I made this amaretto and cherry cheesecake. Plus a splash of drambuie. The waiting was excruciating and at one stage was contmeplating having it before the main course. Very worth the wait (or weight)!! Wouldn't cookup so many cherries next time. Makes a good size. Or use a smaller tin and have more depth to the cheesecake. Yum.

Lemon silk - flipping amazing alternative to mousse/creme brulee/panacotta if you only have a bit of time. Took 10 minutes tops and was great - served it in shot glasses with a bit of chocolate shaved on top.

I did apricot and pine nut stuffing balls wrapped in streaky bacon and baked along side the chicken. Everyone loved them.

I normally buy a whole Turkey, but after a few recommendations I got one of those rolled turkeys with Cranberry stuffing..........just beautiful and about half the price with no waste

We were in Melbourne and used duck fat to do the roast vegies. Just as said - the potatoes were divine - golden and very crunchy! The duck fat was available in tubs in the chiller at the supermarkets there - wished it was that easy to get here.

I made a Strawberry bliss cake and a couscous salad and got compliments on both which is highly unusual in our family. Mind you my mum got compliments for her broccoli salad which was surprisingly good - I was sure I was going to hate it, the raw cauli salad salad she made was a step to far (dark side lol) she put sultanas in it - blerk!!!

I made this salad and it was very popular!

ROAST PUMPKIN SALAD
500 g pumpkin, peeled and chopped into bite size pieces
3 tablespoons olive oil
1 teaspoon ground cinnamon
1 clove garlic, crushed
salt and pepper
1 roasted red pepper sliced
250 g feta cubed
1 red onion chopped
1/2 cup basil leaves finely shredded
1/2 cup pumpkin seeds toasted

DRESSING1 cup olive oil
1 tablespoon balsamic vinegar
1 teaspoon liquid honey
1/4 cup white wine vinegar
1 teaspoon whole grain mustard
salt and pepper

Method

Preheat oven to 200 C.Place the pumpkin in a roasting dish and drizzle with the oil, cinnamon, garlic, and pepper, then roast in a for about 20 25 minutes until cooked,( try to keep it still firm but cooked.) If you haven`t already roasted the pepper pop into the oven at the same time. Cool. Place the cooked pumpkin into a salad bowl and toss through the other ingredients then add the dressing.To make the dressing mix all ingredients in a screw top jar and shake to combine.You can add less of the pumpkin seeds as liked, my partner is not such a fan of them. And I find perhaps the dressing makes quite a large amount just add what again is liked. I usually add to make and then adjust when serving as sometimes the pumpkin absorbs some of the dressing. It aways can be used on other dishes. Have used the cumin and garlic flavoured feta in this recipe and that works well too.

This year I made pumpkin gnocchi, with a mushroom, blue cheese sauce, with a little spinach stirred through.... So good :-)

Garlicky Butter bean Potato mash

It was just butter beans and garlic with a bit of salt, pepper and paprika in the food processor, then mash that in with the potatoes once they have cooked. I think the recipe said to mash with milk and butter but I didnt bother, turned out great.

I thought it was really nice, and quite garlicky, Mr14 said it tasted okay but it was making his eyes water, and my mum said she could barely taste any garlic.

If we all enjoyed the same meal I'd be worried we'd been taken over by aliens...

I made my first trifle this year using Puhoi butterscotch custard; it was heaven. I made the sponge using a Chelsea recipe with raw sugar. Then jelly, peaches and juice mixed with passionfruit pulp and cream and flake on top. So so good;)

I made my usual "Christmas Ice Cream" but this year used a tub of Hokey Pokey Ice cream (usually use French Vanilla flavour). I leave the ice cream out of the freezer to soften, remove half of the tub and stir in a tub of Christmas Fruit mince, dark chocolate chips, pinch of cinnamon and cloves, a dash of either brandy essence, rum essence or baileys and stir well. Put back in freezer and leave overnight - usually disappears very fast on Christmas day.

I made raspberry and pistachio parfait. I ad to make gluten-free dessert and was sick of doing pavlova so decided on something new. I doubled the recipe to make sure there was enough, and there almost wasn't due to the parfait being extremely successful. Nephews ended up cutting portions very carefully to make sure everyone got an equal share of third helping!

I did a similar one. Mix dried cranberries and chopped marshmallows into the softened ice cream. Line large basin with cling wrap with enough above the rim to cover the dessert, put the ice cream in it, smoothing down well to stop air pockets. Slice a jam swiss roll and place over the top (this will be the bottom when tipped out). Cover with the cling wrap and put in freezer. Leave 4 hours minimum (I left it overnight). Just before serving melt some white chocolate. Turn pudding out onto a large platter, pour white choc over the top letting it run down the sides. Top with fresh cherries. Put fresh cherries and mandarin segments on the plate around the base of the dessert. It was yummy, and much lighter after a big meal than Xmas pud.

I call this "Tongariro National Park" although it's original name is as such, LOL, but yeah, looks similar but is very nice, did it instead of Pavlovas, one guest had 3 helpings then realised that there were others, LOL.

Salzburger Nockerl, or Berries and Clouds

450g Blueberries
Grated zest and juice of ½ lemon
50g Icing sugar plus extra for dusting
70grams castor sugar
7 eggs separated
A pinch of salt
1 ½ tablespoons cornflour
Custard to serve (optional).

Preheat oven 180 C.
Put the Berries, lemon zest and juice in the prepared 20cm greased
baking dish and sprinkle with the icing sugar.
Put egg whites and salt in a very clean bowl and whisk until the eggs are foamy.
Add 50g of castor sugar, a tablespoon at a time, and whisk well between each addition.
Keep whisking until the whites have quadrupled in size and are stiff to hold their shape when you hold the bowl upside down.
Put egg yolks and remaining sugar in a separate bowl and whisk until the eggs are fluffy.
Beat in the cornflour until incorporated.
Finally carefully fold the mixture into the beaten egg whites with a metal spoon, in 3 stages, trying to maintain as much air in the mixture as possible.
Portion the mixture over the berries in 3 mounds to resemble the 3 mountains that surround Salzburg, (similar to our National Park Tongariro LOL).
Bake the pudding in the preheated oven for 30 minutes or until a light crust has formed on the outside and the interior of the egg topping is no longer liquid – a skewer inserted in the middle should come out clean.
Turn the oven off and leave the pudding inside with the door closed for a further 15 minutes before removing it and serving it immediately.
Dust with icing sugar and serve with a little custard if you like.

Not a recipe but tried something new with the ham. Instead of taking the skin off before cooking, put it in the oven for 20 minutes. Take out and peel off the skin. It just came off in one easy piece leaving the fat behind. Will never go back.

That does sound easy, i had trouble getting the skin off both the hams i did this year

I have never glazed a ham before but this year I got a ham from work. I used the Countdown Orange and Hoisin Glazed Ham recipe and it was beautiful. The flavours went right through the ham and all loved it.

I made this salad for our bbq. It was delicious.

CRISP WATERMELON SALAD
A cooling, fresh and fruity salad for a hot, hot day
This watermelon salad is so cooling and fresh on a hot day. Use white wine vinegar if you don’t have balsamic white. It will work to extract the juices from the red onion and create a dressing.
CRISP WATERMELON SALAD
Serves 4
½ red onion, sliced thinly
2 Tbsp white balsamic vinegar
2 tsp caster sugar
3 cups roughly chopped watermelon
½ telegraph cucumber, seeds removed and sliced
1 avocado, cut into cubes
1 cup mint leaves
2 limes (or 1 lemon)
1. Into a small bowl place the onion, vinegar and sugar. Stir well and leave to sit for 30 minutes letting the juices start to develop. Add the juice of ½ lime to make this into the dressing.
2. In a large bowl combine the watermelon, cucumber, avocado, mint and onion with the liquid.
3. Serve with an extra squeeze of lime juice.
