I made Ginger & Chocolate ( chopped crystallised ginger & choc chips), Lemon & Pistachioand Cranberry recently.

Alyson Gofton's Caramel Shortbread is a nice one too.

Made the above with different combinations of icing sugar/castor sugar and cornflour/plain flour/ rice flour.

Can post recipes for all if anyone would like them.

Caramel Shortbread - makes 24 to 30 pieces.

250g butter
1/2 cup firmly packed brown sugar
1 3/4 cups flour, sifted
1/2 cup cornflour, sifted.

Beat the butter & sugar, work the flours in but do not over-process.
Roll out & cut into squares, or shapes, and prick with a fork.
Bake at 160c for 35-40 minutes.

Chocolate and Ginger Shortbread

250g butter
1 cup icing sugar
1 cup cornflour
1 3/4 cups plain flour
1/2 cup finely chopped crystallised ginger
1/2 cup chocolate bits

Beat butter & icing sugar together.
Add cornflour, flour, ginger & chocolate and mix well.
Knead for 5 minutes.
Roll into 4 x 15cm logs (for small pieces) and slice into 1cm thick slices.
(I refrigerated mine for 30 minutes as my mixture was a bit soft).
Bake at 150c for 25 minutes.

Crisp Shortbread

250g butter
3/4 cup castor sugar
2 cups plain flour
1/2 cup rice flour

Beat butter & sugar. Add combined flours and mix well. Add a little extra flour if the mixture is sticky.
Roll into 2 logs & refrigerate for 30 minutes.
Slice and bake at 160c for 15-20 minutes.

Lemon & Pistachio Shortbread

I used the above recipe for Crisp Shortbread, and added 1tbsp finely grated lemon rind and 1/2 cup chopped pistachio nuts.

I don't like crystallised ginger, but my favourite is the ginger and chocolate.

Put a stick blender through some raw haze;nuts ( the fresh NZ-grown ones -m not the stale rubbish the supermarkets sell from California or Turkey) and add them to shortbread - the flavour of slightly roasted hazelnut permeates the shortbread - really yummy. A little vanilla extract ( the real stuff) helps too.

Here's one that I used to make a lot. Just leave out the lime and cashews if you want it plain.

Lime Cashew Shortbread

70g sugar
thinly peeled zest 4 limes (or 1 orange)
170g butter
170g plain white flour
50g semolina
½ tsp baking powder
100g cashews (or walnuts) – broken into quarters

In food processor whizz sugar and zest until finely pulverised. Add butter and whizz until creamy. Sift flour, semolina and baking powder, add to processor and pulse until just mixed. Mix in nuts by hand.

Press into 20cm tin. Bake 180 degrees C. 25 – 30 min. Cut while warm.

Espresso shortbread is my all time favourite. We cut them into star or heart shapes and dip one side in chocolate if we want to be flash but they're just as good not dipped.
This looks pretty much the same as the recipe we use but, if you've got a favourite recipe, just use that and add coffee grinds.

I make one with slivered almonds and chopped up cherries. It's delicious. Came from an Australian cookbook that was produced in the 70's.
