Help why did I collect soooo many, 2 feijoa cakes cooked, 1 lot of muffins coofing, another batch waiting, 2 bags given away, kids will be sick ate so many and still half a box left, 1 thread I saw said something about freezing whole???, and also banana bread in breadmaker, tea ready to but on BBQ kitchen - wholey help, bit of a mess and yet I still have to go thru this thread to find other ideas, not going to let this fruit rot under tree...

Yummm Jill.. that sounds good.. :-) I have a feeling it would be good too if caramelised sweetened condensed milk was poured over the fruit before baking.. to make a type of banofee pie creation.. Bake as per your recipe, and serve hot or leave to cool and serve warm or cold. Place some pecans or walnuts into the caramel filling part if you want - they'll give a lovely flavour and counteract the sweetness a bit.

Caramel Sweetened Condensed Milk can be purchased.. however it's much nicer when caramelised ourselves. Remove the label of a can of Sweetened Condensed Milk, and place the whole unopened can into a pot and cover with cold water. Bring slowly to a simmer, and simmer for 30 minutes. Remove the pot from the stove and leave the tin in the water to cool slowly. Don't open it while hot as the milk will be pressurised and likely to spurt everywhere. Once cold it can be kept - unopened - in the fridge until needed. Doing this for two cans at a time, means there's some ready to use in the fridge..

Advice please are the fejoas ripe when they fall off the tree or do you pick them? sorry this is the first year we have had a decent crop and are not sure.

Fejoas, custard and whipped cream Combined makes a very nice cold pudding, my Mum made it years ago for the family. Most of us still make it for our families now. My 20month old would eat it by the bowl ful if I let him.

Oh im so glad we found this thread we have 6 trees plus the neighbours (that they keep begging us to clear their fruit from. We have hundreds of them and even the kids are begining to go off them and we have 5 kids who have been scoffing them for the last few weeks. I need to get rid of kilos (have probably 10 full supermarket bags at the moment). Im going to go and buy some preserving jars (the 1ltr ones or bigger) to try and salvage what we have and give away what i cant use.

Feijoa, Banana and Toasted Coconut Caramel Crumble 3-4 large bananas
6-8 feijoas, peeled (I do more)
1 vanilla pod seeded, or 1 tsp pure vanilla essence
2 tbs soft brown sugar
1 tbs butter

For the Crumble
1 cup shredded coconut strands
1 cup white flour
1 cup soft brown sugar
1 cup caster or white sugar
1 cup milk oaties or rolled oats
75 gm butter at room temperature

cont..... Lightly grease the base of an ovenproof baking dish. Roughly cop the bananas and feijoas and mix together over the bottom of the dish. Sprinkle over the vanilla seeds or essence, followed by the brown sugar. Cut the butter into small pieces and dot over the fruit. The plan is to leave this aside while you do the crumble so the juice from the feijoas and brown sugar start to caramelise.

Place the coconut on a baking sheet or into a roasting pan and toast in the oven for about 3 minutes on 180C, until lightly golden. Watch it carefully. Remove and let cool.

cont..... In a deep bowl, mix together the flour, oaties and sugars. Add the toasted coconut reserving a little to sprinkle on top later if desired. Cut the butter into rough pieces and rub it into the dry ingredients with the tips of your figures until well mixed in.

Crumble this mixture over the fruit in an even layer then sprinkle the remaining toasted coconut over the top. Bake for about 20 minutes at 180C until you can see the caramel bubbling just under the crumble. Let cool slightly before serving.

I have frozen blended feijoas, can I use this in cakes or muffins, instead of chopped feijoas? I used to scoop out, blend and freeze as ice cubes or ice blocks for kids. I have too much this time, thought of using it in cakes.

OK... I have 3 shopping bags whole in freezer, made heaps of feijoa sorbet very yummy, feijoa jelly and 2 bags sitting on kitchen floor, need a really easy no fail hit with kids recipe, kinda over it now but will have huge regrets if I don't continue......

Sorbet not sure if this is a repeat but
1 cup of water, 1 cup of sugar, 2 TBS lemon juice and 1 cup of feijoas. Water and sugar together boil till sugar disolved, let cool. add 1 cup of feijoa puree and lemon juice pour into metal container and freeze till 1/2 frozen, top will look chrystaly. put in food processor and beat till light and fluffy, repeat two times and then freeze in small containers. very rich so you only need a small amount with ice-cream or whatever.

Dunedin ppl.Do Feijoa not fruit there.Wonder what the cost and best way to send some from the Far North to Dunedin,where my Sister is now living.Also can someone please let me know if I can just scoop out the F fruit and freeze for a few Months.

Tjis probably sounds stupid... but when a feijoa recipe calls for them to be peeled and chopped. Does that mean peel the skins off or scoop out the flesh. Major difference and it is a little confusing.

By far my Fav fruit! Yeay, just love fejoas, love their smell! these recipes are great. Our trees are very sad this year, we have 2 small ones & the wind blew all the fruit off (when they were small), luckly I have contacts with trees who don't eat the fruit, I know, what is wrong with them!!Can't wat to try the orange cake with fejaos in it insted, that is a awesome recipe!

Feijoas in Dunedin When I lived in Dunedin we would sometimes walk around the student 'ghetto' and find boxes of feijoas that people's well meaning family had sent from up north rotting on the footpath. I guess they were not feijoa fans, and dumped them out for rubbish collection. Just scooped some into a shopping bag and scamper away. Watch out for broken glass.

If you've got too many and there is not enough.. ...room in the freezer - preserve them. Peel the skins from their little bodies, and pack into preserving jars. Make a light syrup - 3 parts water to one part sugar, boil in a pan. Pour over Joas in the Jar, and boil the jar with the screw top lid and cap thing in a pan with the water 2/3rds up the bottle. When the syrup starts to bubble in the jar (about 20-30 mintues) they are ready. They'll turn slightly brownish/green but thats o.k. Don't overdo them as they will turn to mush and that is not fair on them. Remove and cool on the bench. Make sure that the preserving cap thingy is tight after removing the ring. Hope that makes sense. These are DELISH.
