Loving this thread! Does anyone have a sauce they use specifically with corned beef, other than good old parsley or mustard sauces? Just looking to serve it with something different for a change. Thanks!

Oh, yum, I've got some horseradish growing in the garden, but haven't made anything with it yet, never thought about it going with corned beef. Big onion fans in this house, so wil have to give that a try too! Thanks very much.

when making a gravy to go with a roast. Add your cooking water from the vegies to add a wonderful flavour!

I adapted this from Digby Laws recipe.

WORCESTERSHIRE SAUCE

1 1/4 c malt vinegar
3/4 c treacle
1 t salt
1 t fresh ginger
2 cloves garlic
1 1/2 t ground cloves
1/4 t cayenne
1 T tamarind
4 anchovies

Combine all and simmer for 25 minutes. Leave it to cool in the pan overnight. Finely strain and bottle the sauce.

Will last in the cupboard for 12 months (unless you use lots like I do!)

Blue Cheese Sauce (for steak, broccoli etc)

150g blue cheese (Blue Castello is good here)
150ml cream
1/4 c worcestershire sauce
125g cream cheese
s & p

Heat all gently until bubbling.

Delicious!
This does make quite a lot so I usually only make 1/2 the batch and that is plenty for the 5 of us for dinner.

I know its not homemade BUT Maggi have got a 'Cracked Pepper' Gravy out that im 1000% addicted to, i use it in casseroles, gravys, stews, rissoles, savoury minces etc and pies, its got this pepper hit thats not overkill to its DEVINE!

This is great with a steak :o)
Garlic & Green Peppercorn Sauce
2 T butter
2 T chopped shallots
2 T crushed green peppercorns
2 T crushed garlic
½ C brandy
½ C cream
Salt & pepper to taste
2 T chopped fresh parsley
Heat butter in a frying pan, add steaks and cook until done to your liking. Remove steaks from pan to rest. Add shallots, peppercorns and garlic and sauté until garlic and shallots are soft. Add brandy and cook until reduced by half, add cream and simmer for around two minutes. Season with salt and pepper and add parsley to serve.

Hard Chocolate Sauce - (hardens on ice cream :)
6 ounces semi-sweet chocolate chips or chopped chocolate
1/4 cup butter
1/4 cup oil (I use canola)
Melt all ingredients together and stir until smooth. (can be made in pot over low heat, microwave, or double boiler) Spoon over ice cream. Leftovers can be kept in fridge and re heated when needed.

Chocolate sauce - this one uses cocoa, so good when you don't have any chocolate in the house!!
1/2 cup sugar
2 tablespoons cocoa
1/8 teaspoon salt
1 1/2-2 tablespoons butter
1/4 cup water (more or less, as needed to make a stirable consistency)
1/4 teaspoon vanilla extract
Combine, sugar , cocoa and salt in small pot and add water to make a stirable consistency. Add the butter and bring to boil while stirring over med heat. Boil 1 min then add vanilla. Serve over ice cream and add sliced banana & chopped nuts for a real treat. Keep leftover sauce in fridge and warm when needed..

1/2 cup low fat sour cream
2 teasp chopped dill
1 Tbsp whole grain mustard
Mix well together and serve with corned beef or corned silverside.

This is very decadent. Great for a dinner party.

Ainsley Harriott's Chocolate Sauce

150g dark chocolate
40g butter
150ml double cream
100g dark brown sugar
2 tbspn golden syrup

Break the chocolate into a pan
Add the butter, cream, sugar and syrup.
Heat gently, stirring, until the ingredients are melted and well blended;
Remove from the heat, but do not allow to cool completely.
