Took me ages also to go from vegetarian to vegan which I really regret but I love the food, cannot understand why people think its a few leaves especially these days with such good websites and recipes available.

Pear Cream - good for hot puddings i.e. steamed puds etc,
1/2c raw cashews
1t vanilla essence
1-2T liqud sweetener pref a healhy one
4C pears cooked, in juice etc
Blend until smooth and creamy

I'm going to give dolphinlu's vegetarian roast a go, sounds good. Has anyone else tried it? Curious to know their thoughts.

I havent tried dolphinlu's recipe but have made seitan recipes often. Seitan is a good meat sub but is very slightly more rubbery than meat, tastes very much like it though. Experiment with recipes until you find one you like. Is quick and easy and quite cheap.

I made dolphinlu's recipe the other day and it was amazing. First time I've made seitan but we were impressed, way better than the expensive shop bought. It wasn't rubbery, quite soft and chewy, very like meat. The flavour was good too and so easy using the CP instead of steaming/boiling. I added a chopped carrot along with the onion to the cooking broth too. Now want to try making a chicken type seitan.

Making a pumpkin, cheese., Caramalised onion Wellington. Doing a trial run tonight.???? basically roast pumpkin in slices. Top with caramalised onions. Fill half a red onion layer with a mixture of cheeses. Cheddar. Blue and mozzarella. And encase into individual Wellingtons.

These were amazing, a big hit and relatively easy once onions and pumpkin were cooked. I made these parts a day ahead and put together christmas morning,
