Here is Christmas Cake (Melt Butter) Ingredients:-sultanas 125 gm
Currants 125 gm
raisins 125 gm
mixed peel (candied) 125 gm
almonds (optional) 125 gm
grated carrot 125 gm
butter 125 gm
sugar 200 gm
water 125 ml
brandy 50 ml
salt 1/4 tsp
bicarbonate of soda 1 tsp
flour 225 gm
cinnamon 1/4 tsp
nutmeg 1/4 tsp
ground ginger 1/4 tsp
mixed spice 1/4 tsp
eggs 4 pc

Cont...Method Method
1. Place the butter, sugar and water into a large thick based pan and boil until a caramel stage is reached
2. Stir in the dried fruit and mix well
3. Add the brandy, salt and bicarbonate of soda
4. Mix the spices into a paste with a little water and add to the mixture
5. Stir in the sifted flour
6. Finally stir in the beaten eggs
7. Place the mixture into 20cm x 5cm round cake tin greased and lined with greaseproof paper
8. Bake in a pre heated oven at 100°C for 3 ½ hours
9. Remove from oven, allow to cool for 10 minutes before removing from cake tin and cool on a wire rack

Yummies Cake Ever Had this last night - YUM YUM YUM BLUEBERRY CINNAMON MACADAMIA CAKE 150g butter, melted 1 cup sugar 2 eggs 2 cups flour 2 teaspoons baking powder 2 teaspoons cinnamon 1 cup chopped macadamias 2 cups frozen blueberries To make Mix all ingredients together and spoon into a well greased 20-23 cm paper-lined cake tin. Bake at 160°C fan bake for 40-45 minutes of until golden and well cooked in the center. It is done when a skewer inverted in the center comes out clean. Cool on a wire rack. Serve warm, sprinkled with icing sugar.

bluberry macadamia even nicer if you cut in half and pop some cream fraiche in the middle - mmmmmm want some now!!! LOL will have to settle for a cup of tea instead!

Velvet Chocolate Cake... I got this recipe of TM, but made a small change to it. Its great for when you don't have any eggs or butter but want to bake a cake. Its very rich and dark. 1 1/2c flour, 2 tsp bkg powder, 1 tsp bkg soda, 1 c caster sugar, 3/4 c cocoa, 2 tblspns white vinegar, 1/2 c oil, 1 tblspn instant coffee, 3/4 c warm water, 1 tsp vanilla. Sift into bowl dry ingred. In another bowl, mix together wet ingred. Add wet to dry & beat with electric beater till smooth. Pour batter into a 20cm lined ring pan. Bake @ 180°C for 30-40 mins. Ice with choc icing when cool.

Fruit Cakes If anyone saw the final of the Friday night cooking programme (Richard Till)a week or so ago he baked 2 delicious fruit cakes, both are here - week 7. One very heathy with no butter! I could have 2 slices (like Brianmac!)

Lemon Spice Cake LEMON SPICE CAKE
4 oz butter
4 oz sugar
2 eggs
4 oz flour
1 tsp Baking Powder
1 dsp spice
1 ½ T milk

Cream butter and sugar, add eggs and dry ingredients. Cook in round or square tin and when cold ice with 1 cup icing sugar with lemon juice.

4 level tablespoons low fat margarine (Flora Light),1/2 cup boiled water

ICING
1/2 cup icing sugar,1 level tablespoon cocoa,1-1 1/2 level tablespoons skim milk

Wicked...contd Method...
In a medium size mixing bowl completely dissolve sugar and margarine in boiled water. Sift flour, bicarb and cocoa into bowl in one go, using an electric beater beat together 1 minute, add egg whites and beat 30 seconds more. Using a microwave round ring dish (6 cup) or a microwave dish that has a separate centre piece, coat with cooking spray, cut out grease proof paper to fit base of dish and line base, spray top of paper with cooking spray, coat centre piece with cooking spray and place in middle. Pour cake mix into dish and place in centre of microwave (650 watt) on HIGH for 6 minutes. Leave in microwave 2 minutes then remove, turn out on cake rack, peel off paper and cool.
ICING:
Once cake has cooled, place all icing ingredients into a small mixing bowl and combine well. Spread icing evenly over top.

Norwegian special cake 2 oz melted butter 1 cup sugar 2 eggs 2 tsp baking powder baking 1¼ cups flour ½ cup milk Chopped crystallised ginger &slivered almonds. Beat eggs & sugar Fold in flour, baking powder, butter& milk
Bake in a greased 23/25cm tin in a moderate oven ( 180*) for 30-40 minutes.
Topping 2oz butter 1 Tbsp milk 2oz sugar 1 heaped tsp flour
Boil all ingredients for 2 minutes. Spread over hot cake and sprinkle with chopped ginger and slivered almonds. Return to oven to brown for about 10 minutes.

FABULOUS thread! Mels Secret Choc cake a winner Those who are watching this thread, have tested out #11 Mels Secret Chcolate cake and it is a WINNER! it is easy to make, a good rich cake and very moist. I made the mistake of using cream cheese icing which just plain didn't work. It comes out as a huge cake and would be ideal for somethign like Black forest cake. Thanks for the fabulous thread!!!!!!

cardoman or cloves has anyone got a recipe using either of these spices are a dominant flavour - and are they any good. They are appealing tastes but I wonder if they end up being a nice cake?

spicy cakes- I must say I really like rich spicy taste in spice cakes myself. Too often they end up bland and sugary. I'm looking forward to reading and trying more of your cakes! The ginger cake looks great! Will let you know how it goes!
