel topping, mix and press into prepared tin. Beat the cheeses, honey, sugar, and cinnamon til smooth. Add eggs one at a time, beating well each time.Pour over base and bake for about 1 hour or til filling is firm. Cool before serving with a sprinkle of blueberries.

Easter Biscuits recipe? Does anyone have a recipe for Easter Biscuits. They have a shortbread biscuit type base and a hard white icing that you can paint on with food colouring. Just love these for any festive occasion. I lost this recipe in a flood and can't find it again anywhere but seeing all the wonderful bakers on this thread I just know its gotta be out there somewhere.

Hokey Pokey Old recipe:
1 cup sugar, 3 cups golden syrup,quarter cup water, 1 teaspoon lemon essence (optional), 1 teaspoon baking soda. Cook (not stirring)sugar, syrup and water to 265'- everything is dissolved and mixture just at hard ball stage. Add essence and soda and stir well. Mixture will froth and lighten in colour. Pour into buttered tin, cool and break into pieces. Store in an airtight jar.

Instead of bumping(again!) Why don't i add another recipe!
Iced Lemon Walnut Bars
125g butter,1 tin sweetened condensed milk,1 tbsp golden syrup, finely grated zest of 2 lemons,100g chopped walnuts, 250gpkt plain wine biscuits, crushed.
Lemon butter icing:100g butter, softened, juice of two lemons, 2 cups icing sugar, sifted.
1. Heat oven to 170*C on fan bake. Line a 17 x 27cm slice tin with nonstick baking paper, leaving an overhang on all sides. Place butter, condensed milk and golden syrup in a saucepan over a low heat, stirring until butter melts. Remove from heat and stir in lemon zest,walnuts and crushed biscuits. 2. Spread mixture in tin, bake 15 to 20 minutes or til golden and set. Once cold, spread with lemon icing. Cut into fingers and store in an airtight container. To make icing, place butter in a bowl and whisk with an electric mixer til creamy then add lemon juice and icing sugar whisking til pale and fluffy.

Buttery Craisin Slice Process 300g unsalted butter, 21/2 cup flour and 1cup castor sugar until mixture just comes together then add 125g coarsely chopped craisins. Press into Swiss roll pan or similar and brush with 1 beaten egg white and sprinkle 2Tbsp castor sugar on top.Bake 40mins at 150 (130 fan)Cool in pan and then cut.

Mayonnaise Banana Cake 3/4 cup Praise Mayonnaise,1 cup caster sugar,1 tsp vanilla essence,1 cup mashed bananas,2 cups flour,1 tsp ground cinnamon,1 tsp baking soda,1 tsp baking powder. Lemon Icing: 3 tbsp Praise mayonnaise,1 tsp finely grated lemon rind,3/4 cup icing sugar. Method;Place mayo,caster sugar,vanilla and bananas in a bowl, beat lightly to combine.Sift flour, cinnamon,baking soda & baking powder, gently fold into he mayo mixture. Spread into a baking papr lined 20cm round cake tin. Bake at 170 for 1 hour or until a skewer comes out clean. Cool on a wire rack.Ice with lemon icing and store in a airtight container. Lemon Icing;Beat the mayo,lemon rind and sifted icing sugar until smooth and thick.(This is a food in a minute recipe and has only been made using praise mayo)

Hubby went diving this weekend an over nighter and he had to take food for the two days, So I made Bacon and Egg pie I put the eggs on top of the pastry, added Red Onion, Garlic Frozen Veges, heaps of chopped bacon and then some left over mashed potatoe, top with the rest of the pastry, It smelt yummy cooking and it was devine when it was finished..lol, with the left over pasrty I rolled it not to thinly I covered it with cheese, not to thickly like a single layer, cut it into strps about, about 2" thick, and twisted them and baked till golden brown, Very yummy. I also made him cheese and ham toastie sammy's. He comes home tonight so will see whats left..lol

Walnut Cookies Cream 200g butter with 1/2c sugar till soft. Sift together 11/2c flour and 2Tbsp cocoa.Stir in creamed mixture. Fold in 1/2c crushed cornflakes and 1/4 cup chopped walnuts.Bake 180 for around 15 mins.When cold ice using 100g cooking chocolate (melted)and walnut halves (will need about 25)

Hi... Well Yes he brought home 4 crayfish, and 4 dozen scollops, so him and the kids are in heaven, I dont like scollops, and only a little crayfish, And he didnt bring home any of the food I sent over with him But he brought back chippies, and brought biscites..lol

Banana Muffins made two days ago.I used the edmonds recipe for banana cake then added sultanas,white melts and 2tsps coffee dissolved in a little water to make a past then add into mixture.Just wanted to try something different and they taste yummy
