Great thread Brianmac Do you by any chance have a weetbix slice recipe? I've got ones using cornflakes, which I could substitute, but I believe there was one using weetbix posted some time ago, but a search didn't bring up anything

copied from earlier thread WEETBIX SLICE - . 4 weetbix, 2 tsp baking powder, 1 tbsp cocoa, 2 cups flour, 3/4 cup brown sugar, 200g butter. Melt butter then add in dry ingredients. Put into flat tin. Bake 20-30 mins at 180 degrees. Ice with chocolate icing while still warm

Coconut macaroons (dead easy) Combine 2 beaten (whole) eggs, 140g (2/3c) caster sugar, & about 160g coconut. Drop by teaspoonfuls onto greased baking sheet & bake in preheated 190C oven for about 10 minutes, until lightly browned. (Let cool for at least 10 minutes before removing from baking sheet, though.)

Toll House bars 2-1/3c flour, (can substitute 1/3c cocoa for flour to make double chocolate), 1t baking soda, 1t salt. Cream together 200g softened butter, 3/4c each of white & hard-packed brown sugar, 1t or so vanilla. Beat in 2 eggs, add flour mixture. Add 1c chopped walnuts & 1 chopped 250g block Whittakers Dark Block. Spread it in an ungreased pan (mine is 37cm x 25cm) & bake in a preheated 190C oven for 25min. You'll have an easier time getting it out of the pan if you refrigerate it first, otherwise the center pieces will be a bit too gooey.

Lemon bars Crust: 175g softened butter, 1/2c icing sugar, 2c flour, dash salt. Cut dry ingredients into butter (it will look dry), pat into 10x12in or 9x13in pan lined with baking paper, bake at 175C for 14 minutes. Filling: 4 beaten eggs, 2c sugar, 1/3c flour, 3/4c fresh lemon juice, (or any quantity from 1/2c – 1c), grated zest from the lemons used for the juice, dash salt. NB - I have a lemonade tree, so I add 1t 1/2t citric acid too. Mix these ingredients together, pour onto baked crust, bake 25min at 175C. When cool, sift icing sugar over the top, cut into bars.

don't know the name..... can anyone help me with a slice that you get sometimes at cafes - its a biscuit=type base, a filling thats very creamy - a yellow colour, and solid chocolate topping?

Sorry just went to copy recipe from previous thread for you. I have a recipe written down for this in my recipe book but it has gone walkabout. Posted by missmad: 140g Plain Flour 55g castor sugar 85g butter Filling: 110g butter 110g brown sugar 2 Tbsp golden syrup 400ml tin Condensed Milk 1 tsp vanilla essence Topping; 140g cooking chocolate 1. Mix together castor sugar and flour for base. Melt butter and add to flour mixture. 2. Press into a 7/8 inch square tin and bake for 20 minutes in a moderate oven. 3. Place all filling ingrediants into a pot and cook on very low heat till butter is melted. Turn right down to a simmer and simmer till caramel colour, around 8 minutes. 4. Pour caramel over base and allow to cool. 5. Melt chocolate and pour over caramel. 6. Allow to set.

.... Good luck with it, its one of my fave slices... I work part time at a cafe and the chef makes one there to die for- she also swirls white chocolate into the dark chocolate topping, it looks amazing

thanks, but... I don't think the one I am after is a caramel slice -it definitely looks yellower than caramel slices, and tastes very creamy....but i might try the caramel slice anyway :)

Elsie's Fingers... My grandmother used to make these - they're very simple, good for kids to make, and quite nice with a cup of coffee. Ingredients: 125g butter, 3 dessertspoons sugar, 1 egg, 1 and a half cups of flour, 2 tsp baking powder, walnuts or blanched almonds to decorate. Directions: Cream the butter and sugar. Break in egg, beat well, add dry ingredients. roll small pieces between hands, shape into fingers. Dip in sugar. Put walnuts or almonds on top. Place on oven tray and bake at 180 degrees celsius for 10 to 15 minutes. Best eaten cold.

copied from earlier thread WEETBIX ROCKY MALLOW - Base: 3 crushed weetbix, 1/2 c sugar, 2 T cocoa, 1 c coconut, 1 c flour, 1 t b powder, 175g melted butter. Combine all and press into tin. 180 for 15 minutes. Cool. Topping: 2 dsp gelatin, 1 t vanilla, 3 drops food colour, 1 c boiling water, 1 1/2c sugar. Dissolve vanilla and colour in water. Sprinkle gelatine over to dissolve. Mix in sugar. Beat on high for 10 minutes (until setting). Spoon over base, sprinkle with coconut and refrigerate
