Zucchini bread or muffins 3c flour (can use 2c white 1c oat flour if you have it), 2c sugar (or 1c sugar 1c honey), 4t baking powder, 1t baking soda, 1/2t salt, 1t ground ginger (or mincd fresh if you have it). 4 eggs, 1/4c oil (or 3T oil 1T olive oil), 5 regular-size (or 1 giant) zucchini grated (about 3c or more), 2t chopped orange peel, 1-1/2c rolled oats, 1c chopped walnuts (or more oats). Mix dry ingredients (including nuts & oats) together. Beat eggs & add oil, zucchini, & orange peel. Mix dry ingredients in wet, stirring just enough to moisten everything. Baking instructions in next post.

zucchini bread cont'd Recipe makes 2 9in loaves, or 24 regular-size muffins, or 12 regular & 24 gem-size muffins. Tins should be greased, even if non-stick. Bake in pre-heated 190C oven, 20min for gem muffins, 25-30 for regular muffins, 50-55min for loaves. Cool on racks.

Quince or pear bread I've only ever made the pear bread, but that is so nice I assume the quince bread is good, too. 1T active dry yeast, 1/3c warm water. Cooked quince (3-4 roughly chopped, 1 inch of water to cover, 1/2c sugar, cooked for about 40min & cooled) or raw pear (overripe ones work best), whichever one pureed in blender to get 1c puree. 1/2t ginger for quince, black pepper for pear (really). 2T honey, 1/2t salt, 2 eggs, 3-1/2 to 4-1/2c flour. In a mixing bowl, dissolve yeast in warm water, let stand a few minutes. Add fruit puree, spice, honey, salt, & eggs, beat thoroughly. Add 2c of flour & beat about a minute. Stir in 1-1/2c more, until dough becomes hard to stir. Turn out onto floured surface & knead for about 5 min, adding flour as necessary to get a shiny & smooth dough. Let rest while you clean & grease the bowl.
Place the dough into greased bowl, cover with plastic wrap, & let rise for about 1-1/2 hours. Turn the dough out, punch down, & divide into 2 parts. Form each part into a 7-inch round. With a floured

Pear bread cont'd Turn the dough out, punch down, & divide into 2 parts. Form each part into a 7-inch round. With a floured finger punch a hole in the center & twirl to enlarge the hole to about 4 inches diameter. Place each round on opposite ends of a greased baking sheet. If you don't want the hole to close up, put a well-greased cookie cutter or small empty can in the center. Cover loaves lightly with a tea towel & let rise another 45 min or until doubled. Paint the tops with a glaze made from 1 egg mixed with 1t water, & bake in preheated 175C oven for about 40 minutes. Cool on racks.

made pikelets and jam made pikelets this morning to take to my grandfathers house for lunch,and i came back home with damson plums to make damson plum jam.I wasnt to enthusiastic about going to all the bother of making the jam,but when i bottled the 4 large jars of jam,i was pleased that i did make the effort in the end.

Here we go ...Orange Icing Place 1 cup of Icing sugar into jug or small bowl, add 1 Tbsp melted butter, tsp of finely grated orange rind. Slowly add small amounts of boilng water (and mix well) until you get the disired consistency. Mine was just runny enough to drizzle all over in random fashion but just use less water if you want a more spreadable fudgey icing. (Alternatively just use icing sugar, a tsp of orange essence and a few Tbsp boiling water)

Missisippi Mud Cake 1Tblsp instant coffee,1/2cup water,100g dark cooking chocolate,100g butter,1 cup sugar,2 large eggs,2Tblsps either sherry,whisky,brandy.1tsp vanilla,1 1/4cup flour,1/2tsp baking soda.
Heat the coffee,water,broken chocolate,butter and sugar in a saucepan,cook until chocolate has melted,and sugar dissolved stirring at intervals,cool at room temperature,then stir in the brandy or whisky.
Beat the eggs with the vanilla in a food processor or bowl.Sift the flour and b.soda together,then combine the three ingredients,process or whisk just long enough to get a smooth mixture,which is thinner than most other cake mixtures.Line the bottom of a 6 cup baking ring tin with baking paper,pour in mixture and bake at 150 c for about an hour.
Sauce or icing,i use 150-200g cooking chocolate or chocolate chips,and about 1-2Tblsps cream,depends on how much sauce you want,melt chocolate with cream in a saucepan,stirring until smooth,but dont over cook otherwise it will burn,then spread onto cake..

ZUCCHINI CHOCOLATE CAKE made this on weekend I used oil and the butter and only half the sugar and very very nice

1/2 c butter
1 3/4 c sugar
2 1/2 c flour
4 Tbsp cocoa
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 eggs
1/2 c sour milk
1/2 c oil
1 tsp vanilla
2 c grated zucchini
Chocolate chips
Whipped cream

Preheat oven to 325°F degrees. Grease a 9x13" pan. Combine butter, sugar, flour, cocoa, soda, baking powder, cinnamon, salt, eggs, milk, oil, vanilla, and zucchini. Pour into pan. Top with chocolate chips. Serve with whipped cream.

made the cake that is in this thread called "bloody good chocolate cake",i didnt have a large cake tin,so i baked it in a small baking dish.Its going to turn into a gateau for my daughters belated 12th birthday party cake,tomorrow.

Sugar Buns - these will take you down memory lane! 1 1/4 cup flour, 2 tsp baking powder, 1/4 cup custard powder, 1/2 cup sugar, handful of sultanas, 60gr melted butter, 1 lightly beaten egg, a few drops of lemon essense,(optional), approx 1/4 cup milk, a few tsp jam. Place sifted dry ingredients into med bowl. Add sugar and sultanas and give it a bit of a stir to combine. Make a well in the centre and mix in melted butter, egg and essence. Most of it should come together into a ball but don't worry if it doesn't - it'll be okay!! Slowly stir in the milk. (Adjust quanity if you need to - the mix should hold its shape when it is scooped up, ie: not sloppy.) Using a tablespoon, scoop out onto a baking paper lined tray. Place a small blob of jam on the top of each and a sprinkle with sugar. Bake at 180 for about 15 - 20 mins. Test by lightly touching the tops - should be firmish and lightly browned. Makes 7-8 buns. ENJOY!

does anyone know a golden syrup slice recipe I have brought this slice at the dairy and seen it at cafes,it has a biscuit base then has goldensyrup added into the filling then topped with the biscuit base crumbed ontop,the base is very dark,and the filling is a golden colour.If Anyone has this recipe,could you please pass it on as i would like to make it.

sally lun/boston bun's You can make this recipe into one large sally lun or two small buns.
3/4 cup sugar,1 cup mashed potato(not salted)about 1/2 to 3/4 cup milk,2 heap cups of flour,3 teaspoons of baking powder,1/2 teaspoon salt,1/2 to 1 cup sultanas.
Sift flour,salt and baking powder,cream the potato and sugar well.Add to dry ingredients,then add sultanas and sufficient milk to mix into a firm dough.Divide mixture into two and either shape into loaves or cook in round sponge tins(8"/20cm width)that have been greased and floured.Bake at 300 for about 30 mins.When cold ice with butter icing and sprinkle with coconut.

Little Jaffa Cakes Found this one in a womans mag couple of months ago, my grandchildren love them.

Not very healthy but never mind!

125g butter, 3/4 cup sugar, 1tspns Van. ess, 2 eggs, 2 cups flour, 2 tspns BP, 3/4 cup Orange juice, 1 cup crushed jaffas ( or the cheap ones from the red shed).

Cream butter and sugar, then add van ess and eggs and combine. Add flour and BP, orange juice and combine, stir in jaffas. Put into muffin tins in paper cases, cook 20 mins 180deg c. cool, ice with orange icing and put jaffas on top if desired.
Orange icing, 1/4 cup orange juice, 3 cups I/sugar, mix.

These are nice and light.

Weebix Choc/Cherry Slice 175g butter
2 Tbs golden syrup,
2 Tbs rum (or Kahlua),
2 Tbs cocoa,
3 cups crumbled weetbix,
1 cup icing sugar,
1/2 cup white chocolate buttons,
2 Tbs lemon juice,
397g can sweetened condensed milk,
2 Tbs hot water,
1/2 cup chopped red glace cherries. In a large saucepan, melt butter, condensed milk and golden syrup together. Bring to the boil stirring all the time.
Simmer 2 mins., add rum (I use Kahlua), crushed weetbix and cocoa. Combine all ingredients. Pour into a foil-lined 27 cm x 18 cm tin. Cool. Melt chocolate buttons, add icing sugar, lemon juice, hot water and cherries. Mix to a smooth paste. Pour over weetbix mixture. Refrigerate until set. Turn onto a board, remove foil and cut into slices.

grandmwatts sounds a little like Tan Square but that has condensed milk not G.Syrup in the filling. Your Boston bun looks interesting and will be saved for appropriate time. I had typed in "bum" not "bun" which made fun reading-pity I proof read!

German Plum Cake Easy & excellent, from trusty Betty Crocker. Crust: 100g butter, 2c flour, 1/4c sugar, 1t baking powder, 1/2t salt, 1/2t grated lemon peel, 1/4t mace. Filling: about 5c halved & pitted plums, 3/4c sugar, 2T flour, 1t cinnamon. Topping: 1/4c slivered almonds (most of a 70g pack). For crust, but butter into mixed dry ingredients until mixture resembles fine crumbs, press into bottom & sides of ungreased round 23cm layer pan or quiche dish. Place the plum halves cut side down & slighly overlapping, on top of the pastry. Sprinkle mixed sugar, flour, & spices over the plums, sprinkle almonds over the lot. Bake in 190C oven for about 35-45 minutes, until pastry is brown & plums are bubbly. (You will probably find it helpful to put a pan or baking sheet on a lower rack to catch any juice that occasionally spills over.)

smiley cherub magical orange cake I am putting this here as it is one of the easiest and tastest cakes I have tried. Magical Orange Cake: 1 whole orange, washed and processed to a pulp, 125gr melted butter, 1 cup sugar 2 med-lge eggs, 1 1/2 cups self-raising flour. YES, ITS AS EASY AS IT LOOKS! If you have a food processor, just throw everything in together and mix till all combined. Now, I don't have a FP so I did it the old-fashioned way (LOL) Mix together the melted butter and sugar, add egg then orange pulp. Stir to combine then fold in sifted SR flour. Pour into lined loaf tin and bake at 180C for approx 35-40 mins or ready when tested with skewer. I doubled this recipe - it made a lovely ring tin cake which I iced with orange icing and also a loaf which I left plain. Such an economical recipe! Couldn't believe how yummy such a simple recipe could be.

Icing; 2 tablspoons butter 6 tabelspoons icing sugar 1 tabelspoon custard powder
Cream butter and icing sugar until light and fluffy.
Add vanilla.
Sift over flour and custard powder.
Roll maixture into balls. Place on tray. Flatten.
180C for 15-20 minutes.
Join biscuits together with butter icing.
Icing; Soften butter and mix in icing sugar and custard powder and mix until combined.

Hot Cross Buns for Shelby - these are to make by hand. Will post the breadmaker ones next.3 ½ teaspns dried yeast, 1 cup warm water, 1 tblspn sugar,
¼ cup sugar, 50g butter, 1 teaspn salt,
1 cup milk, 1 egg, 3 ½ cups flour,
1 teaspn cinnamon, 1 teaspn ground ginger, 2/3rds cup currants,
1 tblspn sugar, 1 tblspn water.

Sprinkle yeast on to first measure of water, containing the first measure of sugar. Mix 2nd measure of sugar with butter and salt in a bowl. Heat the milk and pour over this. Stir until dissolved. Allow to cool until lukewarm, then mix the yeast mixture into it. Lightly beat the egg and add to this, then sift in 2 cups flour. Beat well. Sift the remaining flour with the spices and add sufficient of this to form a soft dough. Add the currants and beat thoroughly. Cover and set in a warm place to rise until double in size. Turn on to a lightly floured board and knead well. (or use kneading hook in Kenwood). Divide into 24 pieces. Roll each piece into a round and place in well buttered patty tins.

hot cross buns cont... Cover and leave to rise until double in bulk.

Crosses:
½ cup flour, 1 tblspn melted butter, 5 tblspns water.
Sift flour, stir in butter and add enough water to enable dough to be piped. Using a fine nozzle, pipe crosses on each risen bun before placing in oven.

Bake at 220c for about 12 minutes. Take from oven and brush the tops lightly with sugar and water (or milk) which have been mixed together. Return to oven for about 1 minute to glaze.

Hot Cross Buns for Breadmaker Place in breadmaker in order listed: (or reverse order if yours likes liquids last)
320ml room temp water, 1 egg, 2 tblspns oil,
½ cup wholemeal flour, 3 cups bread flour, 1 teaspn salt,
1 tblspn sugar, 1 tblspn yeast.

Turn machine on, using “dough only”. Add at 30 mins/when beeper sounds:
75g chopped peel, 1 tblspn mixed spice, 1 tblspn cinnamon,
¼ cup brown sugar, ½ cup sultanas, ½ cup currants.

When machine signals dough is ready, remove onto well floured surface and knead into long sausage shape. Using scissors cut off pieces the size of a tennis ball and place on well greased or baking paper lined swiss-roll tin. Balls of dough should touch each other. Place ¼ cup white flour + ¼ cup cold water in zip-lock plastic bag, squish around to thoroughly combine, cut corner off bag, and pipe crosses on to buns. Allow to rise 30 mins, brush with melted butter and bake in preheated oven 200° C 20-25 mins. Remove from oven and immediately brush over with glaze (¼ cup sugar, 2 tblspns warm

Well this week I made a loaf I got from the loaf thread, but put papaya in it. This is the recipe... ***FRUIT AND COCONUT LOAF *** 1 ½ cups SR flour, 1 cup coconut, 1 cup castor sugar,
½ cup mixed fruit, ¼ cup chopped dried apricot and/or papaya,
¾ cup milk.

Mix all together and bake 50 minutes at 160 °. ¾ cup mixed fruit can be used in place of the fruit and papaya etc, add peel or whatever you fancy

I also made CLEM'S CLOUDS (love these!) 2 eggs, ½ cup sugar, ¼ teaspn salt,
½ teaspn vanilla,1 cup flour, 2 cups mixed fruit,
1 teaspn cinnamon.

Beat eggs at high speed until lemon coloured and foamy, 3-4 mins. Add sugar, salt, vanilla, cinnamon. Beat until thick and creamy. Fold in flour and fruit. Drop teaspoonfuls of mixture onto baking tray. 150 ° 15 mins.

Loved the 5 cup slice!!! APRICOT LOAF 1C apricots, chopped, 1/2C sugar,1t butter'heaped',1t baking soda,1C boiling water.
Mix all ingredients. Pour water over and stand for 10 minutes. Add flour. Mix well and spoon into small greased loaf tin. Cook 180 for 45 mins.
Variation- sultanas and mixed spice instead of apricots.

orange/coconut choco chip cup cakes Making theses tonight for daughters school gala which is tomorrow.This recipe is taken out of the edmonds cook book under(orange cakes)but i will double the recipe and also add 1/2 cup coconut,3/4 cup chocolate chips and 1/2 cup orange juice.Have made them before,but added sultanas as well,but will leave them out this time.
