I don't even have a tiara, let alone a blardy crown & have no aspirations to obtain one at all,,,happy in my own skin, as I reckon you girls are.

Anyway back to the corn fritters - the ones the OP is talking about I have tried but in no way would I call them fritters as there is no flour in them and the are basically just fluffy omelettes with corn in them.

Much prefer them made with flour.

I made some nice gluten-free corn fritters last week using raw grated kernels from four smallish cobs, two eggs, 1 tab fine polenta, 1 tab tapioca flour, salt. I fried them in plenty of butter, they turned nice and crisp. They held together well and the leftovers were great for breakfast with bacon and eggs.

I sometimes whip the egg whites & fold gently into the batter & fry in a butter/oil mix & this keeps them light.

Agree with the beaten egg whites....

My current recipe is so popular with my ill son (who often can't keep food down due to nausea), that we're having them 2-3 times a week! It takes just a tad more time, but with the cooking of two and one being fresh, you really get the "sweetcorn" flavour. I prepare 9 cobs' worth at a time, giving me two extra meals to freeze for cooler days....

My Corn Fritter Recipe:
3 plump cobs of sweetcorn
1/4 cup cream
2 large eggs
1/3 cup s.r flour (or 1 cup flour and 1/3 teaspoon baking powder)
parsley finely chopped
one spring onion, chopped
salt and pepper to taste
a little butter and oil for cooking

Method:
Nuke 2 cobs of corn for 3m and 30 secs. Cut from cob when cooler, scraping cob with back of knife. Place in bowl till cold. Chop finely the spring onion and parsley, add to bowl with salt and pepper.

Cut corn from cob of one uncooked cob onto a plate, cutting 1/2 way through kernels on first cut, then scraping rest of kernels onto plate. Place half this corn into the bowl, put other half into mini wizz or blender with cream and egg yolks, wizz till finely chopped, add to bowl.

[At this stage I'm cooking bacon slices in the large electric pan, and frying some halved tomatoes]

Fold flour into the mix in the bowl. Beat egg whites until at least soft peak stage., gently but thoroughly fold in the egg whites with a spatula. I make fritters with 2 tablespoons of mixture, which gives about 9-10 fritters. Turn when browned on one side, gently press with back of slice, cook other side, then serve. Yummmmmm (and any leftovers are great cold, too)

Yum AW ...I can almost smell it cooking from here ;o)

I have just this minute finished cleaning out my 6mx4m garden shed & it's true ...the more room you have the more stuff you keep just in case it comes in handy!
If my corn was ready I'd have the same as you & your son, for dinner.

Bacon is also nice to add for extra flavour. I don't measure anything, just start with grated potato or courgettes, add whole kernel corn, onion, herbs etc. and go from there. I use minimal flour and only 1 egg, and if they don't bind together very well just add a bit more flour until they do.

And I am lazy and pour the whole lot into my trusty fry pan, start on he top and then into a hot oven and while it turns into a frittata I make a big salad. It doesn't taste the same as small fritters, but sooo much less work.
