Ive just done the weeks baking, what did you bake

I've just made the Hungry Boy Cake - 2 cups flour, 1 teaspn baking powder, 1 teaspn baking soda,
1 teaspn mixed spice, 1 cup sugar, 1 cup sultanas,
1 cup stewed apple, ½ cup milk, 2 dessertspns butter.

Mix dry ingredients, add melted butter, milk and apple. Bake 150c x 1 hour

And also Pam's Yoghurt Lemon Cake which is so yummy. Baking is quite therapeutic too Lythande, and my husband who does hard manual work takes a good slab of cake in his lunchbox every day - sometimes two or three! - alongside his homemade soup (made with homemade stock), the chicken leg and various other healthy and wholesome foods. And we collect my aged mother and feed her up every Sunday and she does enjoy a piece of cake ("well maybe just one more") after her healthy and wholesome lunch. Don't be too judgemental and boring please! Keep away from cake if you want, but don't grizzle because some of us love to bake and share it round!

Well said libby51 all recipes can be converted to become healthy, i have a couple of recipes (muffins)that i had to adjust to become low carb. It takes a bit of trial and error but it can be done.

Here you go Copied from earlier thread, Toffee Pop Truffles:
2 packets of toffee pops and 250g of cream cheese. Crush biscuits in a wizz add cream cheese, roll into balls then into coconut and chill. AWESOME!!

I'm making Date Bars.. yummy!.. Here's the recipe: Cream 100gms butter or marg with 100gms sugar and 1 tablespoon milk. Beat and add 2 eggs alternately with 150gms flour and 1 tsp baking powder sifted together. Add 1 cup chopped dates. Spread in greased slice tin and bake for about 30-40 minutes at 180°C, till golden and just firm. When cold, ice with chocolate icing, decorate with sprinkled coconut and cut into bars.. delicious!

I'm making Olive's Fruit Loaves. Can't remember if I've posted this before, but worth a second look anyway!
Boil: 2 cups sugar, 2 cups fruit,
3 tblspns butter, 1 dsrtspn golden syrup, 2 cups water or orange juice & water.
Simmer for 3 minutes and allow to cool.

Sift: 4 cups flour, ½ teaspn salt,
1 teaspn baking soda, 1 teaspn baking powder, 1 teaspn cinnamon,
1 teaspn mixed spice.

Bake about 60 minutes in 2 loaf tins at 180.

And Cotswold Gingerbread. I make this as a cake but don't ice it or butter it, just cut and eat!
115g margarine or butter, 225g golden syrup (3 heaped kitchen tablespoons),
85g brown sugar, 140 ml milk (¼ pint, 2 eggs,
225g self raising flour, 1 teaspn ground ginger, 1 teaspn mixed spice,
½ teaspn bicarbonate of soda.

Heat margarine/butter, syrup, sugar, milk together in a saucepan and stir gently until butter and sugar melted. Allow to cool. Meanwhile sift flour, spices and soda into a mixing bowl. Beat eggs, add syrup mixture to eggs, and then pour on to the dry ingredients. Stir until smooth batter is formed and then pour into a well buttered 20 cm square tin. Bake 45 mins at 180.

Thanks Kob # 1 just made your choc chip muffins an I doubled the mixture an swapped 1 cup of milk for a cup of strong coffee. Yum Yum.

kool what a great thread this got me all inspired to get baking..I have just had a new kitchen put in, so went out got bulk baking ingredients and some new tins , and got stuck in yesterday afternoon well my daughter(18yrs) was home with us, got my younger boys in on it too making chocolate chip bikkies and they loved it..made a double bannana cake and made a roasting dish bacon and egg pie which my hubbie took for lunch at our sawmill for him and the workers , so i am every ones good books at the moment lol...it was good to put the kitchen through the paces and a fan bake oven tooo...yahooo more baking to do yet..only down fall is the dishwasher not installed yet

im really starting to love this baking thing i made a batch of scones and a chocolate browine dessert w/ hotfudge sauce for tea. Ohhh tastes so good. And the sauce is so easy it was up there in a dessert thread somewhere its just 300gm cream, 200gm chocolate of ur choice and 100 grams marshmellows, put in a pot and melt together, would go really well over ice cream!!

Apricot Balls 1/2 tin condensed milk,1/2 cup sugar,100gms butter,1 tsp vanilla ess,1 pkt crushed plain biscuits,1cup chopped apricots,1cup chopped marshmellows, coconut for rolling...
Melt con milk, butter and sugar in pot do not boil. Addbisciuts ,apricots and marshmellows and mix.. roll into balls and coat in coconut...YUM

Light Breakfast muffins 1c plain flour
1c wholemeal flour
4tsp baking powder
1c caster sugar (little less)
1c dessicated coconut
1c chopped fruit of your choice, canned or fresh (canned in nat juice work well as they are a bit sour)
Vanilla essence, or cinammon, or other spices depending on your taste
1 1/4c milk

Mix everything in a bowl, pour in a muffin tray, bake 30min at 180C. These are always a hit in our house :)

BANANA AND DATE SCONES
3 CUPS PLAIN FLOUR (OR 1CUP PLAIN FLOUR TWO CUPS OF WHOLEMEAL)

1/2 CUP DATES (SLICED IN HALF) I PUT IN EXTRA AND LEFT SOME WHOLE

1 MASHED RIPE BANANA
50G(2OZ) MELTED BUTTER

help! need ricebubbles & peanut biscuit recipe Seem to remember this recipe was in a Womans Weekly a few years ago - the biscuits are very crisp so tasty and spread into a large size on tray. They don't require icing. I know they went like 'hot cakes' in our house - would be delighted to get the recipe - many thanks.

here is Pam's recipe for lemon yogurt cake 1 3/4 cups sugar (use caster)rind of 2 lemons;2 eggs;1 cup oil (I use sunflower)pinch salt;1 cup plain unsw yoghurt;2-3 tsp lemon juice;2 cups s.r flour. Beat eggs,oilsugar and peel. Add the rest of ingredients in order above. Grease a "bundt" tin (a lovely ring tin with a nice shape inside)and flour it -just throw a spoonful of flour into it and shake it all around so flour coats tin-shake of excess.Bake at 180c for 30 mins or test with skewer till it comes out clean.This cake stays moist for a good week and freezes extremely well.Serve dusted with icing sugar.
