Hi Toadfish. Thanks for your recipe for mini cakes using pots. Where did you buy the pots as I have read that the pots should not contain lead and the ones in the garden centres probably do have lead. Have you any suggestions for using the pots. Thanks.

This is divine !! Even Christmas cake/pudding haters eat this...1c stale xmas cake or pudding crumbled...2tbsp raspberry or strawberry jam...3-4 tbsp rum (I use brandy)...2c icecream...1c whipped cream.Gently mix first 3 ingredients together...leave 10 minutes to develop flavour...combine with icecream and cream to give a rippled effect. put into clingfilm lined container. Freeze until firm. I do it in a micrwave loaf tin and then slice to serve. Yummy

Thanks dizyq I'll keep that one in mind for when we can't look at another slice of chrissy cake.....I would like to make a morish trad pudding from scratch though as it's our 1st clan getogether this year in a long time so I'm out to impress!

Whoops... sorry Brianmac - didn't realise you weren't finished...I can remember watching my aunt prepare her pudding cloth and so on but I thought it was going to be a bit of trial & error for me so thankyou, thankyou, thankyou for all the detailed instructions!!!

min xmas cakes - toadfish help Toadfish - I like the sound of your xmas cakes made in terracotta pots. Do you give them away in the pots as well? I have seen terracotta pots that are glazed on the inside - are these better to use? Thinking of making some for gifts this year. Terracotta pots seem cheaper than those mini springform tins ($10 each!)

Egg Nog! Can't remember where I found this: 2 Fresh Eggs
1/2 Cup Sugar, divided into 2x1/4's
1/2 Cup White Rum
1 1/2 Cups Milk
1 1/2 Cups Whiskey
1 Cup Heavy/Whipping Cream, divided into two halves.
Ground Nutmeg (strongly recommended),enough to sprinkle on servings. You are doing things gently and slowly to preserve the eggnog's fluffiness. A good whisk for the stirring and a high speed mixer for the egg-whites and cream helps this process immensely. Notes on taking this to a party below.

Egg Nog continued 1. Separate eggs into yolks and whites in separate bowls (see below for a how-to). I put the whites into the mixer and the yolks into another bowl. 2. Beat egg-yolks with 1/2 of sugar, set aside. 3. Beat egg-whites until stiff, then mix in other 1/2 of sugar. 4. Poor the yolks into the whites and mix together slowly. 5. Stir in white rum slowly. 6. Stir in milk slowly (see below for dairy intolerance). 7. Stir in whiskey slowly. 8. Stir in 1/2 of cream slowly. 9. Whip rest (1/2) of cream and fold in carefully. Notes on how to fold below. 10. Serve at room temperature by ladling the eggnog into cups and sprinkle nutmeg on the top. Try to get some of the foam and some of the liquid (if not fully mixed) in each cup.

Apologies for the rough cut & paste above. I lived in the US for three years. During xmas, the milk compny's sold egg nog in 2L milk containers - delicious! Curiously, the low fat egg nog was the best, largely because it had more sugar

Chocolate Brandy Truffles This is my traditional truffle receipe that i have used for 3 christmas's now and will keep on using.I double the receipe,but here is the single receipe,250g chocolate thin biscuits(crushed finely)50g butter,100g cooking chocolate,1 egg,2 Tblsps Chantelle Brandy.Crush biscuitsfinely.Melt butter and chocolate in a saucepan(large)Add biccuit crumbs and egg.Beat with a wooden spoon until combined.Mix in the brandy.Place in the refrigerator for about a hour.Measure tablespoonsful of mixture and roll into balls,then place balls into melted cooking or chocolate melted buttons coating all over then place on tinfoil which is on a baking tray and place in freezer for approx 15mins(until truffles have hardened then place in container and put in fridge

Walnut/orange stuffing 90g butter softened,2 med onions,peeled and chopped,4 sticks celery,trimmed and chopped,275g 2day old wholemeal bread,crusts removed,made into crumbs,1/2 cup coarsely chopped walnuts,2 Tblsp chopped fresh marjoram(i used dried) 4Tblsp fresh chopped parsel(fresh is best in this recipe) finely grated rind and strained juice of 1/2 ornge,1/2 tsp salt,freshly ground pepper(i used pepper from the small container)1 egg(beaten)Melt half the butter in a large frying pan and cook the chopped onions and celery gently until softened.stir in the breadcrumbs and cook for 5 mins,do not let them burn.Remove from heat,add the walnuts,marjoram,parsley,ornge-
rind and juice.Season with salt and pepper,stir in the egg and leave to cool then stuff the turkey or chicken with this tasty stuffing recipe.I got this recipe out of a little Readers Digest More christmas booklet.

for above recipe(spelling corrections) fixing up my blunders in the spelling.Where it says in the ingredients section parsle-is actually meant to say parsley and orang-is actually orange.Thats what you get for rushing things... you end up making mistakes

Mango butter This is another Recipe from the Reader's Digest Christmas booklet
This is a breakfast spread with a distinctive taste of mangoes
175ml mango pulp,6 egg yolks,125g caster sugar,65g unsalted butter
makes 400mls.
Put the mango pulp,egg yolks and caster sugar into a large stainless steel or ceramic bowl over a saucepan of gently simmering water.Mix with a whisk until all the ingredients are well combined and the sugar has dissolved.Add small pieces of softened butter,one at a time,stirring constantly until the mixture coats the back of a spoon.Pour into sterile glass jars and seal.Store in the refrigerator
