This has been an interesting thread to read, so thought I would just bump it up.
My grand daughter has just been diagnosed with Coeliac disease, So I needed some tips for when she comes to visit.

Has anyone tried baking with Water Chestnut Flour? I just love the flavour of this but haven't found a recipe that uses this except for a samosa one. That was made with some tapioca as well but would wouldn't roll- just broke apart. Just thought the experts here might have ideas I could try.

Has anyone had any experience with baking GF and yeast free bread? I haven't worked out whether it is wheat or yeast my son reacts to so they're both off the menu until his skin heals and they can be tested separately.
In the meantime, I need to learn how to mix flours and try and get an ok tasting loaf for him!

Just made GF bread buns using Bakels Artisan bread mix served with soup to my glutinous lot they didn't pick they were gf . Worked really well and will make them again.

Can anyone recommend a GF flour mix other than Bakel as no one stocks it anywhere near me? I have tried Edmonds but it leaves my mouth very dry.

Re bakels gf products if you contact Bakels you might be able to buy flour etc directly from them

Thanks, have contacted them first, and they say no retail sales. Maybe I might try making my own mix and see how that goes.

I agree it is the best and I also had problems ,New World sell it so maybe get it online from them. I bulk buy when I go up to Auckland

Recently bought bakels breadmix and it seems to be only a blend of starch and whey powder and whey protein powder. The bread was dry and crumbling but maybe it was over cooked.
Disappointing. So I mixed up another Jeanne’s gluten free blend for baking this weekend.

Yes I just buy the Bakels baking mix, I don't bother with bread, you couldn't beat Vogels
