Bath Cleaner: Cut a lemon in half and dip the cut surface in a little salt in a saucer. Rub over the surfaces of the bath, and rinse well with cold water.

Home-Made Cough Mixture: Mix equal quantities of honey, vegetable oil and freshly squeezed citrus juice - orange, lemon, grapefruit, tangelo, etc.. Mix well to dissolve the honey. Use 1/2 tsp 4 hourly for babies, 1 tsp 4 hourly for toddlers, and as needed for school aged children to adults. I make this in a sipper-type bottle - place the lid on, make sure the opening is shut, and shake well to dissolve the honey. Shake lightly before taking a sip to soothe a sore throat. This will keep at least three days, then make a new mixture to ensure freshness. This was a Plunket recipe that I've seen in a number of Plunket books, from as long ago as the late 1950's.

Breadcrumbs What an awesome thread - right now I have slices of homemade bread drying out in the oven at about 140 for an hour and half. When cool I will put them into a plastic bag a few at a time and crush them with a rolling pin, then store in an airtight container. Yummy breadcrumbs for all dishes, much more flavour than tasteless bought ones. Thanks for all your ideas!!

54

Hi Spiraldesign.. and thank you.. :-) Even the smell of home-made bread crumbs is so much better.. Molenberg type breads are great for them too, and for making stuffings.. adds a little extra chew or crunch!

juliewn - 2008-07-26 16:49:00
55

Home-Made Stuffing: Place in a microwave proof bowl 25gms butter, 1/3 cup currants (optional), 1 small finely chopped onion and 1 or 2 tsps fresh or dried herbs to your taste - sage, thyme, lemon thyme, etc..etc.. Cover and zap until the butter is melted, stir and leave to stand while you prepare the bread. I use Molenberg Soy and Linseed bread - or use your favourite bread.. about 1/3 to 1/2 a loaf - cut or whizzed finely. Add this to the butter mix, and stir in. Add one egg and mix well. You can add another egg if too dry. Fill your chicken and roast as usual. Sliced dried apricot's would be a nice change too, or add finely grated lemon or orange zest to your stuffing.

juliewn - 2008-07-26 17:02:00
56

Stuffing Variations: To cook extra stuffing, double or triple, etc.. the stuffing recipe. Use some of the mix to stuff chicken, turkey, duck, etc.. and press the rest firmly into a lightly greased oven dish. Cover with foil and bake for 15 minutes at 180°C. Leave the foil on and cook 5 minutes more if you don't want a crunchy topping, or for a crunchy topping, remove the foil and cook about another 5 minutes till the top is golden and crunchy. Cut into squares or wedges to serve. This can also be baked in lightly greased muffin pans, so individual muffin sized stuffing 'cakes' are able to be served..

juliewn - 2008-07-26 17:10:00
57

French Mustard: Mix 1 tablespoon mustard powder, 1 dessertspoon ( or to your taste) curry powder, 1 tsp brown sugar, a pinch of salt, and mix with a little cold strong tea, or a blend of white vinegar and water. Very tasty served with Pickled Pork, Corned Beef, or Ham..

juliewn The Hawkes Bay Today is asking people to send in money saving hints/recipes that they will put into a special publication to help people. Not everyone around would have access to a computer & your tips could help a lot of people. You may like to send the best ones to them You go in the draw for a grocery voucher. No, I don't work for them but your recipes could be shared further. You could send an email to competitions@hbtoday.co.nz with contact details. Just a thought anyway.

cookessentials #77 Re: Post #6 "you really MUST wash your butter thoroughly under running water until it runs clear. Butter will go rancid if ANY buttermilk residue is left in the butter." ..... Butter will go very "cheesey" but not rancid if not washed properly. Buttermilk will just deteriorate and the whole butter will smell like very bad cheese. For butter to go rancid it needs air and light. So this is why the normal NZ butter which is packed in paper, has this terrible yellow "rind" which is just rancid fat. Compare that with the Danish butter in foil which has just a little line of yellow where the paper folds are and the air came in.
