Easy Spanakopita (Greek spinach and egg pie) - NOT original Greek!

Into a huge bowl put:
several sauteed onions,
1 tub cottage cheese,
2 cups grated cheddar cheese,
2 cups chopped spinach or silverbeet (or more!),
1T nutmeg,
2 crushed garlic cloves,
1T salt,
6 eggs.

Mix all with a spoon.
Line a big dish with 5 layers of filo pastry.
Fill pie.
Top with 4 or 5 layers filo pastry.
Cook one hour on 180C or till set.

A recipe from 30 years ago when I lives in Italy for a while:

Italian Silverbeet

This is eaten as a side dish like a salad.

Chop and cook silverbeet.
Put the stems first into the pot, while you chop the greens.
Usually the water clinging to it from washing is enough. You don't want to end up with too much liquid.

While cooking make a vinaigrette from:
good olive oil,
any vinegar you like (not just balsamico though as its not sharp enough - I use a mixture of balsamico and cider vinegar),
salt, pepper and a spoonful of hot english mustard.
Mix well, and add plenty of chopped garlic .
Either pour over vegies while still hot in the pot or invert vegies into salad bowl.
Toss frequently while cooling.

Can be stored in the fridge for up to a week.
I usually keep the lot in the pot, then when all is mixed up nicely and cooled down I put it straight into the serving dish.

This as a 'go to' (that I copied from here) when I can't be bothered going to too much fuss for dinner.
"Timturtle developed this as a bacon & eggs 'on the go' breakfast dish,This recipe makes 5 breakfast servings or ideal for work lunch or for dinner with a salad.

150g chopped bacon
100g chopped mushrooms
200g cooked spinach (I often use more) chopped & well drained
1 cup grated cheese
10 eggs
Garlic pepper
salt
sliced tomato
Line a pan with non stick paper, then spread over bacon & mushrooms.
Mix eggs to combine then add the rest of the ingredients, apart from the tomato. Pour over the bacon & mushrooms, spread out evenly & top with sliced tomato.
Bake 180 degrees in a preheated oven until just set.

Variations
ham & asparagus with Gruyere or blue cheese
Chicken & char grilled capsicum
Wood smoked salmon, feta & spinach with a little fresh coriander

1 red onion, finely chopped
1 red capsicum, finely chopped
1 tablespoon tomato paste
1/2 cup Stock
1/2 can tomatoes
can large butter beans (or cannellini beans), rinsed, drained
1 zucchini, halved lengthways, cut into large chunks
6 silverbeet leaves, centre vein removed, leaves roughly sliced
1 tablespoon fresh oregano leaves

Add the onion, capsicum and cook, stirring, for 5 minutes or until soft.

Stir in the tomato paste and cook for 1 minute. Add the stock, canned tomatoes and butter beans and bring to the boil. Add the zucchini and simmer rapidly over medium-low heat for 10 minutes or until the sauce is thickened and zucchini is tender. Stir in the silverbeet and cook for 4-5 minutes until wilted.

Season to taste with sea salt and freshly ground black pepper and scatter with the oregano leaves.

Silverbeet salad is yum, using your own mix of young silverbeet leaves, torn up, sliced raw mushrooms, sliced red onions, chopped red capsicums, spring onions and cold hard boiled eggs, and orange segments. Use a dressing that's not too sharp, if any at all.

Spanakopita is another great use for spinach or silver beet, as are those other related Greek pastries, Tiropetes, which can be filled with the spanakopita mix.

Try this.POTATO AND CORNED BEEF PIE

1 onion 2 cloves garlic 1 Tbsp oil 2 potatoes cooked and cubed 1 cup cooked chopped silverbeet 1 can corned beef flaked
3 eggs 1 cup trim milk
½ cup self raising flour freshly ground pepper

Peel and chop the onion and garlic. Sauté until soft but not browned in a pan with the oil. Mix together in a bowl the cubed potato, silver beet and corned beef. Beat the eggs, milk and flour together. Stir this through the meat and vegetable mix. Season with pepper. Tip the mixture in a greased oven proof dish lined with paper or foil (for easy removal if wanting to take it out and cut when cold). Bake for 20-25 minutes at 200°C. Serve warm, hot or cold. I suggest you use the low fat corned beef

I love spinach & I make a spinach soup & it would work well with silver beet as well, I reckon.
I have no exact recipe as a friend gave it to me a while ago & it involves sauteed onion (& garlic if you wish) , curry, bacon & any herbs spices that you feel would be good & as much spinach as you want.
Saute the onions/garlic curry powder & then bacon & then add the spinach until just wilted.
Make a roux type sauce & then blitz the lot together, adding S & P to taste.
You could use anything that you want, Asian type curry seasonings with coconut milk etc etc.
Sorry that I haven't got exact amounts, but is one of those 'fly by the seat of your pants' type recipes ...as are most soups, aren't they?
