baking I have just baked biscuits, muffins, a chocolate cake, cheese rolls and I am about to do mousetraps, I have also made sausage rolls and garlic bread.

re #1251 - my post!! I sorted out the sugary marshmellow by doubling the gelatine and water mix and added the sugar slowly...it looks fab! Oh and I put it on top of a chocolate, weetbix coconut base. Just incase anyone was wondering ;)

For alumnus FIVE CUP SLICE

Five Cup Slice 1 cup each of flour, sugar, coconut, corn flakes, fruit (sultanas or mixed fruit). 1 Tsp. B/Powder. Mix dry ingredients add 1 beaten egg, 5 oz butter (125gms) and 1 Tab. Golden syrup that has been melted together. Mix well and press in sandwich tin. Bake 180 cel. 25 mins

Fudgy ginger crunch make your ordinary ginger crunch recipe but cook the base about half the normal time - until it is nearly set. Add the icing and pop back into the oven for another 5 - 10 mins so the icing melts and bubbles. really yummy and it sort of goes fudgy as the icing soaks into the base. Discovered by accident when 10 year old didn't read the instructions and put the icing on before going into the oven

anyone want my easter recipies??? Easter Peanut Butter Eggs 2 eggs -- well beaten
1/8 tsp salt
1 1/2 cup peanut butter
4-5 cups powdered sugar
1 tsp vanilla
1 Hershey chocolate bar
1(6oz) pkg chocolate chips

Preparation:
Mix the eggs, salt, peanut butter, sugar and vanilla in order listed.
Form dough into egg shapes.
Melt the chocolate bar and the chocolate chips in a double boiler.
Dip egg shapes into chocolate mixture.
Arrange on waxed paper until set.

Easter Spice Biscuits 2 cups flour
1/2 tsp baking soda
2 tsp ground ginger
2 tsp ground mixed spice
1/4 tsp ground nutmeg
1 tsp finely grated lemon rind
1/2 cup firmly packed brown sugar
125g butter, cut into cubes
1/4 cup melted honey (approx)

Preparation:
Preheat oven to 200°C. Sift the flour, baking soda and spices into a bowl.
Add the lemon rind and brown sugar.
Rub in the butter until mixture resembles fine breadcrumbs.
Pour the honey into the flour mixture and knead to form a firm dough, adding extra honey if necessary.
Wrap in gladwrap and refrigerate for 10 minutes.
Place dough on a lightly floured board and roll out to 6-7mm thickness.
Using cookie cutters cut out shapes and place on greased trays.
Bake for 7-10 minutes or until biscuits are golden.
Leave on the tray for 2-3 minutes then place on a rack to cool.
When cool decorate with coloured icing.

Eggsquisite Easter Baskets 4 Shredded wheat biscuits - crumbled
3/4 cup Peanut Butter
3/4 cup Butterscotch chips

Mix peanut butter and chips over low heat or place in microwave until melted. Add shredded wheat. Cool slightly, then mold into baskets - wonderfully yucky! Try shaping over back of bowl. Place baskets in fridge to set.
Fill nests with Easter eggs and/or candy. Little nests filled with jellybeans are delightful.

Cornbread or muffins 1c flour, 1c fine cornmeal, 1/2c sugar, 1/2t salt, 1 rounded T baking powder. 2 eggs, 2T oil, 250ml skim milk. Mix dry ingredients in larger bowl, mix wet ingredients in smaller bowl & add to dry ingredients. Stir just enough to mix, put into greased (not paper-lined) jumbo (or regular) muffin tins. Bake at 210C for 20-25min for jumbo muffins, a bit less for regular.

Now for the riff on cornbread... Last night I tried to make cornbread to get rid of some grains & flours from my cupboards, but didn't have quite enough, so started substituting, & here is the result. I only had a scant 1/2c flour, so added 4 crumbled Weet-Bix & about *that* much rolled oats (1/2c?), and made the tablespoon of baking powder heaping to compensate, also doubled the salt. I thought I'd better compensate for that, so added about 275ml milk instead of 250. I also added a dash of cayenne & a lump of peanut butter about the size of 3-4T worth. This looked a bit wet, so I dumped in the rest of the cornmeal (1/3c?). This all went into a 20cm square pan & baked for 35min at 200C. Would you know, it came out great?

.... ... made Hot Cross Buns of course!! I tried them without raisins - yuk! Tried them with chocolate chips - yukkish! My daughter will just have to carry on picking out the raisins that she hates, as we've all decided that they have to stay in the recipe!!!! A hot cross bun just isn't the same without loads of raisins!

I know what you mean lizab I love hot x buns but partner doesn't like anything with fruit in it (xmas cake, hot x buns etc) so we compromise... i'll eat them and he starves. lol

I made this Date & Apple Cake yesterday. YUM 1 heaped cup peeled and chopped apple, 1 cup sugar,
125 g butter, 1 egg,
1 cup white flour, 1/2 cup wholemeal flour,
1 teaspoon baking soda, 1/2 teaspoon salt,
1/2 teaspoon nutmeg, 1/2 teaspoon allspice,
1 good teaspoon cinnamon ,3/4 cup chopped dates,
1/2 -1 cup chopped walnuts.
Preheat oven to 180 C.
Put apples and sugar in large bowl. Stir in melted butter and egg, then dry ingredients, dates and walnuts.
Pour into a well greased ring pan and bake for 50 minutes. When cool dust with icing sugar.

Coconut macaroons Easiest ever! Combine 2 beaten eggs, 140g (2/3c) caster sugar, & about 160g coconut (desiccated okay). Drop by teaspoonfuls onto greased baking sheet & bake in preheated 190C oven for about 10 minutes, until lightly browned. (Let cool for at least 10 minutes before removing from baking sheet, though.)

Anzac biscuits i made them a couple of days ago,needed to take something to a wake,and didnt have much ingredients in the pantry to make a fancy cake.I used the edmonds cook book recipe,but doubled the ingredients,then i always add raisins or sultanas in the mixture,as i think it taste's better.

Smiley_cherub Sorry for late response about macaroons. The recipe I posted above uses whole eggs, believe it or not. The original recipe called for a lot more coconut (225g), & to be shaped into little pyramids (it was a Passover recipe, meant to remind us of Egypt). But the first time I made it, I assumed 225g meant one imperial-measure cup. Nooo. The resulting cookies were a mess, way too wet, but they tasted better than the pyramids when I made them properly. So here you see a compromise that tasted great, & sooo easy!

Yummy Muesli Bars - healthy!! 125g butter, 1/4 cup brown sugar, 3T honey or golden syrup, 1 tsp vanilla, 1 egg, 1 cup flour (can use wholemeal), 1 tsp cinnamon, 1 tsp baking powder, 1/2 tsp salt, 2 3/4 cup rolled oats, 2 cups 'add-ins' (dried fruit, nuts, seeds, choc chips)

Mix well together in bowl. Press into greased or baking papered baking tin. Mod oven for 25-30 mins. These keep well and can be frozen (but not in our house!!)
