Just wanted to say I'm loving the Vivaldi potatoes. They are available at New World, but I don't know where else. They are versatile in use and a nice smooth, buttery texture. Very neat oval shape.

- Tamarind potatoes.
4 large potatoes, peeled and cut into even-sized cubes-
1 or 2 cloves garlic, minced- 3 cloves shallots, sliced thinly-
1 chilli, de-seeded (if you like it spicy, don't de-seed)For the sauce (mix all these up)-
1 tbsp tamarind pulp (aka Assam), mixed with 3tbsp water* Strain the mixture to remove the seeds. If you don't have tamarind pulp, use 2tbsp lemon or lime juice
.- 2 tbsp kecap manis (aka Indonesian soy sauce)* You can substitute with thick, dark soy. 
- 1 knob palm sugar (aka gula melaka or jaggery)* You can substitute this with 1 tbsp regular sugar if you don't have this.
The idea is to concoct a sauce that is sweet and tangy. Do note that this dish has very little sauce - just enough to coat the potato cubes. Taste test as you go. If you like it sweeter, add more sugar. If you like it more tangy, add more tamarind (lemon juice).
1. In a skillet, panfry potato cubes in oil till they are half cooked.
2. Add in garlic, shallots and chilli and continue frying till the shallots have softened and the potato cubes have crisp edges. Make sure your flame is not too big.
3 Just before dishing them out, pour in the tamarind mixture and stirfry to coat all the potato cubes evenly. Allow the gravy to bubble and thicken slightly.
Taste test - you may like to add some salt. Sprinkle finely chopped spring onions (the green part) for some colour, if you like (I used coriander)
.4. Serve immediately.
These were a hit with the family a nice change since we seem to eat quite a few potato side dishes.

In the summer when I have left over cooked new potatoes, I love them cooked this way
I have an electric pie maker ( similar to a toastie maker but deeper) turn on and get hot then put the cooked whole potaotes in drizzle with oil and some fresh rosemary and grind some rock salt on. Put the lid down...better if you have to squash the potatoes and leave to heat through and become crunchie as. Grandkids love them and so quick and easy.

"Scalloped Potatoes
layer thin slices of potato and onion with salt and pepper then pour over milk and some dobs of butter. Bake with the lid on for 1/2 hour then remove lid and add to the top breadcrumbs and grated cheese till cooked. You can add thin slices of pumpkin, etc to it if you so like.

Scalloped Potatoes
I use a tin of condensed soup usually chicken and add a can of milk and pour over the potatoes and bake as normal. You can use any flavour mushroom is nice too.

This is one Ive used for years and always popular
Peel, wash & slice potatoes, layer potatoes, diced onion, chopped bacon, garlic flakes OR crushed garlic - layer this until dish is full, pour over cream until 2/3s full. Cover with tinfoil and bake 180 for about an hour (maybe longer depending on the size of your dish - we always have a big roasting dish of this coz Im feeding 6, so not sure how to make a smaller one) when nearly cooked remove tinfoil and put on top broken bread (bread broken up into little pieces) until covered, then cover with cheese, bake until cooked - THEN EAT....Yummy....

Scallop Potatoes with cream and chicken soup
Layer thinly slice potatoes and finely chopped onion... potatoes being the last layer. Mix together cream and a pack of cream of chicken soup (can add a little crack pepper, crushed garlic, whole grain mustard for more flavour) pour over potatoes and onions. Sprinkle with grated cheese then sprinkle with breadcrumbs (so cheese doesnt burn) bake at 180deg til cooked

My Fave
Boil 4-5 med potaotes cut in to cubes. Heat oil in a large frying pan, add potatoes, 1/2 t smoked paprika, 1 clove garlic - saute 3-4 mins. Add 6 eggs beaten with 1/2 cup cream. When egg almost set layer on top 200g slice ham and 1/2 cup grated cheese. Place pan under hot grill 'til golden. The whole family just loves this one!

Quick Potato Cheese Bake
4 cups mashed potatoes 1/2 cup Parmesan cheese 2 eggs, slightly beaten 1/2 cup grated cheddar cheese Combine potatoes, Parmesan cheese and eggs. Season to taste. Place in casserole. Top with cheddar cheese and bake for 25 minutes at 350 degrees.

Not so quick 'n' easy - but yummy
2 teaspoons olive oil 4 rashers bacon, chopped 1 small brown onion, chopped 1 garlic clove, crushed 1.5kg potatoes, peeled, thinly sliced 300ml carton light thickened cream ½ cup low-fat milk 1½ teaspoons chicken stock powder ½ cup grated tasty cheese METHOD 1. Preheat oven to hot, 200C. Lightly grease an 8-cup capacity (25 x 32cm) baking dish. 2. Heat oil in a large frying pan on high. Sauté bacon, onion and garlic for 4-5 minutes, until onion is tender and bacon is golden. 3. Layer potatoes and onion mixture alternately in prepared baking dish. 4. In a large jug, whisk together cream, milk and stock powder. Pour over potatoes. Cover with foil. Bake for 1 hour, until potato is tender. 5. Remove foil. Sprinkle with cheese. Bake a further 15 minutes, uncovered, until cheese has melted and is golden.

"Here goes "Very Fattening!!!
In a greased casserole dish, layer cooked potato pieces (diced or sliced) chopped onion, grated cheese & (optional) diced, cooked bacon pieces, grated carrot. There is a "Creamy Garlic Mushroom" powder you can buy in a packet (sorry, cant remember the brand name, but it's usually in Vege Section) which I add to a 500 ml bottle of cream & slightly whip & pour over the potatoes. OR add a touch of chicken or mushroom stock, garlic salt & a level tblsp of cornflour to cream & slightly whip (always taste & add extra stock as desired to personal taste) Finally, cover with grated cheese, sprinkling of cracked pepper & then 50gm packet of crushed chicken chippies. I keep any leftovers from big packets just for this & any flavour chips can be used (except salt & vinegar). Bake in a moderate oven for 45 -50 mins. Do not over fill dish as cream will bubble over the side once hot. posted by pocketmouse

potato bake
i just slice up my potatoes or cube them and put into a casserole dish then tip either abit of milk or cream and grate cheese over the top and bake in oven until potatoes are tender and top is brown or you can zap in the microwave first then brown up in the oven

I do the
same as the above recipe by shazza but I sprinkle chicken stock and crushed garlic over it and chopped bacon and tomatoes too. Then pour 500ml of cream over the final product and bake for 1 hour. Amount of spuds vary but i usually use about 2kg.

scalloped potatoes
scalloped potatoes is the same thing as potato bake. It is in the edmonds cook book here u go. 4 med potatoes peeled and thinly sliced. !onion finely chopped or sliced (which ever u prefer) 1 cup grated cheese salt and pepper 1 cup of milk. Place a layer of potatoes in medium sized casserole dish, sprinkle with some onion cheese and salt and pepper. Repeat until all ingredients are used ending with a cheese layer pour over milk bake covered 180 for 40-50 mins or until potatoes are tender. Remove cover after 30 mins.

TOP TIP: Try this one Boil and slice potatoes. Layer in dish, with potatoes, grated cheese, pepper till you reach the top. Mix up 1-2 packets of Maggi Leek & Potato soup (with milk) pour over top. Finish off with grated cheese on top and into the oven.

Slice clean unpeeled pots and overlap in metal baking dish, little pepper bacon and diced red onion, layer three times and finish with grated tasty cheese. Put into preheated oven 200c until cooked and crunchy.(45 to 60 mins) one can play around with ingrediants but the crispy cheese etc makes this dish. Basic and easy.

Boil new potatoes, place in a single layer in baking dish and crush a little. Spray with olive oil, sprinkle with rock salt and finely chopped rosemary. Bake in a hot oven until tops are slightly crispy.

I tried Kirineshas Potato Torte last night for a dinner party. It was ok but I wouldn't do if again. A lot of creme fraiche.... I had to serve it up quickly as it was all oozing out everywhere . I guess I should have held back on that!

I have made indy's Warm Chorizo. Potato and Mint Salad a few times & it's fast becoming a 'go to' when I want something tasty without too much fuss.

I do not even peel them, just boil and everyone peels themselves at the table - much less work for me LOL :)
But yeah - butter and a bit of salt on top of an Agria is heaven!
Needs only a salad (or a steak) on the side.
