christmas lunch --salad recipes please!!!

Caesar - just cos lettuce, parmesan shavings, croutons and Caesar style dressing. I like it with no anchovies - and bits of crispy fried bacon instead.

Potato salad - new potatoes in sour cream with finely sliced spring onions and grated cheese.

Rice salad - cooked rice with finely chopped capsicums, tomato,and peas and sweetcorn. Season with soy sace.

whole egg mayonnaise

1 whole egg
juice of 1 lemon
1 teaspoon whole grain mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
150 mils of sunflower oil
150 mils of canola oil
You will need a stick blender and a tall beaker to make this mayonnaise.
Put the egg into the beaker first
Put the other ingredients carefully on top of the egg, so as not to disturb the egg.
Lower the stick blender in to the bottom without disturbing the ingredients.
Pulse the blender, until the ingredients start to emulsify, tilt the blender to allow the oil to be incorporated.

Keep salads cool, and covered.
Now is a good time to make sure your fridge is running at the correct temperature. between 2 and 4 deg C

Creamy Beetroot Salad
Pour a mix of unsweetened yoghurt and horseradish cream mixed thru over diced beetroot. So very yummy and looks good too.

Bacon & Sweet corn Salad;;; Fry 4/6 bacon slices until crispy, chop or break into serving dish, Cook 1 pack frozen corn, cool & add to bacon. Drizzle Balsamic Vinegar to taste. I usually add roasted peanuts as well.
This is a recipe you can play about with to suit your own tastes. Nice & quick too. Adjust quantities & nuts to suit.

I just looked at Jamie's pasta salad and will do that for our Christmas. We will also have 4 bean salad , brown rice salad and potato salad .... can't wait!!!

my fav salads are rice salad, greek salad, tabulleah. I have found a beetroot/feta cheese one to try. Would love a decent Vietnamese salad recipe. And platters of sliced radishes, grated carrot, sprouts, croutons, chopped nuts, sliced peppers etc.

Here's a generic one that you can adjust depending on what you have available.

Vietnamese Glass Noodle Salad

4 servings

Dressing:

2 cloves garlic,, peeled
2 fresh long red chilis, seeded and finely diced or julienned
½ - 1 disc of palm sugar
4 - 5 tab fish sauce (nam pla)
2 - 3 limes, juiced
1 tab water
2 tsp peanut oil
1 tsp sesame oil

Salad:

250g protein: cooked small prawns **
200g glass noodles (also known as cellophane noodles, bean thread noodles)
250g sugar snap peas or asparagus or thinly sliced green beans***
3cm piece of fresh ginger, julienned
250g bean sprouts
3 spring onions, sliced into thin circles
1/2 cup finely chopped fresh coriander leaves, to garnish

optional, as available: Vietnamese mint, Thai basil, sweet basil, dill, mint, kaffir lime leaves finely sliced ****

To make the dressing, pound the garlic, chili and palm sugar in a large mortar until completely crushed. Add 4 tab fish sauce, juice of 2 limes, water. Taste and check the flavours - it should be mildly sweet, very tart, salty. Add more fish sauce and/or lime juice until the flavour is balanced. Add water and oils.

Soak the noodles in freshly boiled water for about 30 min until completely soft. Refresh the noodles in cold water, then drain well. Blanch the the sugar snaps and bean sprouts and drain well.

In a large bowl, mix all of the salad ingredients. Pour in the dressing and combine well.

Sprinkle over the chopped coriander and other herbs and toss everything together well before arranging onto a large plate.

Variations:

** shredded chicken, thinly sliced pork fillet, shredded Chinese barbecued duck, flash-fried squid strips.
*** thinly sliced zucchini, julienned kohlrabi, red capsicum
**** add some toasted peanuts or cashews if nobody is allergic. Sprinkle on top. Or add 2 tab powdered roasted rice

Vietnamese Chicken, Cabbage & Mint Salad

Serves 2 – 4

Dressing:

1 hot chilli seeded and chopped
1 large garlic clove finely chopped
1 tab sugar
1 ½ tsp rice vinegar
1 ½ tab lime juice
1 ½ tab fish sauce
1 ½ tab peanut oil
1/2 tsp roasted sesame oil
½ med onion finely sliced
black pepper

200g white cabbage shredded (or ½ cucumber in ribbons)
1 med carrot finely julienned or grated
200g cooked chicken breast shredded
big bunch of mint coarsely chopped

Mix veges & chicken, add dressing and mix very well. Check for salt.

Will keep a day or two in the fridge.

Carrot, Cranberry & Almond Salad
2 carrots grated
½ cup dried cranberries
¼ cup sliced almonds
Honey mustard dressing to taste
Mix carrots & cranberries together, add enough dressing to your taste and stir together. Put into a bowl and top with the sliced almonds.
** You can use chopped walnuts instead of almonds.
** I have also used Caramelised Onion dressing in this salad

Our all time favourite, tastes even better the next day. Have to make it in bulk or we end up fighting over it
Not my recipe so have C/p to give credit where credit due
Thai Roasted Kumara and carrot salad (like the supermarket one)
My hubby loves this too and asked if I could copy it as it is quite expensive - I have started with this recipe and it is not quite right but I have only made it the once so far so need to play around with it - 500gof red kumara peeled and chopped into 2cm chunks and 300g carrots chopped into 1 cm chunks. Boil these until tender (I roasted them), 1/2 small red onion finely chopped, 1 garlic clove, crushed, 1 tsp chilli powder, 1/2 tsp ground cumin, 1 tsp curry powder, 1 tbsp honey, 2/3 cup canola oil and a small tin of crushed pineapple in juice (include the juice), handful fresh coriander leaves, chopped roughly, salt and pepper.

At the moment we are loving beetroot and feta salad, sort of a made up recipe. Roast beetroot in o/oil and balsamic with salt and pepper and a few sprigs of thyme, until soft. Cook orzo pasta, in veg stock, drain, lightly brown some walnut pieces in a frying pan. Add cubed beetroot, pasta, walnuts and feta in a bowl, adding baby spinach if liked, add a little mayo, and combine, season as needed.

I liked it even though I am not a big fan of fruit in my salads.

Go to the supermarket. See what looks good and will go together, tastewise, and goes with the protein component of your dinner. Bring it home and prepare all the various ingredients. Combine in an attractive manner and add the dressing of your choice. Dish up and eat.

Ahhh punkinthefirst that is what you are doing - I go to the garden instead of the supermarket and more or less do the same.

But a lot of people here seem to just start out cooking and need recipes on what fits together in a salad and what dressing is ok for what combination.

Personally I use my old French dressing a lot - olive oil, cider vinegar, salt and pepper and sometimes (depending on the salad) a bit of soy sauce.

It seems to cover most salads from plain endive with lots of garlic to a mixed green salad, to an asparagus salad (very much in favour right now) to a tomato salad (with the addition of lots of basil OR parsley) or even a fennel salad - rescued just before it all goes to seed.

Well, Uli, I can no longer garden, otherwise I'd be doing the same.......
You might want to try some sweet chili sauce, a little of one of the asian sauces, pink pickled ginger (yumm!!) or even some lemon juice in your vinaigrette, always depending on the rest of the meal, of course.
As you know, its all just a matter of trying things out until you find something wonderful. We might not always make perfect food, but it is very rarely so inedible that it can't be used one way or another. I worry that people are so overawed by the food shows on TV that they become too afraid to experiment a little.
Edited to add (for novice cooks) that you should keep on tasting your food as you prepare it.......let your tastebuds be the final arbiter....

Lucky you. I hope to get someone to build me some, because I really love gardening, but ATM I'm pretty much housebound, and my carpentry days are almost over as well. Its a pain, but the daisy flowers are much nicer-looking than the roots!

Made a Nigella salad from Aussie WW the other day. 2 stalks celery, 1 Lebanese Cucumber, 2 corgetttes, dice fiinely pea size, add pomegranate seeds a splash of olive oil, and a dash of lemon juice, easy yummy and looks xmas.

I'm trying my version of Asian salads: finely shredded red and white cabbages, mesclun lettuce, finely grated carrot, loads of chopped mint and coriander. Can add in small bits of cauli/broccoli. Or whatever else you like!
Dressing: 1 chilli and 1 fat garlic clove, either minced or very finely chopped and crushed, 1 TBSP sugar, 1.5 tsp rice vinegar, 3 TBSP lime juice, 1.5 TBSP fish sauce and veg oil, half a med onion, finely sliced, black pepper.
I put the dressing in a jar (it is to taste, will need to tutu with ingredients), shake, keep in fridge for the night. Taste again, adjust.
Pour over salad ingreds just before serving. Mix gently and thoroughly.
Have extra sliced chilli in a dish and crushed peanuts in another.

while on the gold coast, I had a beetroot, lentils and pumpkin salad, it had rocket leaves as well. the beetroot and pumpkin were diced but cant seem to find the recipe. It was lovely, just at a mall food court in Pacific Fair

One of my simplest but most delicious salads - particularly good with fish.

Orange and Fennel salad

2 oranges (the imported type)
one fennel bulb
one red onion
your favorite vinaigrette dressing (even a bought one...)
freshly ground black pepper

Simply peel the orange, remove any extra white pith, break into half, and finely slice, reserving any juice.

Cut in half, and very finely slice the fennel bulb, and the red onion.

Put the orange, fennel and onion half slices into a salad bowl, dress with vinaigrette dressing, add some freshly ground pepper, and serve.

Will keep 2-3 days in fridge.

Made this salad for 50 people last weekend. I made 6 times the quantity. have had so many requests for the recipe since.It's easy and tasty.

Warm Roast Root Vegetable Salad with Maple Balsamic Dressing

(Makes 4 portions)
Salad
• 300g kumara
• 300g pumpkin
• 2 parsnips
• 1 red onion
• 150g cherry tomatoes halved
• 3tbsp toasted pumpkin seeds
• 3tbsp crumbly feta
• 1 handful of torn rocket 
1 orange
Method
Roast pumpkin, kumara and parsnips until golden and tender. Cool.
Roast pumpkin seeds. Cool.
Cut up orange and tomatoes and onion. Mix with the vegetables.
Toss in the rocket.
Drizzle with maple dressing.
Sprinkle with roasted pumpkin seeds, and feta.

 Maple Balsamic Dressing
• 250ml balsamic vinegar
• 500ml olive oil (good quality)
• 200ml maple syrup
• 3 lemons juice only
• 1tsp chopped thyme
Method
Combine all the ingredients together and puree until well combined. Adjust the seasoning with salt and pepper and pass through a fine sieve. Use now or at a later date.
i also made Toadies rice salad, which is so popular.
Also a simple combination of diced fresh pears, blue brie cheese, toasted walnuts and a drizzle of maple syrup. Delicious.

A bed of spinach, top with roast pumpkin and Kumara, sprinkle over sliced sun dried tomatoes, crumbled feta, roasted pine nuts and blanched asparagus, I also add capsicum, tomato and avocado - whatever you have on hand. Just before serving add dressing made by mixing equal parts of olive oil, balsamic vinegar, water, sun dried tomato pesto.
