How to make moist bacon & egg pie - help

I have a real problem with uncooked pastry in pies.... I have seen many from commercial bakeries where there is a thin layer of cooked followed with a big slab of uncooked... nasty stuff. Our local Bakers Dozen did that and I took the sausage rolls back to show them...
