Fridge Muffin Recipe for Juffy Not sure if this is the one you meant but it is one I have used for years. My SIL had a small dairy and used to make this recipe up constantly. The whole mix makes about 48 muffins, but you can make a few at a time and mixture will keep in the fridge in an airtight container for up to 4 weeks. 5 cups flour, 5 tsp. baking soda, 2 tsp salt, 1/2 tsp. nutmeg, 3 cups bran flakes, 2 cups wheatgerm, 3 cups sugar. Place all these ingredients in a bowl and mix well. Combine well together 4 lge eggs, 1 cup soya oil, 2 cups plain yoghurt and 2 cups milk. Add to dry ingred. mix until just combined. Bake in muffin tins at 190 C about 15-20 mins. You can add a variety of inged. to this mix such as sultanas, chopped apple, dates, choc bits - limited only by your imagination.

Lemon Slice Shortcake(old recipe) 125g/4oz butter 1egg 1tsp baking powder,125g/4oz sugar,250g/8oz=4cups flour
Cream butter and sugar,add egg and then all dry ingredients.Divide in half press one half into sponge tin.I place other pastry half in fridge while i make the filling.
Filling
1 cup water,1 Tablespoon butter,1 cup sugar,3 Tablespoons custard powder,juice and rind of one lemon
Boil and stir together water,sugar,butter,custard powder and rind for 2 mins or until mixture starts to set like gelatin.Add half of lemon juice,mix and pour over shortcake.Roll out other pastry mixture and place on top of filling etc.Cook in a moderate oven for 20 mins or until slightly golden.Ice with lemon icing and sprinkle over coconut.

lemon icing Nowadys when i make icing(using water to mix) for cakes etc i dont have much sucess when items have to be placed in a container in the fridge(ant problem)the icing runs everwhere.When i made the icing for the above lemon shortcake i used milk instead of water and sucess icing has hardend and tastes great.I made a large amount of icing for the shortcake as i wanted the icing to be thick

Marshmellow bars 50g butter
300g marshmellows (I use mini)
175g ceral (I use cherrios)

Line a tin. melt butter in a large pot over a very low heat. Add mellows and melt, stirring. Remove from heat and add cheerios. Marshmellows set fast so go quickly - pour into tin and flatten with back of greasy/hot spoon.

Chocolate mousse 300ml cream
250g dark choc (use the best quality you can, and I think its nicer with at least 70%)
3 egg yolks
3 T liqueur or 1t of essence - this is for flavour, leave out if you want


Place choc in a blender and whizz, add eggs and liqueur. Heat cream until just about to boil (it starts to 'shiver') and add to blender. run machine until all the ingreds are mix thoroughly. pour into espresso cups or other small dishes and chill for about 3 hours.

This is very rich!!!

self crusting quiche 3 eggs

125ml cream (double if you can)
250ml milk

2T melted butter
1c flour
1t baking powder
1large onion
1c cheese grated

mix first three ingrdients, then add remaining ingredients.

Pour into a well greased flan dish and add bacon, pine nuts, tomato, spinach, etc.

Bake in a moderate oven till the middle is set, roughly 30 - 40 minutes. The more vege you put in, the longer it will take to set.

Dundee Cake 2 cups s/r flour,1/4 tsp ground allspice,1/4 tsp gruond cinnamon,1 cup sugar,375gms mixed fruit,90gms reduced fat butter,4 eggs, beaten lightly, 2 tbs Grand Marnier Preheat oven to 140*C. Coat springform pan with spray,combine the flour & spices in a med bowl, stir in the sugar & fruit,using an electric mixer, beat the butter, eggs & Grand Marnier til light & fluffy. Slowly beat the flour mixture into the wet ingredients. Spoon into prepared pan & bake for 1-11/2 hours or til a skewer comes out clean. The cake is best wrapped in plastic wrap & allowed to stand overnight before serving

Citrus slice Help! Has someone out there a receipe for Citrus Slice, the one that is no bake and has a tin of condensed milk and, I think, orange/lemon juice in it? I had a good receipe but cannot find it and have to do a 'plate'. Was easy and tasted good. Ideas please ladies and gents!!

This one from lisa is a chef... Cookie Time Cookies.
225g butter, ¾ C white sugar, ¾ C brown sugar, 1 tsp vanilla, 2 eggs, 2 ½ C flour, ½ tsp salt, 1 level tsp baking soda, 1 C choc chips or buttons. Cream butter and sugars until light and fluffy. Add vanilla and eggs one at a time. Mix together dry ingredients, except choc and add to butter mix. Stir in choc. Place dessertspoon full blobs onto baking tray allow plenty of room for spreading. Bake 180 C for 15 min.

#1568 Request for Yummy Citrus Slice 1 Pkt superwine biscuits crushed, 1/2 tin condensed milk, 3/4 C coconut, 1 lemon or orange (juice & zest), 125g melted butter.
Mix together, press into tin. Refrigerate. Ice with citrus lemon icing and refrigerate again before slicing. Yum!

yesterday I made banaba loaf and apple shortcake which was devine and easy...
apple short cake-
3 apples, peeled and sliced, 1 tablespoon sugar, 1 or 2 tablespoons water, 2 cups flour, 1 teaspoon baking powder, 125g butter, 1/4 cup sugar, 1 egg beaten, 1 to 2 tablespoons milk icing sugar - Put apples, first measure of sugar and water in saucepan and cook slowly until apples are soft. Sift flour and BP into a bowl. Cut in butter until it resebles coarse breadcrumbs. Mix in second measure of sugar and the egg. Add sufficient milk to form a firm dough. Kneed until smooth. Divide dough in half and roll out each peice to fit a 22cm square cake tin. Place one peice of dough in tin and spread apple over it. Lightly press remaining dough on top. Bake at 180 for 25 mins - when cold sprinkle with icing sugar and cut into squares - from the trusty edmonds cookbook!

Baked with grandaughter & grandad 5 yr old & 50 yr old had much fun making Belgian biscuits & icing them. It was one for me, one for the tray! Also made sour cream coffee cake & 3 things off these threads. Had to hide most of them, too much sugar!

chocolate oat cookies 250g butter softened, 3T sweetened condensed milk, 3/4 c white sugar - cream till light and fluffy - then add: 1 1/2 c flour, 1 t baking powder, 1 1/2 c rolled oats, 200g chunks of choc. Mix well. 180 for 15 - 20 minutes. Got this recipe from the back of a sugar pack. Gorgeous!

Incredibly easy cheese cake Crushed biscuit and butter base.
Top: Beat 250g tub of cream cheese and 1/4 cup sugar, disolve 1pkt jelly crystals (any flavour)in 1 cup boiling water and cool, then add to cheese, then fold in 300ml of whipped cream, fill base and chill.

We went on a picnic earlier in the week And we took choc oaty slice, very yum. This weekend will make the slice that tastes the same as the Cookie Time Cookies but so much easier as you put the mix in a tin and slice into squares. Have to make it regularly as my 16 year old sons friends come over and eat it all!!!!will make some muffins to for the lunchboxes next week. Will post the choc chip slice recipe when I have had a shower lol.

more recipes for Jaxma's book Thanks jaxma for all the time you are putting into making book two.
I received your first book some time ago and its fantastic.
here are a couple of my favorite recipes.

Coconut Loaf.
1+ 1/4 cups coconut soaked in 1 cup of milk for 1 hour.
Add 1 cup sugar, 1+ 1/4 cup of Self raising flour, 1/2 teaspoon salt , 1 teaspoon vanilla essence, and the grated rind of an orange.
1/2 cup of sultanas are an optional extra.
Place in a lined and greased loaf tin and bake in a moderate oven for approx 1 hour.
This is a very economical recipe, as it has no eggs or butter.

Meringues
1 egg white,
1 cup castor sugar,3 tablespooms boiling water, 1/2 teaspoon baking powder, 1 teaspoon vinegar
Beat egg white, sugar and water over a pot of boiling water until the mixture is thick and shiny, remove from heat, add vinegar and baking powder. Pipe onto a lined and greased tray. Bake in a slow oven for approx 1 hour until dried out.
