I'm going to have to start writing down poster's names with recipes! I made the 'super moist chocolate cake' recipe posted *somewhere* in this HUGE thread ... gave it to a friend to take to her birthday morning tea and apparently everyone raved about it and couldn't get over how moist it was. So I shall say a big Thank You to whomever I copied that recipe from!! I think the 1 cup of milk & 1 cup of coffee made the difference!!

I made my Xmas cake which is measured in packets of mixed fruit etc, very easy. I also made Breakfast Balls, to eat on the run (2c muesli, 1/4cup brown sugar, 1/4 cup mixed fruit, 1/4cup peanut butter,1/2c dried milk powder and 1/2 tin condensed milk. Mix all into balls, set in fridge).. made Jewel Cake too (just nuts and fruit, egg and 100g flour) and Xmas Church windows (melted chocolate with dried fruit like mangos/pinapple/apricots/cherr-
ies etc stired in and set into a tin) as you can see I am doing the Xmas thing!

These are great ... "Forgotten Cakes" Ok, think meringues - but in the old fundraising cookbook I found the recipe in, they were called "Forgotten Cakes" Firstly, preheat oven to 180C and line two baking trays with tin foil. With an electric beater, beat 2 Egg whites till really stiff, keep mixing while gradually adding 70gr caster sugar (in about 5-6 batches) When the mixture is really glossy and thick gently stir in 1/2 cup each of chocolate chips and rice bubbles. Place walnut sized spoonfuls onto the trays leaving a little room for spreading. Don't flatten. I think I got about 24. Now, SWITCH THE OVEN OFF!! Without losing too much heat, quickly place trays into oven and leave undisturbed for 4 hours, preferably overnight. They would be delicious with cream or drizzled with a little chocolate but mine were all scoffed before I had a chance to decorate - lol. These would be excellent for those "bring a plate" Xmas functions coming up . Cheers

Campmum's Mudcake recipe 250-gr butter, 1 & 1/2 cup hot water, 2 cups castor sugar, 1/4 C cocoa, 1 tbsp instant coffee, 200-gr dark cooking chocolate, 1 & 1/2 Cup SR flour, 2 eggs (lightly beaten), vanilla essence. METHOD Melt in pot; butter, water, coffee then add choc & sugar stir until smooth. Cool. Gradually add in sifted dry Ingredients. Add eggs & essence & beat well. Pour into a greased & lined 25 cm baking tin & bake @170*C Fan oven or 180*C for approx 1 hour. Skewer should come out reasonably clean. (don't overcook) GANACHE ICING 125g dark choc & ½ cup cream) warm together & beat until smooth. Leave Ganache until spreadable consistency or use warm as a sauce

Yesterday I made a big double batch of shortbread and it's in the freezer now for Christmas, and today I've made Campmum's mud cake again (twice in six days), and I'm going to make some cinnamon swirl scones this afternoon for my friend coming for afternoon tea. I can only blame myself for my ample love handles I guess ... LOL

Help me please - no marg/butter in house!! Argh! Just as I found this awesome thread and printed out dozens of recipes to try I looked in the fridge and noticed I only have 200g of dairy free marg.. HELP!!! What biscuit recipes can I make without marg/butter?? I have just made the chocolate clusters and the russian slice so there goes all the marg.. Thanks :)

I think you can replace butter with oil but I'm not sure how that would work for slices - cakes are OK.

Thanks i'll look through my books and see if I think any of the recipes can substitute with oil. I've got 7 hungry kids coming for afternoon tea so better bake something!

Brownies with oil My favourite brownie recipe (no 914, page 19, this thread) can have oil substituted for butter. The 200g butter called for is a reduction from the original recipe, which was for 1c of butter. So anywhere from 3/4c to 1c oil should work for you.

Excellent topping I tried one of the variations on my basic brownie recipe & have to pass it on. It could go for many types of slice, not just brownies. Combine 1c peanut butter (room temperature), 200g melted dark chocolate, & 1-1/2 to 2c rice bubbles, to spreading consistency. Spread onto cooled brownies before cutting. Sooo nice.

Recipe Book Can't put it on CD to distribute either now sorry (breach of TM rules) - if you haven't got a copy and you know someone who has, ask them for a copy because there doesn't appear to be any way I can distribute it now :-( What a shame! God I am so stoked with this thread.... ....I was a small time contributor, big time baker off this thread about 18 months ago when I was at home with a baby under my other user name "raveltd". I have just discovered Lisa's website (thanks to the person who posted that fabulous link) and discovered one of only 2 recipies that I contributed to this thread. It is for Pearls Carrot Cake (which is the best carrot cake in the world). Pearl was like my second mum, she even made my wedding cake, and she actually died a little over a year ago so it was great to see her recipie posted for all to see on that website. Anyway, I came here looking for the Mississippi mud cake recipie I made off here once as I have to make one for Xmas and that it is the best one I have ever come across (and easy)and I found that on lisas website too - thank god for Lisa - I thought I was going to have to go thru all these posts....

I had a busy day yesterday ... I made some Christmas Mince Pies, Cinnamon Scones and some Ginger Fudge. All turned out supurb, which makes a nice change for the fudge - I don't usually have a lot of luck with fudge but it was perfect and set!

I have made the chocolate chip biscuits.. post number 1 many many times in the past couple of weeks. Made a single batch last night (makes 30) and this morning there are none in the cake tin, hmm...wonder where they went? :) Made a double batch today, am freezing some for christmas, and to stop us eating them so quickly! If you haven't tried them I totally recommend you do!!

This is such a cool thread! This is the cake I make when I really can't be bothered baking but need a cake for lunch boxes etc:
SULTANA CAKE:
450g sultanas 225g butter 3 eggs
1 ¼ cups sugar 350g flour 1 teaspn baking powder
lemon, vanilla and almond essence

Cover sultanas with water and boil five minutes. Drain, add butter while still hot, stir. Beat eggs and sugar together with essences and add to sultanas. Beat together and mix well. Add flour and baking powder. Bake 1 hour at 160.

Usually double it and freeze one, it's very forgiving, so I just use whole packet (1kg) sultanas, pkt butter (500g) etc. Very yummy. Thanks for the excellent recipes girls!
