Whitebait Fritters 125g whitebait
1 egg
generous lump of butter
salt & Pepper
sea salt
1 lemon

Lightly beat the egg and stir in the whitebait. Season with salt and pepper. Pour onto a hot, well buttered frying pan. Cook the pattie till it's golden on each side. Present with ground sea salt and a very generous squeeze of lemon juice on top. Enjoy with a salad on the side.

Gluten free Pizza 2 cups gluten free flour
3 tsp baking powder
1/4 tsp[ salt
1 tsp oregano
1 tbsp olive oil

Mix all of the above with water until combined. Form into a ball and press out into any shape you desire. Brush with tomato paste and top with fried bacon pieces and chopped fried onions then top with sliced stuffed green olives, chopped tomatoes, cheese, chopped sundried tomatoes,and pineapple. Sprinkle over 1/2 tsp oregano salt and pepper and bake 200 degrees about 10-12 minutes.

Corn Fritters 1 small tin creamed corn
2 tbsp butter
1/2 cup GF flour
1 tsp GF Baking Powder
1 tsp salt
Pepper
2 eggs Melt butter, add corn.
Beat eggs then addflour and baking powder and add that to the butter and corn. Fry in oil

Rice 1 cup Basmati Rice
1 tsp Maggi Gluten Free chicken stock powder
1/2 small red onion diced
1 tsp tumeric
2 cups cold water
Salt & Pepper
Cook in microwave 12 mins (covered) When cooked add 1/2 cup frozen peas and corn and leave to sit 5 minutes. Nice to have with gluten free sausages

Honey Pork Stirfry - delicious and tasty and makes a lot.
1 chicken breast
2 tsp sesame oil
1 red onion (chooped)
3 small spring onions(chopped on an angle)
4 cups broccoli, cauliflower,1/4 red pepper, 1/4 yellow pepper
1 carrot (in julienne strips)
2 stalks celery (sliced on an angle)
1 tsp grated fresh ginger
1 tbsp Tamari Soy Sauce
2 tbsp crunchy peanut butter
2 tbsp sweet chilli sauce
1 pkt Simple Spaghetti
3/4 cup water with 1 tsp Maggi Gluten Free Chicken Stock Powder
2 tbsp runny honey
1/2 tsp rock salt and pepper
Heat oil and fry onion and ginger until onion is soft. Remove from pan. Add chicken (slice breast in half then cut into strips (and coated with cornflour) and fry until it turns brown. Add vegetables and sauce.Meanwhile cook spaghetti in water to cover in the microwave for 7 minutes on high then add to the pan. Sprinkle over cashew nuts. Enjoy!

and for dessert Rhubarb and Coconut Cake
150g butter or olivani if dairy free), 1 cup sugar, 3 eggs, 1/2 cup coconut, 1 1/2 cups Bakels flour, 3 tsp baking powder, 1/4 to 1/2 cup milk (or So Good Lite Milk if dairy free), 4 sticks rhubarb, 2 Tbs raw sugar, 1 Tbs coconut, 1 tbsp rolled oats (if intolerant to these leave out) . Cream butter and sugar, add eggs and mix well. Add coconut. Add flour and baking powder. Mix in milk to just combine. Remove stringy fibres from rhubarb and chop into 2cm pieces. Fold into cake mixture. Pour into paper lined cake tin. Mix raw sugar, coconut and rolled oats together and sprinkly over cake. Bake at 180 degrees for 45 minutes. Serve warm with sifted icing sugar

melford thanks so much for that recipe really enjoyed it,have had it a few times since,I am really struggling with g/f I went carb free and my dr went right off at me,I dint tell him until today,I am so badly consipated that its not funny,is trail mix g/f?.

earthangel - re trail mix - I would need to see the recipe to know if trail mix is gluten free, it can be but it depends on what is in it. For the constipation have 1 dessertspoon of ground linseed per day in something that you eat or drink to relieve the constipation.

I put whole linseeds, pumpkin seeds, sesame seeds and sunflower seeds in my bread. This mix is delicious to snack on too and constipation is a thing of the past.

earthangel - it is important to get ground linseed as whole linseeds pass through the system too fast to get any real benefit especially when dealing with constipation. My father is a diabetic and we found ground linseed work amazingly and the very next day.He sprinkles it on his porridge every day or you can use it in baking or just drink it with orange juice

Timaru People Just for your information LE CREN's Fish'n'chips are now doing Gluten Free Sausages (Plain and flavoured) and GF Corn Fritters. He is also looking a doing a GF batter for fish (Cook on demand) if there are enough people interested.

Delicious gluten free lolly cake 100 gm olivani or butter
2 pkts Arnotts Rice Biscuits
1/2 tin sweetened condensed milk
180 gm baby marshmellows (roughly cut)
coconut (to roll the log in)
Melt olivani or butter and add all other ingredients.
Lie mixture on a long piece of gladwrap which has coconut on it and roll into a log. Place in freezer and when set cut into slices

Sandwich Bread Recipe 2 tsp yeast
1 tsp sugar
1/2 cup water
Add the yeast and sugar to 1/2 cup warm water and leave 5-15 minutes in a warm place until frothy.
In a bowl put the following
3 cups bakels 100% GF Bread Mix
1 tsp guar gum
1 Tbsp milk powder
1 cup water
1 tsp white vinegar
1 tbsp oil
Add yeast mixture and mix well.
Put in breadmaker and bake on basic loaf for 3 hours
