This is a really easy salad and tastes divine.

Egg Salad
3 courgettes thinly sliced
quarter of a cup of chopped parsley
6 hard boiled eggs
three quarters of a cup mayonnaise
1 clove garlic crushed
salt and black pepper

Combine courgettes and parsely in a bowl. Shell and chop eggs. Add to courgettes. Combine mayonnaise and garlic, season to taste with salt and pepper. pour dressing over salad and stir to combine. Chill before serving.

Here is another cake recipe, it's a very easy cake to make and cooked in the microwave oven which makes it super quick too. It's a lovely moist cake, very like a mud cake. I top it with dark chocolate Ganache.
Chocolate Zucchini Cake
125g butter
3/4 cup sugar
11/2 cups grated zucchini
2 eggs
1/2 teasp each cinnamon & mixed spice
1/2 cup choc chips
3/4 cup cocoa
11/2 cups SR flour
1/4 cup plain yoghurt

Cream butter & sugar, add eggs one at a time and beat in between each egg. Add spices, zucchini, choc chips & yoghurt & mix well. Add cocoa and flour and mix. Put mixture into a prepared microwave cake pan. Bake in microwave on high for 8 minutes. Stand 5 minutes before turning out onto a cooling rack.

I put onion in pot with little oil add celery or garlic salt, then put zucchinis in, then tomatoes which have been cut up, then boil till is soft lovely with sausages or just by itself

I've been eating baby zuccini for past 2 weeks. Gorgeous dark green thick fingers. In brinjal, chilli, indian curries, sauces, stirfrys, fritters, spreads, hummus, roasts, omelettes, pies, frittatas, pastas, baked in breads, muffins. crumbed, grilled, mezze, kebabs...so many ways. YUM!

They were $16 kg 3 weeks ago when daughter wanted to practice her bolognaise with ribboned zucchini meal she's making for NCEA credits. I said um no that's the easy bit anyway, just make some mince... Mean Mum!
I wish I'd planted some earlier! Maybe this weekend. They'd probably be rotting and covered in powdery mildew like usual if I had though.

Wow, that’s early! We’re not planting any this season as in the rich soil here they blow up to marrows too readily.

Was kinda hoping that someone would post Chelsea Winter's recipe for Zucchini gratin. I think it was in her third cookbook. I meant to commit it to memory before I left but time did not allow. I have returned to Australia to live now so do not have access to bookshops to view the recipe. Maybe someone over there can help.

Daily harvest is the clue that my favourite market gardener gave me at the market last week :) Not yet necessary here, they are still under winter netting.

I must be slow this year, havnt even got any zucchini seedlings yet to plant, my tomatoes are only about 3cm high, other than the self sown one that started coming up in the mild mild late winter we had, now about 1M tall

Today we had Zucchini noodles for lunch with a Bol sauce. I also spiralised some golden beetroot which was very nice too.

Bedazzled if you've got more flowers than you want make these. They're divine. There's lots of recipes around, this is just to give you an idea.
