oh they most certainly will, week four is done, but still 2 more weeks to complete before I post. I Have started cooking for meal on wheels and that is why the costings are being done with it as well as I have to complete a shopping list and budget to co incide with my recipes and weekly planners it sounds pretty complex but easy peesy if your in the know, just time consumming getting everything extracted from brain to pc to put into print.I thyink faster than I can type LOL so a fun excercise

Grate cheese and freeze it in bags. If you freeze bocks of cheese and then try to grate, they tend to crumble irritatingly.

I buy a big crown pumpkin and make a huge pot of soup...Have it the first day then freeze it in Icecream containers and vegemite jars. The vegemite Jars are a perfect lunch soup for one and the icecream containers are a great "Emergency" dinner for 4 - with cheese on toast, paninis, scones, foccacia pizza or just toast and butter. I have a large saucepan that fits the frozen cube in it so it sits flat on the bottome and we can be eating the soup in 20 mins....
Had it this week.... Miss 18 rang at 5pm and said "Whats for tea"... I wasn't prepared... (which is not like me) but she put the block on medium when she rang me and it was almost ready by the time I got home... BONUS! No expensive takeaways or meals out.

What I do is approximate what our yearly income is (Be on the mean side - so if anything you could earn more) Then I budget it and draw that much each week regardless. I Have some that goes in a seperate account to cover fixed expenses... Power, phone, rates etc. Some goes into a seperate account (Or Bonus Bonds) to put aside for Tax, Some that goes in a Weekly account... Groceries and incidentals, 10% goes into a long term savings account and some into a short term savings....
Sounds complicated but once set up is easy and works for us.

rachbabe you are so welcome, pleased its come in handy.I have just started a new venture of cooking small portions and actually using all the nutricianol training I have by collecting together recipes that are low salt, low fat and low salt so they can suit a wide range of people, loving every minute of it, I havent had any feed back on my meals ie done do far this week but no news is good news, start my official week one menu as above posted tomorrow so will be right into the swing of it.

ok here is week 4 on the 6 week meal pricing challenge.....
Chowmein
Serves 4
Ingredients:
Oil (grape seed oil) $0.50
250 grams of mince $ 3.40
1 onion (chopped)$ 0.56
2 beef stock cubes (or flavouring sachet from 2 min noodles)$1.00
1 Clove of garlic $0.25
1 small tin of tomato puree (optional) $2.70
1 tin of budget tomatoes $1.20
Dash of tomato sauce$0.50
Dash of worchester sauce$0.50
Veges$1.50
Handful of spaghetti noodles (or 1 packet of 2 min beef noodles)$1.64

In a big saucepan add the oil then the onions, garlic and mince stir this till mince is browned then add the tin of tomatoes and tomato puree if you have it, add worchester & tomato sauce to pot and then either add 2 beef stock cubes or the flavouring sachet from the noodles and add 1 ½ cups of water plus add noodles S&P simmer this for 20 min’s and serve with nice crusty bread or scones.

Total Costing $13.75

Rhubarb Fool
Serves 4
Ingredients
350 grams of rhubarb $0.00
55 grams of caster sugar $ 1.00
1 orange (juice only) $0.90
150 mls of whipped cream$1.20
1 egg white beaten$0.30
Water $0.00

Place the rhubarb, sugar & orange juice and enough water to cover the rhubarb in a medium pan, boil rapidly until rhubarb is soft.
In another bowl, fold the egg whites into the whipped cream. When the rhubarb is soft fold it into the egg white and cream mixture, reserving a little bit of the rhubarb to use as a decoration.
Spoon the fool into dessert glasses and top with the reserved rhubarb and serve.

Pork Fried Rice
Serves 4
Ingredients:
Pork Pieces about 250grams $4.00
1 Onion (chopped) $0.56
1 clove of crushed garlic$0.25
2 Cups of cooked rice$1.89
1 Carrot (cut into sticks) $0.43
Corn $0.75
Peas $0.75
Soya Sauce $0.50
S&P $0.20
Oil $0.50

In a large fry pan add the oil then the chopped onion the garlic and the pork pieces (cut into small pieces) lightly fry these and then add the carrots, corn & peas and leave to simmer.
Rice
At the same time as you start to cook this dish add 2 cups of rice to a saucepan and just cover with water about 1 inch past the rice, bring to the boil and as soon as it starts to boil give it a stir and turn the heat off, cover with a lid and then leave for 15-20 min’s, don’t even peak at it till that time is up it will cook in its water.
Once the veges and rice are all cooked combine the two pots and then season with S&P and taste and then add Soya sauce a good splash.
This is then ready to serve

Bread & Butter Pudding
Serves 6

5 slices of bread$1.00
1 teaspoon of ground cinnamon$0.20

4 tablespoons of butter or margarine$1.00

2 eggs $0.60

Spread the bread with the butter or margarine, using a diagonal slice cut each piece in half, arrange in a greased dish slightly overlapping, with butter side facing upwards. As you add the bread, sprinkle with the sugar, cinnamon & raisons
Put the milk and eggs in a small bowl and using a whisk blend together and pour over bread mix, leave to sand for 15 minutes for everything to absorb, and then cook in a moderate oven or 30 minutes or until golden brown. Serve with runny cream.
Pudding Costs $5.30 per Person $1.32

Quick & Easy 1 Dish Quiche
Serves 6 with salad or 4 on its own

Ingredients:
You must have these ingredients in it for it to work
½ cup of flour $0.25
½ teaspoon of baking powder$0.20
1 cup of grated cheese $ 1.50
3 eggs$ 0.90
1 & ½ cups of milk$1.50
1 Tablespoon of oil$0.50
Extras to add $3.00
Mix all above ingredients together, and add cold mashed potatoes, or mixed veges, mushrooms, or really what ever you have in your fridge tomatoes, onions, peppers, ham or bacon even chicken.
Mix all together and pour into a greased quiche dish, and cook for 45 mins at 180c this forms it’s on crust when cooking

Chicken Tarragon & White Wine Casserole served with scalloped potatoes and peas.
Serves 4

8 Drumsticks $ 9.60
1 cup of White Wine $2.00
3 cups of Chicken Stock$1.50
2 Onions (in half circles) $1.12
Onion Soup $ 1.00
4 Cloves of garlic$ 0.40
¼ cup of Tarragon $ 1.75
500 grams of peas$ 1.50
5 Potatoes$3.00
250 mls of cream$ 2.20

Brown the drumsticks in hot oil, when completely brown remove to the side of pan if enough room or place in a warm oven, add garlic and onions, add chicken back to the pan and add the white wine or if omitting wine add the 1 cups of chicken stock and then the chopped tarragon, let it sizzle & Bubble while stirring to get all the good bits off the bottom of pan, then add the remaining 3 cups of chicken stock and bring to a simmer, once simmering add a lid to the pot and simmer for 45 minutes.

Scalloped Potatoes
Mix together the cream and the onion soup and give a good stirring too, parsley can be added if required. Chop the potatoes into slices and then layer in a greased casserole dish, place the cream mixture over the top and back for 45 minutes or until potatoes are cooked, grated cheese can be added in the last 15 minutes to give a nice coating.

Peas
Boil water and add salt peas and some mint, cook until tender

Seasonal Vegetables

Poach the fish in 500 mls of the milk in a frying pan, stud the onion with the 4 cloves in each corner and add to the broth, with the bay leaves. Bring the milk to the boil then reduce and simmer for 8 mins. Lift the fish out onto a plate and strain the milk into a jug to cool.
When fish is cool enough to handle flake it into a baking dish

Hard boil the eggs and then when cooled peel and chop and place over fish mix and scatter with chopped parsley.

Sauce: Melt half the butter in a pan, stir in the flour and cook for 1 minute, take off the heat and add a little of the fish poaching liquid and stir till blended. Continue to add all the milk mixing well until you have a smooth sauce, then return to the heat and bring the sauce to the boil for 5 mins until it coats the back of a spoon, season with salt & pepper and pour over fish. Sprinkle with nutmeg.
Assemble the bake and put on top the mashed potatoes using the last of the fresh milk, fluff up the potatoes with the fork and sprinkle over the grated cheese and bake for 30 -45 minutes.

Serve on it’s own or with seasonal vegetables

Corn beef with seasonal vegetables

Place corn beef in a slow cooker and place unpeeled chopped vegetable around it, then pour over golden syrup a good dash of vinegar and sprinkle with cloves then S&P, leave to cook for 6-8 hours.

Mustard Sauce
1 egg
1/4 c sugar
1 T flour
1 t mustard
1 c water, from corned beef
1/4 c vinegar
Sauce Costing $1.20
Beat egg and sugar, add flour, mustard, and then stir in liquid gradually. Microwave on high until thick or simmer slowly in a sauce pan.
Vegetables
Cook carrots in salted water and then drain and place 1 tablespoon of honey and 1 tablespoon of butter, with it, Silver beet steam in a pot with hardly any water drain and serve.

In a frying pan heat the butter and add the vegetables and sauté for 2 minutes, stirring all the time. Add the sugar, water and soy sauce then remove veges and add the beef. Brown the beef on both sides, replace veges, and cook till tender about 3 minutes.
Serve with rice

BBQ Lamb Chops with carrots & potatoes

Trim & Bone the chops and form into circles to make circles Drain the juice from the pineapple and soya sauce, garlic & mustard & wine to the juice. Marinate the chops for 2 hours or longer.
Remove chops and grill on a rack for 7 mins each side.
Add crushed pineapple to the marinade mixture then heat with corn flour and S&P to taste.
Serve Chops with mashed potato and carrots.

Cook Carrots and potatoes in a large saucepan, when veges are barley cooked, place the fish over top of the potatoes. Cover and cook for 5 mins.
Prepare the white sauce in a roux method melting butter, adding flour then slowly stirring in milk, stir on a low heat till thickened.
In an ovenproof dish place in this order, fish, carrots, potatoes, and then shred the spring onions and pour over the white sauce.
Sprinkle grated cheese over the sauce, place the bacon rashers and tomato over the top and grill until golden brown and the bacon becomes crisp. Serve with lemon slices and parsley.

Thanks very much Kob, have just printed off your recipies and am hoping to give sum a try, have already used your idea of having cheap desert, e.g. ice cream and fruit salad, fruit salad can be soo cheap at the moment at paknsave, when i make a cheaper meal, e.g. fish pie and peas, thank you so much, look forward to the next installment, so many ideas and all priced out to help with the weekly shopping bill, that just seems to keep going up, so thank you again

angel361 I made a recipe book for my kids and had photo compilations for each meal I made so they would always have recipes they loved available to them, Rachbabe asked me if I would sell one and I did, its not something that I have advertised it was just a one off. Thanks for the kind words too, I always made my shopping strectch by adding desserts to suppliment the income and fill the tummys. Happy cooking everyone

I have been reading this thread on and off since Kob started it. I'm gonna have to restart again because mrwhiskey and i are on the edge of signing on the dotted line to buy a 20 acre lifestyle block. All our money will be tied up with that. Over the last few years mum and dad have given us kids money and I'd put it away until winter and buy a fruit tree. So far i have 1x cherry, 1 x mandarin, 1 x tangelo, 1 x pink guava, 1 x green gage, 1 x peach, 1 x plum, 2 x apricot, 2 x apple. They are all self fertile and in pots ready for when we move.
I love growing my own fruit and veges

This weekend I'm making a meatloaf, macaroni cheese (that even nicer when its left to go cold and then reheated lol), chicken macaroni supreme, a fish pie (done in the slow cooker ), and chicken pizziola (chicken breast fillets used as a pizza base) all to put in the freezer in meal servings so i don't have to cook during the week. All this will last 2 weeks and during that time i write a shopping list for the ingredients for the next batch of cooking. I work afternoons and the last thing i want to do is think of what i want for tea and cook it before i go i don't get much time during the day to do all i need to do as well as spend an hour cooking tea.

my bargain for the week was 5 fish heads for $4 yuk you might think, BUT i boiled them up with some thyme, and an un peeled onion, some black pepper and loads of salt and a bay leaf, cooked for 45 mins then strained the stock and left the heads to go cold,in another large pot I fried off some onions, carrots celery in oil and then poured the stock back on brought to the boil added black pepper corns, then took the meat of the fish making sure no bones were add, and put into the soup, take the bay leaf out & blend and thickened with a little cornflour and water, added some cheap fish I found cut in very small amounts simmered for about 15 minutes and served with a dash of cream and parsley.For about $8 this made about 20 bowls of soup, not bad for 40 cents a bowl. The cats enjoyed the fish bones emmensley

I just picked up (tonight) 2 huge trays of chicken frames (5 on each with heaps of meat attached). The plan is chicken soup... and they were $1.60 per tray..... mmmmmmmmmm

Fabulous specials at Pak'n'Save this week.

Got the best mince "Prime" at $8.99 kilo - brought 8 packs around the $5.50 mark... not bad to feed 4 adults.
Then they had chicken tenderloins, which I treat like boneless Skinless chicken breasts and use in stir frys and things like butter or satay chicken.
for $10.99 kilo so I brought 8 packs of those at around the $7 mark... so another great price for our family.
I saw on TV last night that New World had chicken drumsticks at $5.99kg so will stop in on the way to work and pick up some of those as well.... they are great for crockpot dinners... I have a chicken curry crockpot mix I brought ages ago but haven't had the chicken pieces to try it with.
Then all I need to do is to wait to rump, pork and Lamb is on special and my freezer will have a full compliment. I haven't meat shopped in ages so it was looking a little sad. I seem to do that stock up over a few weeks and then run it down.

made this yesterday as my dessert for work fedd 8 wonderully could of feed 12 perfectly with a bit of cream or icecream, it was absolutely divine.
Sticky banana and date pudding with butterscotch sauce. Serves 6-8

1 cup chopped pitted dates; 1 tsp baking soda; 100gms butter; 3/4 cup caster sugar; 2 eggs; 1 tsp vanilla; 1 1/4 cups self raising flour; 2-3 bananas sliced.
1. Preheat oven to 180*. Spray a 22-23cm square cake tin and then line with baking paper
2.Place the dates in a small saucepan or microwave bowl with 1 cup hot water. Bring to the boil, then add the baking soda. Stir well and allow to cool for 5 minutes.
3. In the meantime, using an electric mixer, beat the butter and sugar until fluffy and pale. Add the eggs, vanilla and flour then beat in the dates and their liquid. Mix in the banana slices then pour the batter into prepared tin. Bake for 40-45 minutes.
Serve with butterscotch sauce poured over, and ice cream or whipped cream.

For the sauce
1 cup brown sugar; 100gms butter; 1 cup cream.
Place all in a small saucepan and stir over medium heat until it comes to a good boil. Boil for 1 minute, then pour over the pudding.( I did my sauce in the microwave for 1 minute on high and it was lovely)
A while ago when I made sticky date puddings, I did them in muffin pans. I froze what we didn't use, and then reheated them in the microwave, and made a new batch of sauce.

I have been watching this thread from time to time and have made a pile of the recipes and ideas on here so thank you everyone.

One question for Kob, where do we get your recipe book from? I checked but you don't have any auctions? Is it something I can buy?

I could always go through this thread and copy and paste everything but see someone else said about this book and thought it may be quicker asking haha

I made a recipe book for my kids and had photo compilations for each meal I made so they would always have recipes they loved available to them, I was asked if I would sell one and I did, its not something that I have advertised it was just a one off, as there is smething in the pipeline for a venture later on in my life. Total Cost for Pudd $8.30 not bad for 8 or more people I recon it was delicious, and if you allow $3 for iceceam and then make a custard at $1.86 for 1 litre of milk custard powder & sugar $1.00 that makes a total cost for a divine desert of$ 12.30 divided by 8 =$1.53 PP or by 10 = $1.23 pp

here are week 6's recipes.......Lunch Pie with mashed Potatoes and veges
Serves 6

Flaky pastry $ 2.00
500 grams of mince$ 6.80
4 had boiled eggs $1.00
Small jar of black olives$ 3.00
Tin of tomatoes$1.00
1 Onion $0.56
5 potatoes $ 3.00
Mixed vegetables $1.50
Garlic $0.50
½ cup of milk$ 0.50
1 tablespoon of butter$0.50
S&P$ 0.10

In a frying pan add onion, mince & garlic add to this he tin of tomatoes and sir until cooked, sprinkle over the hopped hard boiled eggs and drained black olives stir and take off element and leave to cool.
Roll out pastry into two even squares and place the mixture on one half and put the top half over it and crimp the edges so that it seals, brush with egg wash and bake in a moderate oven for 45 mins.

Mashed Potatoes, cook in the normal way.
Mixed Vegetables, cook in the normal way.

Total Cost of dish

Ginger nut Surprise

2 1/2cups milk $1.50
3tbsp custard powder $0.50
2tsp sugar $0.20
500g Granny Smith apples $2.50
1 packet ginger nut biscuits$1.50

Make custard with milk, custard powder and sugar. Peel, core and stew apples in a little water. Crush ginger nuts. Place a layer of crushed ginger nuts in bottom of ovenproof dish. Cover with half the stewed apples then cover with half of custard. Repeat these layers once more. Bake at 120c for 20 minutes

Total dessert Cost $6.20 serves 6
per person $ 1.03

Robbie’s Curried Chicken with savoury rice
Serves 8

250 grams of butter$1.75
2 apples $ 1.00
3 onions$ 1.68
S&P
Garlic $0.50
2 packets of chicken noodle soup $3.00
1/2 cup of flour $0.50
1 cooked chicken $6.00
1 tablespoon of curry powder $0.20
1 tablespoon of brown sugar $ 0.20
1 teaspoon of lemon juice$0.20
½ cup of milk (optional) $0.50
Sultanas (optional)$0.50
Rice $1.00
Carrots & Peas$0.75
Soya Sauce$0.50

Cook chickens and allow cooling a bit while making the rest.
Fry onions in the butter, take off the element and mix the dry ingredients except the sultanas & apples, add to the butter mixture and cook a little.
Prepare soup with the lemon juice and chicken stock, add to the pan and the mixture, add garlic apples & sultanas & broken up chicken, no skin or bones, add more water stock or milk to thin it.
Cook slowly for 10 mins and enjoy.

Rice
Lightly fry some cooked rice with onion garlic peas and some shredded carrots add S&P and some light soya sauce.
Serve with the chicken mixture

Rub together & bind with water roll out cut into squares..
cut peeled apple into quarters an roll in squares$1.00
Place in greased dish, Baste with 1 cup hot water 2ozs butter$1.00 1 cup sugar $0.50 melted together until Golden brown 300-350 oven 3/4 hr. serve with custard$2.00 or ice cream$3.00 or just on its own

I am going to try this with my chicken frames in the freezer.
I am going to do it sightly differenty.. I am going to boil up my frames, let cool, skim and strip the meat... then follow the recipe....

Noel's Chicken Soup
1 - 2 cooked chicken carcasses (or cooked chicken pieces, whatever you have)
Approximately two litres water
2 chicken stock cubes
1 packet Kings Country Chicken soup mix
About 1/3 cup Pam's soup mix (for those outside NZ this is just a cheap and cheerful basic soup mix)
1 large onion, chopped
About 1 1/2 tsp mixed herbs (essential!)
1 tsp minced garlic (or two cloves, crushed)
All or any of the following winter vegies (you can only usually fit in 4 or 5):

1 potato
1 large carrot
1 reasonable sized piece of pumpkin
1 - 2 celery stalks
1 parsnip
1 kumara
1/2 a swede or turnip
Throw everything together in a large pot or slow cooker and bring to the boil. Cook slowly for as long as you want or until the vegetables and pulses from the soup mix are softened and cooked through. Remove all the chicken bones and enjoy, no need to thicken or blend. Makes a super thick, chunky soup. Yum!

Pork Skewers with Stir fry Vegetables
Serves 6
750 grams of pork mince$7.00
2 spring onion stalks $1.20
Dash of sweet chilli sauce$1.00
Parsley$0.20
Few bread crumbs$1.00
Grape Seed oil$1.00
Stir fry vegeatables$3.50

Mix together pork, breadcrumbs, spring onions, parsley. Form around soaked skewers and refrigerate for a good 30 minutes.
Then fry in grape seed oil, once cooked place on an oven proof dish and place in the oven.
Heat fry pan again and lightly fry an onion, some garlic & ginger and then add stir fry vegetables.
Serve

Self Saucing Ginger Toffee Pudding
Self-Saucing Ginger Toffee Pudding Batter:
1 cup flour$0.25 , 2 tsp baking powder $0.10, 2 tsp ground ginger $0.10, 1/4 cup soft brown sugar$1.00, 1/4 cup white sugar $0.50, 50g butter$1.00 1 tbsp golden syrup$0.50, 1/2 cup milk$0.50
Sauce:
1/2 cup soft brown sugar $2.00
1/2 cup white sugar$0.25
1 tbsp golden syrup$0.50
2 tsp ginger$0.10
2 cups boiling water$0.00
Method: Combine dry batter ingredients in a large bowl. Melt butter with golden syrup. Pour into dry ingredients with milk and mix. Place in greased oven-proof dish that is quite deep, Put sauce ingredients in a bowl. As you add the boiling water, stir until ingredients are mostly dissolved, then pour over the batter mixture. Bake for 45 minutes at 180oC. Serve with vanilla ice-cream or whipped cream. Makes 4 servings

Batter:

Mix together & dip the fish and cut savoloys into the batter and deep fry in hot oil, slice potatoes into chips and fry those twice, once at a low temp then drain and cool then the 2nd cook at a high cooking temp to make them crisp.
Drain well and serve with a lemon slice
