Different ways with Silverbeet?

What delicious ideas. I have silverbeet or spinach every night in some form or another. I often use as a wrap for other things.

Use instead of spinach(which is so expensive) in Indian Sagwalla. Just ensure all the white stalky bits are removed.

A couple if recipe ideas for the stalks.
Once I live is to cut them into fish finger sized pieces, dredge in flour with curry powder added,, t hen egg and breadcrumbs. Fry. I have done this with parmesan instead of curry and was nice also.
The other is cook the stalks then toss in a thick cheese sauce.

Cook silverbeet with chopped onion, chop finely when cooked. Season with S&P and stir some coconut cream through before serving is nice. I also do this with spinach too or combination of the two.

Equal quantities of white cabbage and silverbeet (no stalks) cut as for coleslaw, add spring onion, cut up cooked bacon, toasted cashews, thin cooked cooled noodles, and peppercorn vinaigrette.

POTATO AND CORNED BEEF PIE

1 onion 2 cloves garlic 1 Tbsp oil 2 potatoes cooked and cubed 1 cup cooked chopped silverbeet 1 can corned beef flaked
3 eggs 1 cup trim milk
½ cup self raising flour freshly ground pepper

Peel and chop the onion and garlic. Sauté until soft but not browned in a pan with the oil. Mix together in a bowl the cubed potato, silver beet and corned beef. Beat the eggs, milk and flour together. Stir this through the meat and vegetable mix. Season with pepper. Tip the mixture in a greased oven proof dish lined with paper or foil (for easy removal if wanting to take it out and cut when cold). Bake for 20-25 minutes at 200°C. Serve warm, hot or cold. I suggest you use the low fat corned beef.

Salad.
Torn silver beet - preferably young and without the stalks.
Orange segments
Unsalted roasted cashews
Red onion rings
Finely chopped celery stalks
Raw mushroom, sliced thinly, if liked
A finely chopped apple, if liked.
Mix well, squeeze over lemon or orange juice and chill. Just before serving, toss with a dressing made from half and half mayonnaise and vinaigrette. You can add a little crushed garlic if you like it. Garnish with quartered hard boiled eggs.
Really yummy, holds in the fridge without too much wilting, and you can add other veges like cold, cooked, new potatoes and cheese cubes if you want to make a satisfying meal.
