53 | I made Ginger & Chocolate ( chopped crystallised ginger & choc chips), Lemon & Pistachioand Cranberry recently. Alyson Gofton's Caramel Shortbread is a nice one too. 62 | Put a stick blender through some raw haze;nuts ( the fresh NZ-grown ones -m not the stale rubbish the supermarkets sell from California or Turkey) and add them to shortbread - the flavour of slightly roasted hazelnut permeates the shortbread - really yummy. 64 | Here's one that I used to make a lot. Just leave out the lime and cashews if you want it plain. Lime Cashew Shortbread 70g sugar In food processor whizz sugar and zest until finely pulverised. Add butter and whizz until creamy. Sift flour, semolina and baking powder, add to processor and pulse until just mixed. Mix in nuts by hand. Press into 20cm tin. Bake 180 degrees C. 25 – 30 min.
