I've also made it like this inside a closed in fireplace.. cold winter's night - fire going - let it die down till just glowing and no flames; used a loaf tin, thick foil around the bottom and over the top of the dough. Placed the tin on some bricks, and closed the fireplace door.. baked till the top was golden and sounded hollow when tapped - about the same time as in an oven. Delicious..

I've also got an old pot belly fireplace outside that we sometimes cook on - I place a bbq circular plate on top of the opening, light a fire inside the stove, let it die down till there are just a few flames. Place the foil covered camp oven or a roasting dish with the bread inside, on top of the bbq top above the flames.. and bake.. Near the end of cooking, when it's almost cooked and the top is still pale, I take the lid off, place a thick layer of foil on top of the bread, and turn it upside down on the bbq top so the top browns.. truly yum!

Hi Shiyo.. you could also make griddle scones.. a usual scone dough - white, wholemeal, with dates or sultanas, whatever takes your fancy.. lightly grease a frypan and place pieces of scone dough that are about 1cm thick in the pan. Cook till golden on the lower side, and then turn - continue cooking till they're cooked through.. yum!

In my first posts on the first page I've included how to make Naan bread.. and there is another recipe in this thread also.. Both could be made in a hot pan on top of the fire.. so both might be of help.. Or try the Pita bread recipe I posted and cook it inside the firebox.. Have fun!

I bake differently in the camp oven It gets heated up empty, including lid. Then I take it off the fire and let the risen bread slide gently from its board into the hot pot. I only use generous amounts of bran on the dough so it doesn't stick. No fat! It will deflate a bit but that is no problem. Lid on and back into the heat of the fire. The bread will rise in its pot and cook in its own steam and develop a very nice fluffy crumb and crackling crust. If you use fat that will burn and often give it an off taste. If you have used enough bran the dough will not stick to the pot at all!

Wow. I've just found this thread Nice to see so many people passionate about home bread baking. Commercial cardboard just doesn't do it. If you can get access to a wholesale warehouse look out for Maximus flour, very high grade, much better than regular high grade flour, of course a couple of tablespoons of gluten flour helps too. I've just made three wholemeal loaves, one dozen rolls and a loaf of white minus the bit I pinched for my pizza base for lunch at 11 am. I usually use fresh compressed yeast, but have captured yeast using different forms, one using organic rasins was particually successful but a very long process.

I even use bread dough to make 'cakes' Usually the wholemeal one from earlier. Adding a bit of sugar, some eggs and dried fruit and beating it with my hand until elastic. It's a bit hard to give measurements and so much is done by feel.

Mmmm Oopie.. can we come to your place for yummies.. they sound so good!.. I remember a cake made from a bread type dough from when I was a teenager.. it had a lovely yeasty sort of flavour, and had currants in.. hadn't thought about it till I saw your post.. maybe it was something similar to what you make..

We do this "sweet breads" all the time Just use ordinary bread dough and add raisins or other dried fruit and chopped nuts. I make them into a plait or into buns. Eaten fresh with butter a delight! Or today I made a plum cake with bread dough as the bottom and plums and almonds on top. Once baked it gets liberally dusted with cinnamon and caster sugar. Must be eaten fresh on the day. Best lukewarm with whipped cream. Soon it will be apples on that cake.

I also make filled bread Roll out dough to a rectangleish shape a bit thicker in the middle. Grate an apple, a teaspoon of cinnamon, a tablespoon of brown sugar or two, some dried fruit and a bit of melted butter if you like - mix up and spread down the middle. Cut the edges like feathers about an inch or two wide and 'plait' them over the fruit tucking in the last few. Prove and bake. You can ice it with plain white icing if it lasts long enough to cool.

Bread Making I too have made my own because my pet hate is floppy bread. Why is it almost all bakeries have floppy non-crusty bread??
Its hideous.
So......I make it.
Nothing beats home made pizza either........yum........

I have a few different banana breads. Banana macadamia. 750 gram loaf. water, 125ml, margarine 2 tablespoons, banana mashed 3/4 cups, 1 egg, salt 1 1/2 teaspoon, sugar 3 tablespoon, milk powder, 2 tablespoon high grade flour 3 1/4 cup 3 teaspoon surebake yeast. add at beep or to nut dispenser, macadamia nuts roughly chopped 1/2 cups. Add all ingredients to bread pan in order specified use sweet cycle

Banana nut cinnamon swirl. eggs 2, milk 2 tablespoon, mashed ripe banana 100 grams, butter 1 1/2 tablespoon, sugar 1 1/2 tablespoon, salt 1/2 teaspoon, bread flour 425 grams yeast 2 1/4 teaspoon (Or if using surebake yeast, measure flour into scales using measuring cup then use 1 teaspoon surebake per cup of flour) add all ingredients to bread maker use dough cycle. filling ingredients: soft butter 1 1/2 tablespoon, brown sugar 3 tablespoon, cinnamon3/4 teaspoon, chopped pecans 3 tablespoon. When dough is ready roll into an oval aprox 23cm wide, spread butter over dough mix sugar and cinnamon, sprinkle over dough, sprinkle pecans over sugar, roll dough into cylinder put cylinder into buttered 25cm loaf tin rub additional butter over top of loaf cover leave inwarm place to rise 1 hour, when risen bake in preheated oven 180oc 30 -40 min until top is golden

banana and peanut butter 2 bnanas mashed, crunchy peanut butter 4 tablespoons, milk, 1 cup, butter 2tablespoons, melted and cooled (or can use 2 tablespoons oil) sugar 2 tablespoons, salt 1/2 teaspoon, 3 1/2 cup high grade flour, 3 1/2 teaspoon surebake yeast. add to bread pan sweet cycle, check liquid amount with this recipe too (I usually check with any recipe that uses bananas because I have found that sometimes I need to add more flour or liquid depending on the size of the bananas)

Thanks Gazz ... and thanks too Bunny.. for your help re the bananas.. I didn't see the article Bruce.. sure can smell hot cross buns when walking into any supermarket at the moment! It's no accident they place them close to the door, and checkouts.. nothing to compare with homemade though..

Hi Bakertrips.. it depends on the size of what you've made.. for rolls about the size of a small cup, it would take about 10-15 minutes.. they'll look a light golden brown.. tap them with your finger nail or a teaspoon, and they'll sound slightly hollow. Hope this helps..

I was so inspired by this thread I nicked my mums breadmaker, and stole a partial idea from post #39 I've just made homemade ham, garlic and mozerella cheese scrolls. I let the breadmaker do the dirty work with kneading, then rolled it out as best I could (first time and it could of been better I think) I then smeared over the top of the dough a mixture of 2 tsp minced garlic, 1/4 tsp dried parsley and a little olive oil to combine, over top of this I sprinkled some chopped up ham steak and grated moz cheese, then rolled it up and sliced into 1 inch slices, baked on baking paper at 150c for about 20 mins. They taste devine, and will go great with soup, a small loaf of dough got me 18 scrolls. Oh and I only added the ham as I happened to have it to use up, it will be cheese and garlic scrolls in future, every weekend I think ! :)

thanks bunny just another quick question re freezing could this be done with the hot cross bun recipe on here? would you just freeze after the dough cycle into the sizes required? how long would doughs be alright frozen for and im assuming when you take out as required you would leave to rise? many thanks in advance.

My yeast expired many years ago but lives on Made bread for the first time in years today. Bump for this and I would think not freeze the dough. It would kill the yeast.

Bread dough can be frozen Unbaked yeast dough (bread, pizza, rolls) can be frozen for about 1- 2 months. It is best to freeze yeast dough after shaping and before the second rising period, but the dough may be shaped after it has thawed, as well. Wrap the dough tightly in plastic wrap and then place it in an airtight bag to freeze.

I've frozen bread dough too.. I've kneaded the dough through to the end of the first stage where enough flour has been added to form a firm and not sticky dough. I then cut it into pieces.. 1/ the size required for pizza - about the size of 1/2 to 2 cups equivalent, depending on how thick you like your pizza. 2/ In a size which would fit a loaf pan to make a loaf of bread, or some rolls, etc..etc.. I wrap the pieces into close fitting plastic wrap, place into a plastic bag or a container, seal and freeze. When required, I take a piece from the freezer, thaw it, still closely wrapped, for several hours in the fridge until the dough is again pliable. I then knead it lightly on a floured surface, shape it and place it on baking paper on a slightly warmed tray or in greased pans or tins, and leave to rise in a warm place till doubled in size. Bake as usual. I prefer to freeze it this way, and knead then shape as above, as I find the dough seems fresher somehow.. It works well..
