I make this salad at the shop where I work and we use red. Nice for colour . Very thin slices It's a lovely salad.

Curry Rice Salad & Sultanas

Curry powder turmeric pineapple diced
sultanas mayonnaise parsley
salt, pepper rice

1) boil rice and turmeric , cool
2) add the sultanas, diced pineapple, chopped parsley
3) add the mayo and season the rice ,,

you can use a oil dressing instead of the mayonnaise,,

Rice Salad with tuna

INGREDIENTS:
COOKED RICE eggs boiled
peas, thawed chopped celery
chopped onion mayonnaise
mild mustard lemon juice
sweet pickle relish tuna or option salmon
dried dill weed Salt & pepper
diced pimento or capsicums
optional, tom, spring onions

add all ingredients to cooked rice,
sorry cannot give amounts , when I had to make salads for 600 plus people I just added enough of each ingredient so it looked good.

pasta and pink salmon salad

real easy quick salad ,,, you can use any pasta type,, i change the type of pasta i use each time i make it...

1) cook off pasta and let it cool,, add sliced raw mushrooms, tins of pink salmon, chopped red onions or whatever is cheapest,, chopped spring onions , wedged tomato, salt and pepper, now add a thick mayonnaise and mix all together,, i use lots of mayonnaise so it's sticky

hints,,,,,,,,, sometimes i add sliced beetroot, if you prefer a different type of mayonnaise or you like a cocktail sauce then you can use it,, i have used cocktail sauce and it was nice but i use mayonnaise because i have family who do not like cocktail sauce,

ranch bacon potato salad

another quick salad you can prepare hours or the night before,

cooked diced red potato ..... diced bacon... sliced red capsicums, ....
..chopped chives.... chopped parsley, chopped green onions, ranch dressing

method ...... cook red potato and cool, add diced cooked bacon, red capsicums, ,chives, parsley, onions and ranch dressing, mix well and use lots of salt and pepper,

hints,, this salad you can substitute ingredients if out of season or too expensive, you can buy ranch dressing at countdown but you can use a thick mayonnaise instead ,,.....

another type of ranch dressing is mayonnaise with sour cream, chopped garlic, chopped parsley and dill, cayenne pepper, paprika, lemon juice, oregano salt and pepper, refrig sauce for at least a few hours before mixing in the potato

Ravioli Chicken & Spinach Salad

easy salad,,, cooked stuffed raviolli with diced chicken, cooked spinach, tomato, spring onions, sliced onions bound with mayonnaise,,

method,, cooked the raviolli in boiling salted water about 10 minutes,,, drain off water,,, put in frig to cool, chop cooked spinach and squeeze out excess water... dice chicken and cook and then allow to cool, cut tomato into wedges,,,, chop spring onions and slice onions, ........when pasta and chicken is cold, add the spinach and other ingredients to it,,, add mayonnaise and mix together,,,

hints,, i use the stuffed chicken bacon, mozzarella raviolli from count down and the cooked spinach, , they have a selection of stuffed raviolli so choose what you like

if i was catering for 50
i would buy 4 large packs of raviolli (Cook 3 and save one just incase) one 500g pack of spinach,, 2kg of chicken ,8-10 tomatoes, 2 onions,,,bunch spring onions , after i have made the salad,, if it looked like i did not have enough i would cook off the extra raviolli and add it too the mix

you can replace the mayonnaise to a Greek yogurt or a dressing if you want a lighter salad.. well it's 5.24 so off to bed

I think you need to think about who your crowd is that you are catering for? If there are lots of men there or young boys, I would tend to do potato salad or roast vegetable salad and maybe a colslaw. A lot of guys don;t really like too whacky type salads. If it is a group o professionals then I would tend to go for more gourmet type of salads. Work to your crowd.

took me ages before i finally made this salad, and everyone woofs it down, its so so yummy

Brown Rice Salad
Pasta Salad
Green Salad
coleslaw.

We had far too much left over.... Depends on the "type" of people attending... big eaters vesus sparrows. What I found useful was I had to take the salads to a venue so I brought a box of large snaplock bags and put the salads in those and they stacked flat in the chilly bin... then when ready to serve, just tipped them out on the platters.

Thought I must search for Toadfishes Brown Rice Salad recipe and it is still here ... yay. I must make it one day soon. Then it might make an appearance on Xmas day too.

I make this with black rice adding yellow and orange peppers and cranberrys Family requests this every year .

For a low carb change use cauliflower rice. Make sure you do not overcook it! Use a small quantity for a trial run first.

This is a current fav - can extend, bulk up or double so easily. L use more lime juice, cumin and coriander than the recipe states.

Ahhh - there is a recipe I will adapt for my very prolific broad beans which keep appearing in great numbers in the kitchen. Must also be great with a hot sizzling steak or a roast duck I guess?

I have heard it is fantastic with steak, Uli. In fact a friend popped in, saw I had another huge pan of it made and took a container full home with him to have with his steak tonight.

Broad beans would substitute pretty well, I would think.

I added some chilli flakes into the batch I made tonight. Just a few. Very nice.

This is what I made some weeks ago again using the small broad beans, skipped the soy milk and used buckwheat noodles instead of glass noodles. We had it as a salad for lunch and everybody was very happy.

Its not a recipe, but when I was in Avignon in July had a salad with tomatoes, cucumber and watermelon in it. It was delicious and very refreshing. I'm sure there must be recipes online.
