110 | I made some nice gluten-free corn fritters last week using raw grated kernels from four smallish cobs, two eggs, 1 tab fine polenta, 1 tab tapioca flour, salt. Beat egg whites until at least soft peak stage., gently but thoroughly fold in the egg whites with a spatula. I make fritters with 2 tablespoons of mixture, which gives about 9-10 fritters. Turn when browned on one side, gently press with back of slice, cook other side, then serve. 115 | Bacon is also nice to add for extra flavour. I don't measure anything, just start with grated potato or courgettes, add whole kernel corn, onion, herbs etc. and go from there.
